2 large sweet potatoes, peeled and cubed
3 tablespoons olive oil
2 teaspoons packed brown sugar
1 ½ tablespoons paprika
½ teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon poultry seasoning
½ teaspoon chili powder
1 pinch cayenne pepper

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop. Toss until the potatoes are evenly coated with the seasoning. Spread onto a baking sheet.
  • Bake in the preheated oven for 15 minutes, then turn the potatoes over with a spatula, and continue baking until the sweet potatoes are golden and tender, 10 to 15 minutes more.

2 large (4 cups) orange sweet potatoes or yams, peeled, cubed 1/2-inch
2 small (2 cups) tart cooking apples, peeled, cubed 1-inch
1/4 cup chopped pecans
Chopped fresh parsley, if desired

Steps:

  • Heat oven to 375°F.
  • Combine all ingredients ingredients except sweet potatoes, apples, and pecans in an ungreased 13x9-inch baking pan. Add sweet potatoes; toss to coat. Cover; bake 25-35 minutes or until fork tender.
  • Stir in apples and pecans. Continue baking, uncovered, stirring once, 15-20 minutes or until apples are tender. Just before serving, sprinkle with chopped parsley, if desired.

1 tbsp. olive oil
salt + pepper to taste
1/2 c. spiced apple cider

Steps:

  • Preheat oven to 400 degrees.
  • Toss sweet potatoes with oil on a rimmed baking sheet. Season with salt and pepper. Bake 25 minutes, stirring halfway through cooking time.
  • While potatoes are roasting, heat apple cider in a small saucepan over high heat. Bring to a boil and cook until reduced to about 2 tablespoons, about 12 minutes.
  • Drizzle sweet potatoes with apple cider reduction; toss to coat. Bake 5 minutes more.

4 sweet potatoes ((approx 2 ½ pounds) peeled and cut into 1-inch dice)
4 small apples ((or 3 large), peeled, cored and diced into 1-inch pieces)
½ cup unsalted butter (melted)
½ cup dark brown sugar
¼ cup maple syrup
2 teaspoons pumpkin pie spice
¼ cup pecans (chopped)
salt (to taste)

Steps:

  • Add the potatoes to a large pot and cover with water.
  • Bring to a boil over high heat and cook until the potatoes are just starting to soften. You don't want them to cook until soft because they will continue to cook during the baking process.
  • Preheat oven to 350°F and spray a 9x13" casserole dish with non-stick spray.
  • Drain the potatoes and place them into the prepared baking dish.
  • Add the apples to the casserole dish.
  • In a small bowl mix together the melted butter, brown sugar, maple syrup, and pumpkin pie spice.
  • Pour mixture over the apples and potatoes and stir to combine.
  • Add to the oven and bake for 25 minutes.
  • Remove from the oven and top with pecans.
  • Add back to the oven and cook for 5 minutes more to toast the pecans.

1/4 cup fat-free milk, warmed
2 teaspoons minced chipotle pepper in adobo sauce

  • In an ungreased 11x7-in. baking dish, toss the apples, lemon juice, honey, butter, 1/2 teaspoon salt and five-spice powder. Bake, uncovered, at 400° for 35-40 minutes or until apples are tender, turning once., Meanwhile, place sweet potatoes in a Dutch oven and cover with water. Bring to a boil. 3 firm cooking apples - peeled, cored and cut into wedges (good varieties include golden delicious and granny smith, but honeycrisp can be used for a slightly sweeter touch)
1/4 cup chopped pecans
1/2 cup apple cider (or apple juice)
1 tsp cornstarch
3/4 tsp ground cinnamon
1/4 tsp ground nutmeg

Steps:

  • 1. In a 2-quart baking dish, combine sweet potatoes, apples, pecans, 1/4 cup of the apple cider (or apple juice). Heat in microwave oven (100% or High heat) for 15 minutes, stirring once or twice during cooking.
  • 2. In a small bowl, stir together remaining 1/4 cup apple cider, cornstarch, cinnamon and nutmeg. Stir into potato mixture. Cover baking dish and cook in microwave oven for 2 to 3 minutes more or until sweet potatoes are heated through and glazed, stirring twice during cooking.

1 (20 ounce) can apple pie filling
2/3 cup golden raisin
3 tablespoons butter, cut up
1 1/2 teaspoons apple pie spice
1 cup coarsely chopped pecans
1/3 cup sugar
2 tablespoons butter

Steps:

  • Spray a 4 quart slow cooker lightly with non-stick cooking spray.
  • Add the sweet potatoes, apple pie filling, raisins, 3 tablespoons butter (cut up), and apple pie spice to the slow cooker; gently stir to mix.
  • Cover and cook on LOW for 6-8 hours.
  • In a large skillet, add the pecans, sugar, and 2 tablespoons butter.
  • Over medium heat, cook, stirring constantly, for 8-10 minutes or until sugar mixture that adheres to the nuts turns golden and starts to melt.
