APPLE SUNDAES WITH CIDER CARAMEL SAUCE
The caramel apple takes a sophisticated turn in this dessert. Baked with butter, sugar, ginger, and cinnamon, the fruit goes soft and spicy before you finish it with a rich caramel sauce that's mostly made in the oven, plus vanilla ice cream and crushed store-bought amaretto cookies.

- Preheat oven to 400 degrees. Stir together both sugars, butter, and vinegar until well combined. Spread mixture evenly in the bottom of a 9-by-13-inch baking dish.
- Peel and core apples, then slice into 3/4-inch-thick rounds. Toss with cinnamon, ginger, and salt in a bowl. Place on top of sugar mixture in a single layer, overlapping slightly if needed. Cover with parchment-lined foil and bake until just beginning to soften and bubble, 20 to 25 minutes. Spoon sauce over apples, and increase heat to 450 degrees. Continue to bake, uncovered, until sauce thickens and apples are soft and brown, about 15 minutes more.
- Divide apples evenly among 4 bowls. Whisk cream into liquid in baking dish to make a caramel sauce. Transfer to a bowl; let cool until thickened slightly, about 10 minutes. Top apples with ice cream, caramel sauce, and cookies; serve.

- 1 Combine apple and lemon juice and toss well; set aside. 2 Place juice in a large skillet and bring to a boil over medium high heat. Stir in apples, half the sugar, cinnamon, nutmeg and allspice, cover, reduce heat to low and simmer about 5 minutes, or until apples are just tender. Remove from heat and keep warm. 3 In another skillet, add chestnuts, oatmeal, butter and sugar, stir well and cook over medium heat for about 3 minutes, or until sugar has melted and mixture is well coated. Remove from heat and set aside. 4 Place 1 scoop frozen yogurt to a serving dish, pour half the apple mixture over the top, followed by half the chestnut mixture. Repeat and serve immediately. 5 *Place nuts in a skillet over medium high heat. Cook until you can smell them and they are starting to darken, stirring almost constantly. Many use pecans because of their intense aroma when roasting, but almonds, macadamia and cashews are great as well. Even boiled peanuts.
CARAMEL APPLE SUNDAE

- Add 2 tablespoons of the butter to a skillet and melt over medium-high heat. Add the apples and saute for 5 minutes. Remove to a plate and set aside.
- In the same skillet over medium heat, add the brown sugar and the remaining stick of butter. Stir it around until the butter melts and the sugar dissolves, then pour in the cream. Stir it around and let it bubble up and thicken for about a minute. Turn the heat to low and add the apples back to the skillet. Sprinkle in the cinnamon, stir the mixture and let it thicken for another 1 to 2 minutes.
- Spoon big scoops of vanilla ice cream into sundae glasses and drizzle over the caramel apple sauce.

- Preheat oven to 350 degrees F (176 C), and arrange pecans on a bare baking sheet. While the oven is preheating, peel, core, and thinly slice apples (see photo).
- When the oven is preheated, bake pecans for 7 minutes. Then remove from oven, top with coconut oil, coconut sugar, maple syrup, cinnamon, and salt and toss with a spoon or spatula until evenly coated (I like doing this on the pan to save time/mess, but you can also do this in a mixing bowl). Bake for 3-6 minutes more, or until fragrant and deep golden brown. Be careful not to burn. Set aside.
- While the pecans are baking, add coconut oil and apples to a large, rimmed skillet and begin cooking over medium heat. Add coconut sugar, cinnamon, ginger, lemon juice, and arrowroot or cornstarch (optional) and toss/stir to combine.
- Cover the apples and reduce heat to medium-low to soften for about 10-15 minutes - stirring occasionally.
