SPICED APPLE MUFFINS
Even when you're dieting there are times when only a bit of cake will do and these spicy muffins go down a treat with a cup of tea. They are reasonably low in calories but if you like, you could make 24 little fairy cakes instead of 12 muffins. Just watch you don't eat double the number!

- Preheat the oven to 200°C/Fan 180°C/Gas 6. Line a muffin tray or fairy cake tins with paper cases or spray the tins with cake-release spray. Put the flour into a bowl with the baking powder, bicarbonate of soda and spices, then whisk thoroughly to combine. Put the milk, yoghurt, oil, sugar and eggs in a separate, larger bowl and whisk to combine. Add the flour mixture and most of the apples and oats to the wet ingredients, stirring briefly to combine. Try to keep stirring to a minimum as over-working the batter can give a tough result. Divide the mixture between the cases - you will find the mixture will come almost to the top of them. Sprinkle over the remaining apple and oats. Bake in the preheated oven for 20-25 minutes until well risen, golden brown and firm to the touch. Remove the cakes from the oven and place them on a rack to cool.

- Preheat oven to 350°. In a large bowl, beat eggs, milk, 1/2 cup sugar and oil until well blended. - Heat oven to 400°F. Grease bottoms only of 12 regular-size muffin cups with shortening or cooking spray, or line with paper baking cups.
- In large bowl, beat milk, oil, vanilla and egg with fork or wire whisk until well mixed. Stir in flour, 1/2 cup sugar, the baking powder, salt and 1/2 teaspoon cinnamon all at once just until flour is moistened (batter will be lumpy). Stir in apple. Divide batter evenly among muffin cups. In small bowl, mix topping ingredients; sprinkle over batter.
- Bake 25 to 30 minutes or until golden brown. If baked in greased pan, let stand about 5 minutes in pan, then remove from pan to cooling rack; if baked in paper baking cups, immediately remove from pan to cooling rack. Serve warm if desired.

- Make the apple spice blend: in a small bowl, stir together the cinnamon, ginger, allspice, cloves, and nutmeg.
- Make the muffins: In a medium bowl, whisk together 1 cup (125 G) all-purpose flour, the whole wheat flour, baking powder, baking soda, salt, and 1 tablespoon of the spice blend.
- In a large bowl, use an electric hand mixer on medium speed or whisk to beat the butter until light yellow and aerated, about 2 minutes. Add the granulated and brown sugars and continue beating until light, fluffy, and nearly doubled in volume, 2 minutes more. Add the eggs, 1 at a time, beating well after each addition.
- Add the applesauce and shredded apple and stir with a rubber spatula to incorporate.
- Add half of the dry ingredients to the wet and gently fold to combine, being careful not to overmix. Add 1¾ cups of the diced apples to the remaining dry ingredients and toss to coat, then add to the wet ingredients and gently fold to combine. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, up to overnight.
- Preheat the oven to 425°F (220°C). Line a 6-cup jumbo muffin tin with paper liners and lightly grease with nonstick spray.
- In a medium bowl, toss together the remaining ¾ cup diced apples, melted butter, remaining 1 tablespoon flour, and remaining 1½ teaspoons of apple spice blend.
- Evenly divide the batter between the prepared muffin cups. Top each muffin with some of the apple topping and sprinkle with the demerara sugar.
- Bake the muffins for 15 minutes, then rotate the muffin tin 180° and bake for 12-15 minutes more, until the muffins are puffed and golden brown and a cake tester inserted into the center comes out clean.

- Heat oven to 180C/160C fan/gas 4 and line a muffin tin with nine cases (alternatively, use squares of baking parchment). Mix the oil, yogurt, honey, eggs and vanilla in a jug. - Place all the dry ingredients into a large bowl and mix well with your fingers to make sure the rolled oats and brown sugar are evenly mixed through the other ingredients.
- 75g butter 1 egg 1 cup raw chopped, or grated apple 3/4 - 1 cup milk Melt the butter until liquid than add the egg and 3/4 cup milk, and beat with a fork until mixed.
- Next grate or chop the apple in a food processor.
- Press into the cup, removing air bubbles, then stir into the liquids.
- (Work quickly to prevent the apple from browning.) Add the apple and liquid mixture to the dry ingredients and mix lightly to dampen the ingredients, adding as much of the extra milk as you need.
- Coat 12 medium-sized muffin pans with non-stick spray and divide the mixture between them.
- Bake at 200 C for 12 - 15 minutes or until the muffins spring back when pressed.
- Leave for 3 - 4 minutes before removing from the pans and cooling on a wire rack.
