SPICED APPLE HOLIDAY HAM
My grandmother always made pineapple ham, but I decided that rosy red apple rings look & taste even more festive. You can also make the apple rings from scratch by simmering a pan of water with apple slices, red hots, sugar, & a bit of red food coloring.

Steps:
- 1. Preheat the oven to 350 degrees F. Place the ham in a roasting pan cut side down. Score ham with a shallow diamond shaped pattern. Insert cloves into cuts. Cover ham with foil & bake for about 1 1/2 hours.
- 2. Meanwhile, drain the liquid from the apple rings into a small saucepan. Whisk in the brown sugar & mustard. Bring mixture to a boil, then reduce heat to a simmer. Cook until mixture is thickened & coats the back of a spoon.
- 3. Remove foil from ham & brush with the glaze. Secure apple rings & cherries to the ham with toothpicks. Bake uncovered for 30 minutes or until heated through.

This glazed ham is one of my family's favorites, so I serve it often at holiday time. Currant jelly, mustard and brown sugar add a special flavor.

Combine jelly, sugar, vinegar, mustard and cinnamon; brush half over ham. Bake 15 minutes. Brush remaining jelly mixture over ham. Bake for 15 minutes, basting occasionally, or until a thermometer reads 140°.

- Preheat your oven to 325ºF. Place your soaked (see Tips section) and dried ham half cut side down in a baking dish or roasting pan so the fat cap side is facing up. Use a knife to score the fat cap in a checkered pattern.

- Preheat the oven to 325°F. You can use a roasting rack or not, but you will need a roasting PAN either way. If you are using the roasting rack, situate it in the pan and lay the ham on its side. If you are not using the roasting rack just lay the ham on its side in the pan while you prep it.
- Whisk together the apple butter, apple juice (or orange juice), and spicy mustard. Reserve a 1/2 cup for serving with the ham. Pour the remaining glaze over the ham and use a brush or your hands to separate the slices just a little so the glaze can penetrate between the slices. Cover as much of the outside of the ham that you can with it on its side.
- If you are not using a roasting rack, place the cut side down in the pan and then cover the pan tightly with foil. If you are using a rack, leave the ham on its side in the rack. Add about an inch of water to the bottom of the pan and THEN cover the pan tightly with foil.
- Bake the ham for 12-15 minutes per pound, or about 2 hours. You want the internal temperature to read 140°F.

- To prepare the ham, preheat the oven to 160°C. Grease a large, shallow roasting pan. Line with greased foil, then baking paper. Sit the ham on a wire rack over roasting tray. Use a small, sharp knife to cut around ham shank.
