Similar to the Thai iced tea served in Thai restaurants made with red rooibos or orange black tea. Garnish with fresh mint leaves.

5 cups water
¼ cup white sugar
5 pods star anise
1 cinnamon stick
4 pods cardamom, crushed
8 red rooibos tea bags
¾ cup sweetened condensed milk
ice

Steps:

  • Place water, sugar, star anise, cinnamon stick, and cardamom in a saucepan; bring to a boil. Remove from heat and add tea bags. Let tea steep and cool to room temperature, about 1 hour.
  • Remove tea bags and strain out whole spices; discard. Whisk in condensed milk. Pour into a large pitcher and refrigerate until flavors combine, at least 1 hour.
  • Fill 4 glasses with ice. Serve tea over ice.

1 (4 inch) piece fresh ginger, peeled and coarsely chopped
1 whole star anise pod
6 cardamom pods, bruised
1 cinnamon stick
4 lemons
3 tablespoons unpasteurized honey, or more to taste

Steps:

  • Bring water to a boil in a saucepan; add ginger, star anise, cardamom pods, and cinnamon stick. Zest lemons over the saucepan. Slice lemons in half and squeeze juice into the water. Reduce heat to medium-low and simmer until desired flavor is reached, 5 to 15 minutes.
  • Stir honey into tea and strain tea through a fine-mesh strainer as you ladle into mugs. Add contents in strainer back into saucepan.

6 cardamom pods
1/2 teaspoon whole peppercorns
5 cups water
1/4 cup honey
2 cinnamon sticks (3 inches)
8 whole cloves
3 whole star anise
1 tablespoon minced fresh gingerroot
5 black tea bags
2 cups whole milk
1 tablespoon vanilla extract
Ground nutmeg, optional

Steps:

  • In a spice grinder or with a mortar and pestle, combine cardamom pods and peppercorns; grind until aromas are released., In a large saucepan, bring water to boil. Add cardamom mixture, honey, cinnamon sticks, cloves, star anise and ginger; simmer 5 minutes or according to taste. Remove from heat. Add tea bags; cover and steep 5 minutes., Meanwhile, in a small saucepan, heat milk. Strain tea, discarding spices and tea bags. Stir in hot milk and vanilla. Pour into mugs. If desired, sprinkle with nutmeg.

Steps:

  • In a medium saucepan bring water to boiling.
  • Add tea bags, anise, and cinnamon stick.
  • Reduce heat. simmer, uncovered, for 3 to 5 minutes. Discard tea bags and cinnamon stick. Stir in nectar, honey, and lemon juice. Heat through.
  • 2. Pour tea mixture into four heat-proof cups, floating a star anise on top of each. Makes 4 servings.

1 teaspoon loose-leaf Earl Grey tea
1 teaspoon loose-leaf Darjeeling tea
1 star anise
1 cinnamon stick
Pinch ground ginger
2 cups heavy cream
6 ounces chopped chocolate (recommended: Godiva dark chocolate)
1 teaspoon pure vanilla extract

Steps:

  • In a small saucepan, heat water to a boil. Drop in tea leaves, turn off heat, and steep for about 5 minutes. Strain tea back into pan and add star anise, cinnamon stick, ginger, and heavy cream. Heat over medium heat until cream scalds, watching carefully so that cream does not spill over.
  • Put chocolate in a medium bowl. Strain hot cream mixture into bowl with chocolate. Add vanilla and whisk until chocolate is melted. Transfer to mugs and serve warm or chilled.
  • *Cook's Note: The spices may be increased, to taste, if your preference is spicier.

There's nothing as good as the perfect cup of Masala Chai whether it's in the middle of summer or for cozying up in the winter. Black tea is simmered with warming and fragrant spices and is best served with Parle-G biscuits or cake rusk for dipping.

2 cups water
2 tsp loose leaf black tea (or tea bags)
2 cardamom pods
1 clove
1 inch knob of ginger (chopped into slices)
1/4 tsp black peppercorn (freshly cracked)
1/2 cinnamon stick
1 cup whole milk
2 tsp sugar (or to taste)

Steps:

  • Add the whole spices to a mortar and crush them lightly into smaller pieces.
  • In a small saucepan on high heat, pour in the water and add the spices. Bring the water to a boil and add the tea bags or leaves. Lower the heat to a medium to low setting and simmer for two minutes, or until the tea leaves and spices have released flavor and color. Then, pour in the milk.
  • Method one - Double Boil:Bring the chai to a boil on high heat, so that it starts aerating and bubbling to the top. Remove the pot from heat until the bubbles come down. Replace the pot on the burner and bring the chai back up again to a boil and remove from heat a second time until the bubbles go back down.Method two - Pulling ChaiAlternatively, use a small cup with a handle or ladle to scoop some of the chai and "pull" it while it's simmering. Start by pouring in the chai at a low height and steadily move up higher while continuing to pour the chai back into the pot to create bubbles. Repeat a few times until the chai is bubbly.
  • Continue to simmer the chai until desired consistency and color, about 5-7 minutes. Some of the liquid will have evaporated by now, so the chai will be smooth and creamy. Remove the saucepan from heat.
  • Strain the chai with a sieve into glasses, mugs, or a tea pot. Mix in the sugar according to taste, and serve hot.

For milder flavor, remove star anise, and discard; simmer 10 minutes more. Remove from heat. Let cool completely. Pour through a sieve into a bowl; discard solids.
