These chewy spice cookies are great with coffee and taste even better the next day. The recipe has been a family favorite for more than 40 years.

3 large eggs
2 cups packed brown sugar
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1/2 teaspoon pepper
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup raisins
1 cup chopped walnuts

Steps:

  • In a large bowl, beat eggs. Add the brown sugar, cloves, cinnamon and pepper. Combine the flour, baking soda and salt; gradually add to the egg mixture. Stir in raisins and walnuts. , Drop by tablespoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 400° for 8-10 minutes or until surface cracks. Remove to wire racks to cool.

Steps:

  • Heat oven to 375°. Grease cookie sheet with shortening. Beat brown sugar, butter and egg in large bowl with electric mixer on medium speed until light and fluffy. Stir in flour, nutmeg, salt and baking soda. Stir in apple.
  • Drop dough by rounded teaspoonfuls about 2 inches apart onto cookie sheet.
  • Bake 8 to 10 minutes or until light brown. Remove from cookie sheet to wire rack; cool. Store loosely covered.

This recipe for spice cookies came to The Times from Claire Will of San Francisco after a callout for favorite holiday recipes. At first, it seemed rather plain Jane, but the hefty dose of ground cloves (3/4 teaspoon) was what lured me into testing it, and I have to admit I was skeptical. I was soon a believer. Of the five kinds of cookies I served to a group at a holiday party, those crisp-edged, soft-centered beauties were the first to vanish. One friend texted on his way home, "send recipe for spice cookies a.s.a.p."

1 cup/225 grams unsalted butter (2 sticks), softened
1 cup/200 grams granulated sugar
1/4 cup/60 milliliters molasses
1 large egg
1 3/4 cups plus 2 tablespoons/240 grams all-purpose flour

1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon ground cloves
1/2 teaspoon fine sea salt

Steps:

  • Heat oven to 375 degrees. Line several baking sheets with parchment paper or nonstick liners.
  • Using an electric mixer, beat 12 tablespoons butter with the granulated sugar, molasses and egg until fluffy, about 2 minutes. Slowly beat in flour, baking soda, spices and salt.
  • Shape dough into walnut-size balls and place 2 inches apart on baking sheets. Bake until firm, about 10 to 12 minutes. Let cool on wire racks.
  • To make the icing, beat remaining 4 tablespoons butter with the confectioners' sugar until smooth. (Go slowly so you don't create a sugar storm.) Beat in the vanilla and enough cream or milk, and whiskey (if using), to make a spreadable frosting. Slather on fully cooled cookies.

2 teaspoons ground ginger
1 teaspoon baking soda
¾ teaspoon ground cinnamon

1 egg
1 tablespoon water
¼ cup molasses
2 tablespoons white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Sift together the flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
  • In a large bowl, cream together the margarine and 1 cup sugar until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually stir the sifted ingredients into the molasses mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

2⅓ cups all-purpose flour
2 tsp baking soda
¼ tsp salt
2 tsp ground ginger
1 tsp ground cinnamon
½ tsp ground allspice
¼ tsp ground cloves
⅛ tsp freshly ground black pepper
¾ cup (1½ sticks) unsalted butter, at room temperature
¼ cup plus 2 Tbsp granulated sugar
¼ cup plus 2 Tbsp packed light brown sugar
1 egg
⅓ cup molasses, such as Grandma's Original
½ cup raw sugar (also called turbinado or demerara sugar), for rolling cookies

Steps:

  • In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, allspice, cloves, and black pepper.
  • In the bowl of an electric mixer fitted with the paddle attachment (or beaters), beat the butter and the granulated and light brown sugars until light and fluffy, about 2 minutes. Beat in the egg and molasses. Add the flour mixture and mix until combined. Chill the dough in the refrigerator until firm, a few hours.
  • Meanwhile, preheat the oven to 350°F and set two racks in the centermost positions. Line two 13 x 18 in baking sheets with parchment paper.
  • Form tablespoons of dough into balls and roll in the raw sugar to coat generously. Arrange the dough balls about 2½ in apart on the prepared baking sheets. Bake for 9 to 10 minutes, rotating the sheets from top to bottom and front to back midway through, until puffed and set. Let cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely. Store in an airtight container at room temperature for up to 3 days.
  • Freezer-Friendly Instructions: The Cookie Dough can be Frozen for up to 3 Months: Roll the dough into balls, let set on a baking sheet in the freezer, then place in a sealable bag and press out as much air as possible. Belgian Spice Cookies or Speculoos are amazingly crispy, crunchy and delicious. They're not too sweet with a crunchy honeycomb-type structure. If you like the Delta Biscoff, you'll love these cookies.

1 1/2 cups (7.5 ounces) all-purpose flour
5 teaspoons ground cinnamon (See Tip 1)
1/2 teaspoon ground cardamon
1/4 teaspoon ground cloves
1/4 teaspoon baking soda (See Tip 2)
1/4 teaspoon Kosher salt
3/4 cup (6 ounces) turbinado sugar (See Tip 3)
1/2 cup (4 ounces) unsalted butter, cut into 1/2-inch pieces and chilled
1 large egg

Steps:

  • Whisk together the flour, cinnamon, cardamon, cloves, baking soda and salt. Set aside.
  • Add turbinado sugar to food processor fitted with steel blade. Process for 30 seconds to break down sugar crystals. (See Tip 4)
  • Add the chilled butter to the food processor. Process until butter is incorporated with the sugar, about 30 seconds. Add the egg. Process until incorporated, about 10 seconds.
  • Add the dry ingredients to the sugar/butter mixture in the food processor. Process until flour is well incorporated, about 30 seconds.
  • Transfer cookie dough to gallon Ziploc bag. Leaving the top open, roll the dough into an even layer that fills the bag. As you roll, turn the bag occasionally and lift the plastic from the dough so that it doesn't cause creases. Seal the bag, and place in freezer for at least 30 minutes. See (Tips 5 and 6)
  • Preheat oven to 300°F
  • Line two baking sheets with parchment paper or silicone mats. Put the ziploc bag on a cutting board and slit it open. Turn the firm dough onto a parchment lined board or counter; discard the bag. Trim the four sides of the dough with a fluted pastry wheel cutter. Using a ruler as a guide and a fluted pastry cutter wheel, cut the dough into 32 1-1/4 inch rectangles. (See Tip 7)
  • Bake at 300°F for 30 minutes. Remove from oven and let cool on baking sheet for 20 minutes.
  • Yield: 32 Belgian Spice Cookies. (See Tip 8)

  • Beat butter and sugar in large bowl until creamy.
  • Beat in eggs and vanilla until fluffy.
  • Stir in flour mixture.
  • Divide dough in half; flatten into disks.
  • Wrap in plastic.
  • Refrigerate for 1 hour.
  • Heat oven to 350°.
  • Coat 3 ½ - 4 ½-inch cookie-cutter molds with nonstick cooking spray.
  • On lightly floured surface with floured rolling pin, roll out half of dough ¼-inch thick.
  • Press cutter molds gently into dough.
  • Gently pull cookies out of molds.
  • Place on ungreased baking sheets.
  • Brush with egg white.
  • Reroll scraps.
  • Repeat with remaining dough.
  • Bake in 350° oven 10-12 minutes, until golden.

3/4 cup unsalted butter (, softened to room temperature)
3/4 cup packed brown sugar

1/2 cup canned pumpkin ((not pumpkin pie filling))
1/4 cup granulated sugar
1 and 1/2 teaspoons cinnamon

Steps:

  • Whisk together the flour, cornstarch, cream of tartar, baking soda, salt, cinnamon, nutmeg & ground cloves.
  • In a separate large bowl beat together the butter and sugars until fluffy. Turn the mixer down to low then beat in the egg, vanilla and pumpkin.
  • Slowly add in the flour mixture. The dough will be very sticky.
  • Cover the bowl with clingfilm and refrigerate for at least 2 hours or up to 2 days.
  • When ready to bake, take the dough out of the fridge.
  • Preheat the oven to 350F degrees and line 2 cookie trays with parchment paper or silicone baking mats.
  • In a small bowl whisked together the sugar and cinnamon for the cinnamon sugar coating.
  • Form the dough into balls of about 1.5 tablespoons in size, then roll in the cinnamon sugar coating and flatten slightly
  • Place the cookies on the cookie sheets about 2 inches apart.
  • Bake for about 8-10 minutes until the tops look just set.
