3 tbsp. moist-style spice cake mix
2 tbsp. club soda
1 tbsp. fat-free liquid egg substitute (like Egg Beaters Original)
1 tbsp. fat-free sour cream
1/4 tsp. baking powder
1/4 tsp. cinnamon
1 1/2 tbsp. fat-free cream cheese
Half of a no-calorie sweetener packet (like Splenda or Truvia)
1 tbsp. Cool Whip Free (thawed)
1 drop vanilla extract
Optional topping: additional cinnamon

Steps:

  • In a microwave-safe mug sprayed with nonstick spray, combine cake mix, club soda, egg substitute, sour cream, baking powder, and 1/8 tsp. cinnamon. Mix until uniform. Microwave for 1 minute and 45 seconds, or until set. Immediately run a knife along the edges to help separate the cake from the mug. Firmly place a plate over the mug, and flip so that the plate is on the bottom. Gently shake mug to release cake onto the plate. Let cool completely, about 15 minutes. In a small bowl, stir cream cheese with sweetener until smooth. Add Cool Whip, vanilla extract, and remaining 1/8 tsp. cinnamon. Stir until uniform. Spread cream cheese mixture onto cake, and devour! MAKES 1 SERVING

5 Minute Spice Cake in Microwave image

Inspired by Recipe#361967, I experimented and made up this cake for the two of us. I did try it with twice as much baking soda and baking powder, reduced them both to 1/8 as the cake touched the microwave "ceiling" and started to curve down; tasted fine but sure looked bizaar. Think it needs these ingredients to get a cake texture. I doubt that this recipe can be reduced and work out. Thank you especially to debbwl and diner524 for trying to help me improve this recipe for two.

4 tablespoons flour
1 teaspoon cocoa powder
1/8 teaspoon baking soda
1/8 teaspoon baking powder
1 teaspoon ginger
1 1/2 teaspoons cinnamon
1/16 teaspoon nutmeg, ground
1/16 teaspoon clove, ground
3 tablespoons brown sugar
2 tablespoons oil
1 tablespoon molasses, unsulfured
3 tablespoons water
1 egg

Steps:

  • Put the flour, cocoa, baking soda, baking powder, ginger, cinnamon, nutmeg, cloves and brown sugar into a 4 cup microwaveable bowl; mix well.
  • Add oil, molasses, water and egg; mix well.
  • Microwave for 3 minutes.
  • Cool slightly, and serve with ice cream, whipping cream, or raisin sauce.
