¾ cup shortening
¾ cup white sugar
¼ cup honey
¼ cup molasses
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground cloves
2 ½ cups all-purpose flour
¾ cup raisins
1 cup confectioners' sugar
3 tablespoons milk
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x 13 inch baking dish.
  • In a medium bowl, cream the white sugar and shortening together. Stir in the molasses and honey. Sift together the flour, baking soda, cinnamon, ginger, and cloves; add to the creamed mixture and mix until well blended. Finally, stir in the raisins.
  • Press the batter evenly into the prepared baking pan. Bake for 20 to 30 minutes in the preheated oven, bars should turn golden brown. Top will appear smooth and dry to the touch.
  • Meanwhile ... make the icing. In a smaller bowl, stir the confectioners' sugar together with the milk and vanilla. Drizzle over the spice bars while they are still warm. Allow cookies to cool before cutting.

This recipe was given to me by my aunt. It is very easy to make and stays moist. Great to take to a potluck or picnic because it is so easy and travels well.

1 cup raisins
2 ½ cups water
½ cup butter
1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon maple flavored extract
1 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan.
  • Place the raisins and water into a small saucepan. Bring to a boil, and cook for 3 minutes. Drain, and reserve the liquid. Set aside to cool slightly.
  • In a large bowl, cream together the butter and sugar until smooth. Mix in the egg and vanilla until well blended. Combine the flour, baking soda, salt and cinnamon; stir into the batter alternately with the raisin water. Set aside 1/4 cup of the raisin liquid to use for the frosting. Mix in raisins last. Spread the batter evenly into the prepared pan.
  • Bake for 20 minutes in the preheated oven, or until the top is lightly browned. While the cake is baking, stir together the reserved raisin water, maple extract and confectioners' sugar to make a thin glaze. Pour over the cake while still hot. Cool, then cut into squares to serve.

1/4 cup butter
1 cup packed brown sugar
1 large egg
1/2 cup hot brewed coffee
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raisins
1/4 cup chopped pecans
ICING:
1 cup confectioners' sugar
1/2 teaspoon vanilla extract
4 to 5 teaspoons water

Steps:

  • In a large bowl, combine butter and brown sugar until crumbly, about 2 minutes. Beat in egg. Gradually beat in coffee. Combine the flour, baking powder, cinnamon, baking soda and salt. Gradually add to the coffee mixture until blended. Stir in raisins and pecans., Transfer to a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 18-20 minutes or until edges begin to pull away from the sides of the pan and a toothpick inserted in the center comes out clean. Cool on a wire rack for 5 minutes., Meanwhile for icing, in a small bowl, combine the confectioners' sugar, vanilla and enough water to achieve spreading consistency. Spread over warm bars.

Steps:

  • Heat oven to 350°F. Lightly grease bottom and sides of 15x10x1-inch pan with shortening. In large bowl, beat eggs, granulated sugar, oil and pumpkin until smooth. Stir in flour, baking powder, cinnamon, baking soda, salt, ginger and cloves. Stir in raisins. Spread in pan.
  • Bake 25 to 30 minutes or until light brown. Cool completely in pan on cooling rack, about 2 hours.
  • In medium bowl, beat cream cheese, butter and vanilla with electric mixer on low speed until smooth. Gradually beat in powdered sugar, 1 cup at a time, on low speed until smooth and spreadable.   • Remove from heat, add butter; cool to lukewarm.
  • Whisk the flour, baking soda, cinnamon, allspice, cloves, and salt together in a medium-size bowl.
  • Pour the raisin mixture in large mixing bowl; add sugar, egg and dry ingredients.
  • With an electric mixer, beat until thoroughly blended.
  • Pour into greased and floured sheet pan (15½x10½x1-inch) and bake about 25 minutes.
  • Cool.

2 1/4 cups packed golden brown sugar
1/3 cup fancy molasses
3 large eggs
1 cup raisins
1 cup chopped walnuts
1 large egg, beaten
2 tsp water

Steps:

  • Combine flour, baking powder, baking soda, cinnamon, ground cloves, nutmeg, and salt in a bowl. Using medium speed of an electric mixer, beat together butter and brown sugar until fluffy. Beat in molasses and 3 eggs until blended. Stir in flour mixture just until combined. Stir in raisins and walnuts. Cover and refrigerate dough for 1 hour.
  • Preheat oven to 350°F. Line two large rimmed baking sheets with parchment paper.
  • Divide dough into 6 pieces. On a lightly floured surface, pat each piece into a strip 14 inches long and 1 1/2 inches wide. Place 3 strips on each prepared pan, leaving a 2 inch space between strips. Combine beaten egg and water. Brush tops of strips with beaten egg mixture.
  • Bake for 25 - 30 minutes or until strips are firm and lightly browned at edges. Let strips stand for 10 minutes on pans. 1 c raisins
2 c water
1/2 c shortening/butter/margarine
1 c sugar
2 c flour
1/4 tsp salt
1 beaten egg
1 tsp ground cloves
1 tsp allspice
1 tsp cinnamon
1 tsp baking soda

Steps:

  • 1. Boil 1 cup raisins and 2 cups water for 3 minutes. Drain juice and save.
  • 2. Cream 1/2 cup butter with 1 cup sugar. Add 2 cups flour and 1/4 tsp. salt and mix well.
  • 3. In a separate bowl, mix beaten egg, cloves, allspice, cinnamon, and baking soda. Add to the flour mixture along with 1 cup of the raisin juice and mix well. Stir in raisins after that is mixed.
  • 4. Spread dough to corners of greased 9x13 cake pan or a greased cookie sheet. Bake at 350 degrees for 25 minutes or until done.
  • 5. Frost while hot with a powdered sugar frosting or cream cheese frosting. Enjoy!
