250 g small frozen cooked peeled prawns
150 g basmati rice
8 spring onions
2 heaped tablespoons korma curry paste
1 x 400 ml tin of light coconut milk

Steps:

  • Place the prawns in a bowl of cold water so they start to defrost.
  • Meanwhile, dry fry and toast the rice for 3 minutes in a large shallow casserole pan on a high heat, stirring regularly, while you trim and finely slice the spring onions.
  • Add 1 tablespoon of olive oil, the spring onions and korma paste to the pan. Stir for 2 minutes, then pour in the coconut milk and 2½ tins' worth of water. Boil for 12 minutes, stirring everything occasionally.
  • With 6 minutes to go, drain the prawns, finely chop and stir into the soup.
  • When the rice is cooked through and the soup is your desired consistency, taste, season to utter perfection with sea salt and black pepper, and dish up.

This spicy and sour soup could be a light meal in itself, full of peppers, snow peas, water chestnuts, green onions, and tofu.

3 tablespoons vegetable oil
2 red bell peppers, julienned
1 bunch green onions, sliced diagonally into 1/2 inch pieces
2 cups chicken broth
2 cups vegetable stock
2 tablespoons soy sauce
2 teaspoons red wine vinegar
½ teaspoon crushed red pepper flakes
¼ teaspoon salt
⅛ teaspoon ground black pepper
2 tablespoons cornstarch
3 tablespoons water
1 teaspoon sesame oil
½ pound fresh snow peas
1 pound firm tofu, cubed
1 (8 ounce) can sliced water chestnuts, drained

Steps:

  • Heat oil in a large saucepan over medium-high heat. Add peppers and onion; stir-fry about 5 minutes.
  • Add chicken broth, vegetable stock, and soy sauce. Bring to a boil. Lower heat and let simmer for about 5 minutes.
  • Stir together vinegar, red pepper flakes, salt, pepper, cornstarch, water, and sesame oil in a small bowl until smooth. Add to soup with fresh snow peas; cook for about 5 minutes or until thickened and bubbly.
  • Add tofu and water chestnuts. Gently heat through, about 5 minutes.

I attended a cooking demonstration by Lisa Brink of Hod Hasharon. Lisa has her own cooking blog, www.deliciouskitchen.weebly.com, and has some wonderful ideas about cooking and presentation. This recipe comes from her Take Five class, recipes which contain five main ingredients and/or take five minites to prepare. I found this soup to be absolutely delicious and have already made up a batch for my family.

2 tablespoons canola oil
1 large onion, chopped
1 teaspoon crushed garlic
1 teaspoon cumin
1/2 teaspoon turmeric
3 cups cauliflower florets (fresh or frozen)
5 cups vegetarian stock (3 Knorr cubes to 5 cups water)
2 bay leaves
1/2 cup red lentil (or 2 small potatoes, peeled and chopped)
1 pinch dried chili pepper flakes (optional)
1/2 teaspoon salt
1/2 teaspoon sugar
1 cup milk
squeeze lemon juice
parsley or chives (to garnish)

Steps:

  • Heat oil and saute onion and garlic for a few minutes.
  • Stir in cumin and tumeric, then add the cauliflower and toss until coated in spices.
  • Add the remaining ingredients except for the milk and lemon juice and simmer for 25 minutes.
  • Remove the bay leaves, add the milk and blend the soup until smooth (I use an immersion blender).
  • Add a squeeze of lemon juice and serve garnished with fresh herbs.

  • Place canola oil or light flavored oil into pot. On a medium-high heat add your shallots, garlic, ginger and ground turmeric. Cook until lightly aromatic.
