What started as an appetizer is now one of my favorite Mediterranean meals. I make sure I always have the ingredients, so I can whip it up in a hot minute. I like to use fresh tomatoes instead of sun-dried ones when they're in season, and sometimes I throw in some chopped artichoke hearts, too. -Nikki Haddad, Germantown, Maryland

1 prebaked 12-inch pizza crust
1 cup hummus
3/4 teaspoon dried oregano
1/4 teaspoon crushed red pepper flakes
1/2 cup crumbled feta cheese
1/2 cup oil-packed sun-dried tomatoes, chopped
1/2 cup pitted Greek olives, chopped
1 tablespoon olive oil

Steps:

  • Preheat oven to 450°. Place crust on an ungreased baking sheet or 12-in. pizza pan., In a small bowl, mix hummus, oregano and pepper flakes; spread over crust. Sprinkle with cheese, tomatoes and olives. Bake 8-10 minutes or until heated through. Drizzle with oil.

Pita Pizzas With Hummus, Spinach, Olives, Tomatoes & Cheese image

These are inexpensive, easy, quick to put together and can be served room temp or right out of the oven. Cut into wedges like small pizza slices. They never last long and you can really use any toppings. I like to make my own hummus, but it isn't difficult if you want to make your own. But I get a small container which is enough for about 8 pitas for under $3, a roasted red pepper hummus right from the grocery store so why not. Then my favorite toppings are black or kalamata olives, goat or feta cheese, carmelized onions, fresh basil, fresh baby spinach, diced tomato or sundried tomatoes. You can add anything. Just lightly toast in the oven top, cook again for just 5 minutes and done! Slice like a pizza and serve. Great easy treats.

1 1/2 cups hummus you want about 3 tablespoons per pita bread (I prefer roasted red pepper)
3 tablespoons olive oil
salt
pepper
1 cup sliced black olives (kalamata olives are also great, use your favorite)
1 1/2 cups feta cheese (goat cheese is great as well)
1 cup tomatoes, seeded and chopped (I used plum tomatoes)
2 cups Baby Spinach
1 tablespoon dried Italian seasoning
1 teaspoon black pepper
2 tablespoons olive oil
1 tablespoon balsamic vinegar
scallion, carmelized onions, sauteed onions, sauteed mushrooms, arugula, basil

Steps:

  • Pitas -- Brush with a little olive oil, salt and pepper on each pita. Lightly toast in a 400 degree oven until slightly brown.
  • Top -- Top with hummus, then your favorite toppings. I like olives, baby spinach, tomatoes, feta, a little black pepper and some Italian seasoning. But NOTE -- you can add any of your favorite toppings.
  • If you add onions, mushrooms, peppers, zucchini, artichokes, etc., I pan saute lightly first so they are pre-cooked before adding to the pizza. The pizzas are only cooked a few minutes so just have everything ready.
  • Bake -- Another 5 minutes in the oven, just to heat everything up and soften the cheese.
  • Finish -- Mix the balsamic vinegar and olive oil and just simply drizzle over the top after it comes out of the oven. Perfect finishing touch. Just cut in Pizza slices and serve. I like to use my pizza cutter and 6 slices per pita.
  • ENJOY a very simple inexpensive quick appetizer.

1 cup hummus spread
1 ½ cups sliced bell peppers, any color
1 cup broccoli florets
2 cups shredded Monterey Jack cheese

Steps:

  • Preheat the oven to 475 degrees C (220 degrees C).
  • Roll out pizza crust and place on a pizza pan or baking sheet. Spread a thin layer of hummus over the crust. Arrange sliced peppers and broccoli over the hummus, and top with shredded cheese.
  • Bake for 10 to 15 minutes in the preheated oven, until the crust is golden brown and cheese is melted in the center. Slice and serve.

  • Start by making the hummus. Place the chickpeas, garlic and salt into a food processor and process until you have a paste. You might need to scrape down the bowl a couple of times to achieve this. Add the tahini and lemon juice and process until smooth and creamy. For a looser hummus add a tablespoon or so of water. Taste and adjust the seasonings as necessary. Refrigerate until needed.
  • Preheat the oven to 200 celsius (400 fahrenheit). To make the flatbreads place the flours and salt in the bowl of a mixer fitted with a dough hook. Mix until combined. Add the oil to the water and, with the mixer running, add the liquid. Knead for 7 to 10 minutes or until smooth and elastic. As different brands of flour vary you may need to add slightly more water to form a dough. Let the mixer do its work for a couple of minutes first to see if it will come together before adding more water though.
  • Remove the dough from the mixer and place onto a lightly floured bench. Divide into 4 equal size pieces and roll out into roughly 20cm (8 inch) circles. Don't fret if once you've rolled the dough out it isn't in a neat circle. It's part of the charm of homemade to be slightly misshapen!
  • Place a frying pan on a medium high heat. Place one of the flatbread in the pan and cook until it puffs up like a ballon (around 1 to 2 minutes). Turn it over and cook for a further minute until the bread no longer looks doughy. Repeat with the remaining flatbreads.
