1 small onion, diced
3 garlic cloves, pressed
1 (14 ounce) can diced tomatoes
1 (14 -15 ounce) can tomato sauce
4 tablespoons chili powder
2 teaspoons ground cumin
3 -4 cups cooked macaroni
2 cups cheddar cheese
1/2 teaspoon salt

Steps:

  • Brown ground beef. When it is about half done press garlic into pan and add onion.
  • cook till ground beef is done onions should be clear drain grease.
  • While cooking ground beef cook macaroni acording to box. Drain macaroni.
  • Add diced tomatos and tomato sauce Stir.
  • Add chilli powder and cumin Stir.
  • Add macaroni Stir.
  • Add salt. Season to taste. Stir.
  • Serve and top with chedder cheese makes.

1 pound ground beef
1 small green pepper, chopped
1 small onion, chopped
2 cans (15 ounces each) chili with beans
1 can (11 ounces) whole kernel corn, drained
1 cup shredded cheddar cheese

  • Cook macaroni according to package directions; drain. Meanwhile, in a large skillet, cook and crumble beef with pepper and onion over medium heat until no longer pink, 5-7 minutes; drain., Stir in chili, corn and macaroni; heat through. Sprinkle with cheese.

1 pound corkscrew shaped pasta with lines or elbows with lines
2 pounds ground sirloin
2 tablespoons (2 turns around the pan in a slow stream) extra-virgin olive oil
1 sweet onion, chopped
2 jalapeno peppers, seed and chopped
4 cloves garlic, chopped
3 tablespoons (1 1/2 palm fuls) dark chili powder
2 tablespoons (1 palm ful) cumin
2 tablespoons cayenne pepper sauce
Coarse salt
1 cup beer or beef broth
1 (28-ounce) can diced tomatoes in juice
1 (14-ounce) can crushed tomatoes
Chopped scallions, for garnish

Steps:

  • In a large pot, boil pasta until al dente.
  • Meanwhile, in a big, deep pot, brown beef in oil over medium high heat. Add onions, peppers, and garlic. Season meat mixture with chili powder, cumin, cayenne, and salt. Cook together 5 minutes, stir in beer or broth, and reduce liquid by half, 2 minutes. Stir in tomatoes and simmer for 10 minutes.
  • Drain pasta. Add hot pasta to chili pot and stir to coat pasta evenly. Remove from heat and garnish big bowlfuls of chili mac with chopped scallions.

8 oz. Elbow Macaroni Pasta (, uncooked)
1 Tablespoon Olive Oil
1 pound ground Beef
1 small Onion (, diced)
4 cloves Garlic (, minced)
30 oz. Tomato sauce (, (two 15 oz. cans or @ 4 cups) crushed, diced or regular)
15 oz. canned Beans ((black, pinto, cannellini, etc...), drained and rinsed)
2 Tablespoons Chili Powder
2 teaspoons ground Cumin
1/2 teaspoon Oregano leaves
Kosher Salt (, to taste)
fresh cracked Black Pepper
1-2 cups grated Cheddar Cheese
Additional cheese
sour cream
red onions
green onions

Steps:

  • Bring a large pot of water to a boil. Season well with salt. Add pasta and cook until al dente, usually about 8-12 minutes or according to package directions. Drain and set pasta aside.
  • Return pot to stove on medium-high heat. Add olive oil, then add ground beef. Break up beef into small chunks and cook until browned. Add onion and garlic. Cook onions and garlic until fragrant and soft.
  • Add tomato sauce, beans, chili powder, cumin and oregano. Bring to a simmer, give it a good even stir and lower heat to continue simmering. Cook for about 15 minutes. Season with salt and pepper.
  • Stir the cooked pasta and cheese into the chili. Cook for another minute or so until the pasta is warmed through and cheese is melted. Serve with your favorite toppings.

The key with this recipe is to turn the stove off as soon as the pasta is just cooked - it will keep cooking in the residual heat.

1 tbsp olive oil
2 garlic cloves (, minced)
1 onion (, finely chopped)
1 red capsicum / bell pepper (, chopped)
500g / 1 lb ground beef (mince) (, I use lean)
800g / 28 oz crushed canned tomato
420g / 14 oz can red kidney beans (, drained)
2 1/2 cups (625 ml) beef broth ((chicken broth also ok))
250g / 8 oz elbow macaroni pasta ((elbow pasta), uncooked)
2 cups (200g) shredded cheese ((cheddar, Monterey Jack, tasty cheese))
1/4 cup coriander / cilantro ( finely chopped, for garnish)
1 tsp cayenne pepper ( or pure chilli powder (adjust spiciness to taste) (Note 1))
2 tsp paprika powder
2 tsp cumin powder
1 1/2 tsp onion powder ((can sub garlic powder))
1 tsp dried oregano
1/2 tsp black pepper
1 1/4 tsp salt

Steps:

  • Heat oil in large pot over high heat. Add garlic and onion, cook for 1 minute. Then add capsicum and cook until onion is translucent.
  • Add beef and cook, breaking it up as you go.
  • Once the beef turns from red to brown, add remaining ingredients except cheese. Stir, bring to simmer, then turn the heat down to medium.
  • Cover and cook for 12 minutes or until the macaroni is al dente, meaning just cooked, still a tiny bit on the firm side. It should be saucy but not tons of liquid (see video).
  • Turn the stove OFF but leave the pot on the stove. Stir through half the cheese - it should be a bit saucy. Adjust salt and pepper to taste. Top with remaining cheese, put the lid back on and leave until the cheese melts - about 2 minutes (sauce will absorb further during this period).
  • Sprinkle with coriander, if desired, and serve immediately.

This chili mac is my family's favorite one-pot meal! Tender pasta, homemade beef chili, and ooey-gooey cheese. Add this to your regular dinner rotation!

1 tablespoon vegetable oil
1 medium yellow onion, (chopped)
1 tablespoon chili powder
1 tablespoon cumin
salt
4 large cloves garlic, (minced)
1 tablespoon brown sugar, (packed)
1 pound lean ground beef
2 cups water
1 (15-ounce) can tomato sauce
8 ounces about 2 cups elbow macaroni
1-8 ounce package shredded Mexican cheese blend
black pepper
2 tablespoons fresh parsley or cilantro, (chopped)

Steps:

  • In a 12 inch nonstick skillet, add oil (1 tablespoon) and heat until it's shimmering. Add onion (1), chili powder (1 tablespoon), cumin (1 tablespoon), and 1/2 teaspoon salt. Cook over medium heat until onion is soft, stirring often so spices don't burn, about 5-7 minutes.
  • Add the garlic (4) and brown sugar (1 tablespoon) and cook, continuing to stir, so garlic doesn't burn, for about 30 seconds. Add the ground beef (1 pound) and brown lightly, breaking it apart with a wooden spoon as it cooks, until there is no pink in the meat.
  • Add the water (2 cups), 3/4 teaspoon salt, and tomato sauce (1 (15-ounce) can) to the skillet and stir to mix. Stir in the pasta (8 ounces) and cover, increasing the heat to medium-high. Cook the mixture, stirring often and adjusting the heat to maintain a vigorous simmer (not a boil). Continue to cook until the pasta is tender, about 9-12 minutes.
  • Take the skillet off the heat and add 1 cup of the cheese mixture. Taste for seasoning and add salt and pepper to taste. Top the skillet with the remaining cheese and rest the mixture off the heat for a few minutes or until cheese melts. Sprinkle with chopped parsley (2 tablespoons). Serve.
