SLOW-COOKED PORK AND BEANS
I like to get this dish started before leaving for work in the morning. When I get home, my supper's ready! It's a hearty slow cooker meal that is also good for a potluck. - Cut roast in half; place in a 5-qt. slow cooker. Top with onion. In a large bowl, combine the beans, barbecue sauce, brown sugar and garlic powder; pour over meat. Cover and cook on low for 6-8 hours or until meat is tender. , Remove roast; shred with two forks. Return meat to slow cooker; heat through.

Always a huge hit at BBQ's. Can be assembled and then frozen in advance. Also, can halve the recipe easily. The lemons are the key.

Steps:
- Preheat oven 350 degrees.
- In large heavy Dutch oven fry bacon; remove and chop coarsley; set aside.
- To the same skillet, add onions and garlic; cook until transparent.
- Turn off fire.
- Add pork and beans, sausage, ham chunks, brown sugar, parsley, lemon juice, barbeque sauce, reserved cooked bacon and green onions.
- Season to taste with salt and pepper.
- Mix well and turn into greased 3 quart casserole dish.
- Bake uncovered 30 - 40 minutes or until bubbly.
