This fantastic cookie is one of my favorites. Its chewy AND crunchy. I have to make a lot of these at a time because they get eaten up fast by my family. I suggest mixing the whole thing by hand so you don't break up the cereal.

Number Of Ingredients 10

1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg, beaten
1 teaspoon real vanilla
1 1/4 cups flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
2 cups Special K cereal
1 1/4 cups sweetened flaked coconut

Steps:

  • Cream together butter, sugar and brown sugar.
  • Beat in egg and vanilla.
  • Add flour baking soda and baking powder and mix well.
  • Then add Special K and coconut and mix well.
  • Shape into 3/4-inch balls.
  • Bake 2 inches apart at 350 degrees for 12-16 minutes.

This is another recipe I found in a church cookbook. I find a lot of good recipes in church cookbooks and this looks easy !

1 cup white Karo
1 cup sugar
1 1/2 cups peanut butter
4 cups Special K cereal

Steps:

  • Mix Karo and sugar, bring to a boil and boil 1 minute. Add peanut butter and Special K cereal. Drop by teaspoonful onto waxed paper.
  • The recipe doesn't say how many cookies it makes. I'm guessing a couple of dozen.

This is a recipe from my coworker - this is what we make several times a year for all the birthdays in our office!! This is slightly different than the others posted on here since it doesn't use butter. ENJOY!!

Number Of Ingredients 7

1 cup sugar
1 1/4 cups corn syrup
1 cup peanut butter
1 teaspoon vanilla
6 -7 cups Special K cereal
1 cup semi-sweet chocolate chips
1 cup butterscotch chips

Steps:

  • Mix sugar and syrup together in a large saucepan and bring to a boil.
  • Immediately remove from heat.
  • Add peanut butter & vanilla and mix well.
  • Stir in Spec. K gradually.
  • Put in greased 9 x 13 pan.
  • Melt chips together in microwave.
  • Spread over the mixture.
  • Chill 20 minutes to set the chocolate mix.
  • Cut into bars and enjoy!
  • Store at room temperature in a tightly sealed container.

Couldn't find my exact version on the site so decided to post. This one is a family favorite since the 70's. Always moist and chewy and disappear fast!

Number Of Ingredients 6

1 cup white sugar
1 cup white corn syrup
1 1/2 cups peanut butter
6 cups Special K cereal
1 cup milk chocolate chips
1 cup butterscotch chips

Steps:

  • Bring sugar and corn syrup to boil over medium heat.
  • Add Peanut Butter and stir until blended.
  • Pour mixture over Special K Cereal in large bowl and mix together.
  • Press into 9 x 13 pan.
  • Melt the Chocolate Chips and Butterscotch Chips together in double boiler.
  • Spread over top of cereal .
  • Refrigerate until chocolate is hardened.

A retro-recipe from the 60's. Who knew Special K could be so yummy? My girlfriend Debbie brought these to my 2004 christmas cookie exchange. Her mom made these when she was little. The recipe used to be on the back of Special K boxes. She called her mom for the recipe and luckily, after all these years, she still had it! Thanks Sue!!

1 (11 ounce) package butterscotch chips
1 cup peanut butter
10 cups Special K cereal

Steps:

  • In a stovetop pan on low heat, melt butterscotch chips. Once the chips begin to melt, add the peanut butter. Stir often.
  • Once these ingredients are melted, add the cereal, mix/stir thoroughly. Drop by tablespoon full onto wax paper covered cookie sheets. Refrigerate. Makes 6 dozen.

1 cup light corn syrup
1 cup sugar
1 cup peanut butter
7 cups Rice Krispies or 7 cups Special K cereal
1 cup chocolate chips
1 cup butterscotch chips
1/2 cup butter

Steps:

  • melt together corn syrup and sugar.
  • turn off heat and add P-nut butter.
  • stir in cereal.
  • dump in lightly greased 9x13 in.
  • pan, pressing lightly with buttered fingers or wax paper.
  • melt together chocolate chips, buttterscotch chips,and butter in microwave until completely melted.
  • Spread over bars and allow to cool.

fast and easy, crispy and crunchy, has a nice simple flavour...this has been our family favourite for 20 years....these are made with the regular first type of cereal. I have made these with all the other special K cereals with larger flakes and they just arent the same in texture or taste.

Number Of Ingredients 10

3 large eggs
1 cup granulated sugar
3/4 cup canola oil (this is my fav. oil to use)
1 teaspoon almond extract
2 teaspoons vanilla extract
3 cups unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt (optional)
2 cups Special K cereal
1 cup sliced almonds (toasted is always nice) or 1 cup slivered almonds (toasted is always nice)

Steps:

  • Combine the eggs and sugar in a mixer until fluffy.
  • Add in the oil, beating well.
  • Add in all the dry ingredients, combine well.
  • Fold in all the cereal and nuts, combining with clean hands.
  • Spread onto parchment lined cookie sheet into logs and flatten the tops slightly.
  • Preheat oven to 350°F and bake 15 minutes.
  • Turn oven off and leave in for another 15 minutes.
  • Remove then from oven, onto a wire rack and cool 10 minutes.
  • Reset oven to 325°F.
  • Cut into slices with serrated knife and place back onto parchment lined sheets cut side down.
  • Bake 7 minutes.
  • Turn each slice over.
  • Bake another 9 minutes.
  • Until golden and toasty.
