CORNISH HENS

Cornish Hens image

I like this recipe for Cornish hens because it's easy to do and a delicious entrée for two. The basting ingredients result in a beautifully browned hen, sealing in the juices so that it is moist, tender and quite flavorful.

SPECIAL CORNISH HEN

Special Cornish Hen image

This is a very rich dish. Garlic lovers sing it's praise. This is another of my originals. Recommended side dishes: Rouqfort Green Beans Candied Dill Carrots *This can be cooked at camp in a dutch oven with coals ( majority of coals on lid). Place hen on heat proof plate set on bottle caps or small stones to keep off the bottom of oven. Add water to bottom of oven to just cover; keep water level constant; test for doneness after 1.5 hours. To cook on grill, use indirect heat and turn often. Please make sure you sew or pin closed the cavity...it is need to steam the stuffing. Also make sure you cook to the recommended temp please for the same reason.

CORNISH GAME HENS WITH GARLIC AND ROSEMARY

Cornish Game Hens with Garlic and Rosemary image

Crusty garlic bread and a nice light Chianti wine complement this meal very well.

Categories     Meat and Poultry Recipes     Chicken     Cornish Hen Recipes

Time 1h20m

Yield 4

Number Of Ingredients 9

4 Cornish game hens
salt and pepper to taste
1 lemon, quartered
4 sprigs fresh rosemary
3 tablespoons olive oil
24 cloves garlic
⅓ cup white wine
⅓ cup low-sodium chicken broth
4 sprigs fresh rosemary, for garnish

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.
  • Transfer hens to a platter, pouring any cavity juices into the roasting pan. Tent hens with aluminum foil to keep warm. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.

  • Begin by preparing your orange marmalade glaze: add the orange marmalade and the orange juice to a small pot set over medium-low heat, and stir to incorporate; once the mixture comes to the simmer, reduce the heat to low, and allow the mixture to simmer for about 10 minutes, until slightly reduced, stirring occasionally.
  • Once reduced, strain the mixture into a small bowl, and allow it to cool for about 20-25 minutes (it will also thicken up slightly) before using to glaze the hens.
  • To prepare the Cornish hens: preheat oven to 375° and line a baking sheet with foil, and place a wire rack onto the baking sheet.
  • Season the Cornish hens by liberally sprinkling salt both inside the cavities and outside the hens (about 1 tablespoons worth total), then sprinkling with freshly cracked black pepper and the Italian seasoning.

  • Combine the garlic spice rub ingredients in food processor. Run the processor until you achieve a pasty spice mixture or rub.
  • Now to each of the hens, apply the spice rub generously on the outside and in the cavities. Lift the skins and apply the spice rub underneath (this is the key to flavor).
  • Heat a lightly-oiled cast iron grill or skillet. Turn the the heat to medium-high and brown each of the hens on all sides. Set the hens aside momentarily to cool.

  • Get out a large food-grade container. You can use a large pot if you have one large enough. Try to avoid metal if at all possible, because from what I've read it can do strange things to your birds!
  • Add the salt, sugar, garlic, peppercorns, ground mustard, and onion powder to your pot. (Do not worry if you don't have garlic, peppercorns, ground mustard, or onion powder because these can be omitted. I would discourage this, but sometimes you just don't have an ingredient.) Pour the warm water over it all and stir it so the salt and sugar dissolves. Put the pot into your fridge until the water has cooled down.
  • Take the pot out of the fridge and get your Cornish hens ready. Remove the giblets and submerge the hens into the brine. Put the pot back in the fridge for about 6 hours. Remove the pot from the fridge, flip the birds over, and put the pot back into the fridge for another 6 hours.

  • Season The Hen. Like all the most delicious things, we like to brush our Cornish hen with butter before it roasts. For seasoning, we keep it relatively simple: salt, pepper, and a nice hearty herb like thyme or rosemary (or both!).
  • Stuff The Cavity. To infuse even more flavor into your hen, stuff the cavity. Keep it simple with lemon and herbs, or experiment with other citrus like limes or mandarin oranges and other alliums like garlic or shallots.
  • Tuck The Wings. Since we like roasting our hens at a high temperature, it's important we protect the wings from charring to a crisp. Tucking the wings under the hen allows even browning and cooking no matter what temperature you're roasting at.
  • Tie The Legs. Trussing a chicken is about more than just looks! Not only does it insure the hen cooks evenly, it also helps the hen retain moisture, leading to tender, fall-off-the-bone meat.
  • Transfer To Baking Dish. We love a 2-in-1 dinner. Roasting our veggie side with our hen couldn't be easier—simply scatter your potatoes (or parsnips, carrots, onions, or sweet potatoes!)
  • Get Roasting! Pop your dish in a 425° oven and roast for 50 minutes, or until potatoes are golden and tender and a thermometer inserted into the thickest part of the hen reads 160°.
  • Serve. Et violá! The perfect dinner for two. Pour yourself a glass of chilled dry white wine for a job well done.
