Pomegranate Vodka Punch image

Pomegranate Vodka Punch is an easy sparkling party cocktail. Made with chilled pomegranate juice, fresh pomegranate arils, Prosecco, and sweetened with simple syrup and ginger ale, this party punch takes only minutes to make and serves a crowd.

4 cups pomegranate juice (chilled)
1 cup vodka (chilled)
1/2 cup pomegranate arils
1/4 cup simple syrup
One 750-mL bottle prosecco (chilled)
One 12-ounce can ginger ale (chilled)

Steps:

  • In a large pitcher or punch bowl, combine pomegranate juice, vodka, pomegranate arils, and simple syrup. Stir well to combine.
  • Just before serving, add ice, prosecco and ginger ale. Stir gently to combine.

1 pomegranate
1 C. frozen apple juice concentrate, thawed
1/3 C. frozen lemonade concentrate, thawed
2 C. pomegranate juice or cranberry-pomegranate juice, chilled
1/2 750-ml. bottle (about 1 2/3 C.) Pinot Noir wine or other dry red wine, chilled
1 750-ml. bottle Champagne, chilled
Lemon slices (opt)

Steps:

  • Cut pomegranate into quarters and place in large bowl filled with cool water. Use fingers to loosen seeds and divide among 3 ice cube trays; fill almost full with water. Freeze until solid (about 3 hrs.). In punch bowl, combine apple juice and lemonade concentrates. Add pomegranate juice and wine; stir to combine. Just before serving, add Champagne, but do not stir. Add pomegranate ice cubes and, if desired, lemon slices. Serve immediately.
