MOJITOS BY THE PITCHER
I have served this to people who have sworn that they dislike mojitos and they love it. I believe it is the fresh ingredients and the use of sugar, instead of simple syrup, muddled together that makes this cocktail refreshing and delicious. It takes a little bit of work but the results are well worth it. Serve over ice.

Steps:
- Muddle sugar and mint leaves together in pitcher until leaves are well broken down. Add limes and muddle until limes are juiced. Stir rum into sugar mixture; add club soda and stir until sugar is dissolved.

SPARKLING MOJITOS BY THE PITCHER
Most mixed drink recipes are for individual drinks but this recipe is great for a small group. When I need to mix the recipe in advance, I mix everything but the sparkling water, which can be added right before serving. It's a delicious and refreshing recipe, perfect for a summer dinner party or back yard barbeque. Serve over ice and garnish with a sprig of mint and/or slice of lime.

MOJITO PITCHER RECIPE!

Steps:
- Add the sugar, water and mint to a small saucepan and heat over medium heat. Bring to a simmer and stir until all sugar is dissolved. Turn off the heat and allow it to sit for at least 5 minutes. Then strain it into a large pitcher.
- Add the lime juice and rum to the pitcher. Add the extra mint leaves and the extra lime, cut into rounds. Fill the pitcher with 4 handfuls of ice. Gently stir in soda water just before serving.
MOJITO PITCHER
Steps:
- Gather the ingredients.
- In a small saucepan, bring the water to a boil. Add the sugar and stir constantly until it is completely dissolved.
- Reduce the heat to a gentle simmer and tear the mint leaves while adding them to the syrup. Cover and simmer for 5 minutes, then remove from the heat and let cool completely.
- Strain the mint from the syrup using a fine-mesh strainer.
- Transfer the mint syrup to an airtight bottle or jar, and keep it refrigerated.
- Gather the ingredients.
- Juice 6 to 8 limes , straining out the pulp, to produce about 1 1/2 cups of juice.
- In a pitcher, add the rum and 1 cup each of the mint syrup and lime juice. Add more syrup or juice to taste; make this base a little strong because it will be diluted with club soda. Keep chilled until needed.
- Just before you're ready to serve the mojitos, add the chilled club soda to the pitcher.
- Pour the sparkling mojito mix into ice-filled glasses. Garnish each with a sprig of mint and lime slice.

- Place the strawberries, fresh lime juice, sugar cane juice (or simple syrup/other sweetener), and a few mint leaves in a blender or food processor. Blend until you have a smooth puree. You should have about 3 ½ to 4 cups of this pureed strawberry mix.
- To make a full batch of mojitos in a large pitcher, muddle most of the remaining mint stems/leaves (save a few for garnishing), then add the strawberry puree and the rum. For the rum, I recommend starting with a lower amount and then adjusting as you taste the final drink.
- Next add ice and the sparkling water, mix well. Taste and add more rum – or sparkling water/simple syrup.

- In a glass, add freshly squeezed lime juice, sugar and fresh mint leaves. Muddle with the end of a large wooden spoon or anything similar in shape. You can also muddle with the squeezed lime wedges in for extra flavor.
