16 white asparagus spears
salt to taste
8 slices white bread
2 tablespoons butter, or to taste
4 thick slices ham, cut in half
8 slices Edam cheese

Steps:

  • Peel white asparagus with a vegetable peeler from top to bottom, starting below the tips. Cut off any woody ends with a knife.
  • Place asparagus spears and salt in a large, wide saucepan and pour in enough water to just cover. Bring to a boil. Reduce heat; simmer until spears are tender and easily pierced with a knife, 15 to 25 minutes. Drain.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Toast bread slices; arrange on a baking sheet. Spread butter over warm bread.
  • Lay 1/2 slice ham on top of each slice of bread; trim excess on all sides. Cut asparagus spears in half; divide evenly over ham. Cover asparagus spears with Edam cheese.
  • Place under the preheated broiler until cheese starts to bubble and brown slightly, about 3 minutes.

A traditional spring or early summer dish of sauteed white asparagus (spargel), drizzled with a simple warm hollandaise sauce. Pairs beautifully with light, simple spring or summer fare such as slices of premium quality cured ham (try Black Forest ham), sliced boiled eggs and boiled new potatoes served with melted butter and sprinkled with fresh snipped parsley. Or salmon! A nice glass of white wine (such as Riesling), May Wine, or Sekt bubbly rounds out this delectable meal! Prost! This is a great make-ahead dish. Note: White asparagus (German : Spargel) is very popular throughout Europe and is the same variety as green, only it's grown covered in soil (hilling) to prevent photosynthesis. This prevents the asparagus turning green and results in a taste a little sweeter and much more tender. White asparagus must be peeled before consumption. White or green, asparagus is a delightful veggie to be enjoyed at it's peak in the spring or early summer time!

3 tablespoons extra virgin olive oil (or unsalted butter)
2 lbs white asparagus, washed and trimmed
1/4 teaspoon finely chopped fresh lemon zest
2 -3 teaspoons fresh squeezed lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon white pepper (optional)
fresh snipped parsley, optional to serve
fresh small fresh edible flower, optional to garnish (such as violets or Johnny jump-ups)
1/2 cup butter (1 stick)
4 large egg yolks
1/2 cup heavy cream (or whipping cream)
2 tablespoons lemon juice (to taste)
1/4 teaspoon sugar
1/2 teaspoon Dijon mustard

Steps:

  • Warm the olive oil or butter in a large saucepan over medium heat. Add the peeled and trimmed asparagus, lemon zest, and salt & pepper; stir to combine.
  • Cover and cook until tender-crisp, about 5 minutes, stirring occasionally. Do not over cook.
  • Arrange on serving platter and squeeze with fresh lemon juice.
  • Prepare the Hollandaise Sauce: Cut the butter into four pieces and place in a 1-quart glass measure or bowl. Microwave, covered with a paper towel, on high, until almost melted (about 45 seconds to 1 minute).
  • Remove butter from the microwave and stir until completely melted.
  • Separate eggs, placing the yolks in a small bowl and setting the whites aside for another purpose. Beat the yolks well with a whisk or fork, then add to the butter and stir well.
  • Add cream, lemon juice, and sugar to egg mixture and stir well. Microwave mixture, uncovered, on high, until just slightly thick, about 1 to 2 minutes, stopping every 20 seconds to stir with a fork. Remove sauce from microwave and stir in the mustard.
  • Pour warm sauce over the cooked white asparagus and serve at once. Garnish with fresh snipped parsley or fresh small edible flowers such as violets or Johnny jump-ups, if desired.
  • NOTE: Sauce may be kept warm for up to 2 hours in an insulated container. Or cool the sauce to room temperature and refrigerate it in a covered microwave safe container for up to 24 hours. To re-warm, cover container with plastic wrap, pierce wrap with a knife to vent, and microwave on 50 percent power until heated through, about 2-3 minutes, stopping to stir halfway through. Do not allow sauce to boil.

Steps:

  • Preheat oven to 350°F.
  • Flatten and dry the ham slices.
  • Stack ham in piles of 2 slices each; spread each stack with 1 tsp of cream cheese.
  • Sprinkle with freshly ground black pepper.
  • Place 1 asparagus spear on one of the long sides of each ham stack; roll up.

1 pound fresh asparagus, trimmed, cut into 1-inch pieces
2 cups cubed fully cooked ham
3 cups cooked rice
1 cup finely chopped celery
1-1/2 teaspoons lemon-pepper seasoning
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup chicken broth
1 cup shredded cheddar cheese
1/2 cup dry bread crumbs
1 tablespoon butter, melted

Steps:

  • In a large saucepan, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes or until crisp-tender; drain well. , In a greased 2-1/2-qt. baking dish, combine the asparagus, ham, rice, celery and lemon-pepper; set aside. In a large saucepan, combine soup and broth; add cheese. Cook and stir over medium heat until cheese is melted. Pour over ham mixture. , Combine crumbs and butter; sprinkle over top. 2 medium red potatoes, thinly sliced
1 (8 ounce) ham steaks or 1 (8 ounce) center cut ham steaks, cut in half

Steps:

  • Preheat oven to 450°F or grill to medium-high. Spray foil with nonstick spray.

Knowing that this recipe traditionally calls for cream, eggs, and cheese I can already see that health conscious people are cringing. Ok, this is how I changed this recipe to be more healthy. 1 cup of heavy cream has 88 grams of fat, 2 eggs yolks have 372 milligrams of cholesterol, egg noodles have about 100 milligrams of cholesterol. I used No-Yolks noodles, and instead of heavy cream and egg yolks - I substituted 1 cup of fat-free Half & Half to which I added 1 heaping teaspoon of corn starch. This easy change saved 88 grams of fat, and nearly 500 milligrams of cholesterol. I did not use the salt knowing that the ham and cheese has a lot of sodium. I also added a ¼ bottle of German beer so it had a "fondue" kind of flavor. From my own upcoming cookbook "New Century German Cooking."

1 1/2 lbs asparagus
1/2 medium onion, chopped
8 ounces cooked ham
3 tablespoons canola oil

2 tablespoons chopped basil
4 ounces of german beer

Steps:

  • Peel and chop the onion. Wash the asparagus, peel and chop off the woody ends. Cut into 1-inch pieces and steam sauté onion and asparagus 4-5 minutes.
  • Chop the ham and add to asparagus and onion.
  • At the same time cook the noodles according to instructions until al dente and drain.
  • Mix together the half and half with the corn starch and beer, and cheese. Pour into the pan and mix together with the asparagus, onion and ham. Allow to heat without boiling. Carefully fold the pasta into the mixture and allow to stand for 5 minutes. Sprinkle with parsley and serve.

I make them using green or white asparagus based on what is available and how the price is. You will need more when using white asparagus because they need to be peeled unlike the green ones. This dish is served here with melted butter drizzled over the asparagus, ham and egg, and some boiled new potatoes. This makes 2 pretty large servings.
