SPARERIBS AND KRAUT
This simple dish of baked spareribs and sauerkraut is a winner on a cold winter night. Serve with crusty rye bread and butter.

Steps:
- Preheat the oven to 450 degrees F (230 degrees C). Coat a 9x13 inch baking dish with cooking spray. Season the ribs with salt and pepper, and arrange them in the greased baking dish.
- Roast for 20 to 25 minutes in the preheated oven. Remove from the oven, and reduce the temperature to 350 degrees F (175 degrees C).
- Set the ribs on a plate, and drain excess grease from the baking dish. Spread the sauerkraut evenly in the bottom of the dish. Place the ribs on top with the meat side up. Tuck the potato wedges in amongst the ribs. Cover tightly with heavy aluminum foil.
- Bake for 30 minutes in the preheated oven. Carefully remove the foil to avoid hot steam, and serve.

- Place ribs in a large pot, cover them with water and bring to a boil. Reduce heat and simmer for 15 minutes. Drain the water and cool the ribs until you can touch them. Cut them into 1 or 2 rib portions. Sprinkle with salt and pepper and set them aside.
- In a large Dutch oven sauté the onion in shortening until glassy. Add the ribs, reduce the heat and cook for 15 minutes, stirring occasionally.
- Drain sauerkraut and add it to the ribs. Pour water and wine over the ribs. Add the apple, bay leaf and cloves, turn up the heat and bring to a boil. Turn down heat to low, cover the pot and simmer for 1 1/2 hours.
- Peel, wash and grate the potato and place into the sauerkraut mixture. Add a little water if needed. Stir and simmer another 1/2 hour. Season with salt and pepper and a dash of sugar.

- Place the potatoes, onion, apple and bacon in a 6-qt. slow cooker. Drain sauerkraut, reserving 1/3 cup liquid; add sauerkraut and reserved liquid to slow cooker., Cut spareribs into serving-size portions; sprinkle with salt and pepper. In a large skillet, heat oil over medium-high heat; brown ribs in batches. Transfer to slow cooker; sprinkle with brown sugar and caraway seeds., Add sausage; pour in beer. Cover and cook on low for 6-7 hours or until ribs are tender.

GRANDMA'S POLISH KAPUSTA WITH PORK SPARE RIBS

- Step 1 1. Cut spare ribs into individual portions.
- Step 2 2. Place pork in a large pot, top with water, and bring to a boil.
- Step 3 3. Lower the heat to medium, and skim until there is nothing left to skim.
- Step 4 4. Add two bay leaves and simmer on low for about 2 hours until fork tender.
- Step 5 5. Cut cabbage into 1/4 inch slices.
- Step 6 6. Add cabbage and sauerkraut to pot (note I had to remove half of the pork, add half of the cabbage and sauerkraut, add the pork back in, and top off with the remaining cabbage and sauerkraut in order to fit it in my pot).
- Step 7 7. Simmer for 35-45 minutes more (think low and slow). Don't forget to fish out the bay leaves which was my dad's job when he was a kid. Serve the kapusta with some boiled potatoes for a hearty meal.

- 1. Place ribs in a large pan, add enough water to cover ribs and season with pepper. Cover pan and bring to a boil, turn heat down and simmer until ribs are just tender (fork inserts easily but won't come out without resistance). Add sauerkraut and grated apple, add more water if needed. Cover and bring back to a boil, turn heat down and simmer until ribs are tender and starting to fall apart. Now they are done and ready to serve.
- 2. VARIATION: Sliced onion can be added to the pot when the sauerkraut is added. Instead of serving mashed potatoes with this meal the potatoes can be cut up in large chunks and added to the pot about 1/2 hr or so before meat is done.

- Preheat oven to 300℉
- Place large frying pan or indoor grill over med/high- high heat. Add oil and bring pan up to a full heat. (see tips above for testing heat of pan). Sprinkle ribs with black pepper and place fattiest aside down onto pan. Sear all sides until golden brown.
- Place seared meat into dutch oven and top with sauerkraut. Cover dutch oven with lid and bake for 3-3 1/2 hours.

BEST EVER SPARERIBS WITH POTATOES
My mom makes this so I'm not sure where she got this from. We have it for special occasions. The sauce is so good we pour it over the potatoes and meat. I serve this with whole kernel corn. **Note: I made the correction from original recipe that you don't need flour**

- 1. Season the ribs with salt,pepper,garlic and paprika. Let marinade several hours or overnight. Place the ribs and a small amount of water to prevent burning in a 350 degree oven,cover and bake until tender.
- 2. Cut larger potatoes in half,sprinkle with salt and pepper,remove the ribs,cut in serving size pieces. Place potatoes in the same baking dish,add undrained sauerkraut and place the ribs on top,bake until potatoes are tender. The juice from the sauerkraut and from the ribs help cook the potatoes.

- Place ribs in a 3-qt. baking dish. In a bowl, combine sauerkraut, water, brown sugar and caraway seeds; spoon over ribs. Cover and bake at 350° for 1-1/2 hours. - Have butcher cut rib section lengthwise into serving pieces. Brown spare ribs slightly on both sides in shortening in a large skillet over medium heat. Drain well.
