SAUSAGE BROCCOLI EGG CASSEROLE

This is great for a light dinner or a weekend brunch! You can use the small breakfast pork sausages in place of the Italian sausages if you are making this for brunch, also a 10-ounce package frozen broccoli cuts, thawed may be subbed for the fresh broccoli.

3/4 lb Italian sausage, casings removed
3 green onions, chopped (or use a small yellow onion)
2 cups fresh broccoli florets, cooked and drained
1 1/2 cups cheddar cheese, shredded and divided
8 large eggs, lightly beaten
1 pinch cayenne pepper
1 cup ricotta cheese
1/4 cup milk
seasoning salt (or use white salt)
black pepper
1/3 cup grated parmesan cheese
2 firm plum tomatoes, thinly sliced

Steps:

  • Set oven to 350 degrees.
  • Butter an 11 x 7-inch baking dish or a medium-size oval casserole dish.
  • In a skillet cook the sausage meat with onions over medium-high heat, stirring until the sausage is browned; drain fat and transfer to a large bowl.
  • Add in cooked broccoli and 3/4 cup shredded cheese; toss to combine, transfer and spread into bottom of prepared baking dish.
  • In another bowl combine the eggs with 3/4 cup shredded cheddar cheese, cayenne, ricotta cheese and milk, then season with salt and pepper; pour over the broccoli/sausage mixture.
  • Sprinkle with grated Parmesan cheese (or you can use cheddar in place of the Parmesan) then arrange the tomato slices over the top.
  • Bake covered for about 30 minutes; remove from oven and uncover.
  • Bake for another 15 minutes.
  • Let stand for 10 minutes before serving.

1 lb sausage
1 (15 ounce) can corn, drained
1 cup milk
1 egg
10 saltine crackers
tater tots
salt
pepper

Steps:

  • Brown the sausage & drain.
  • To the sausage, stir in the corn. Crumble the saltines by hand and add them. Whisk the egg with milk and stir into the sausage mixture. Add salt & pepper to taste.
  • Pour into a baking dish & top with tater tots.
  • Bake at 350 degrees for 45 minutes, until the tater tots are nice & golden brown.

My sister made this recipe and it was delicious, very creamy in texture! Also freezes well. This recipe is very versatile. Instead of the turkey Italian sausage, you could use bulk breakfast sausage. You can also add any veggies you like. Artichoke hearts are particularly good. Rotel (diced tomatoes and green chiles) is also very good in this. Enjoy!

1 lb Italian turkey sausage
1 medium green pepper, chopped
1 small onion, chopped
2 cups small curd cottage cheese
2 cups shredded cheese
1 1/2 cups egg substitute or 8 eggs
1 cup milk
1 cup baking mix
4 ounces diced green chilies (1 small can)

Steps:

  • In a large nonstick skillet, cook sausage, green pepper and onion over medium heat until meat is no longer pink; drain.
  • In a large mixing bowl, beat eggs.
  • Add the baking mix and milk.
  • add the cottage cheese, shredded cheese, and chiles.
  • Stir in the cooked sausage/onions/peppers.
  • pour into a 13-in X 9-in X 2-in pan coated with nonstick cooking spray.
  • Bake at 350F for 35-40 minutes or until a knife inserted near the center comes out clean.

This makes a great breakfast when you prepare it the night before, or you can omit soaking overnight (this works especially well with fresh bread). I must confess, I had some Texas Toast in my freezer that I defrosted and used in place of buttered bread (it probably would have worked frozen too). I used regular milk in place of the cream. 1 lb bulk sausage
4 -6 slices bread, remove crusts
2 tablespoons butter or 2 tablespoons margarine
1 1/2 cups cheddar cheese, shredded (or any cheese)
5 large eggs, slightly beaten
16 ounces half-and-half
1 teaspoon salt
1 teaspoon dry mustard
tomatoes, slices for garnish
green pepper slices, for garnish

Steps:

  • In large iron skillet, cook sausage over medium high heat about 8 minutes on each side until done.
  • Cool. Drain and crumble.
  • Butter bread.
  • Place in a casserole, buttered side down.
  • Sprinkle sausage on bread.
  • Cover with cheese.
  • In large mixing bowl, combine beaten eggs, half-and-half, salt, and mustard.
  • Pour over top of cheese. Let set, refrigerated, for 8 hours.
  • Bake at 350 for about 40 minutes or until set and lightly browned.
  • Garnish with tomato slices and pepper rings.

7 hard-boiled eggs (5 diced, 2 sliced)

  • Combine ingredients for white sauce in casserole dish.
  • Heat in microwave for 3 minutes at a time, stirring inbetween, until gravy consistency.

A number of years ago in a village in Spain I was served a dish similar to this recipe and thought of it as true comfort food.It was baked in a clay oven. It's been a while but this is my version of it. It was served for breakfast but I think of it more as a one dish dinner meal. It is an easy recipe with minimal preparation. You can make it ahead, reheat adding the eggs for the last 10 minutes. It can be as spicy or as tame as you like simply by choosing a type of sausage that you like. If you can get Portuguese Linguica sausage they would be perfect. I used Spanish Corizo-a very robust sausage full of smoke & flavor, You may even try Ham slices instead of sausage. The cook time is for making the recipe straight through-for "do ahead" allow another 40 minutes

3/4 cup onion, chopped
2 cloves garlic, finely chopped
2 tablespoons vegetable oil
1/3 cup mixed sweet red and green pepper, chopped
1 celery rib, chopped
2 teaspoons fresh basil or 3/4 teaspoon dried basil
1 (7 ounce) can tomato sauce
3/4 cup canned peas and carrots, drained (14 oz can will give you left overs to use in something else or fresh Peas and Carrots, cooked)
4 -6 red potatoes, cooked,left whole if small or quartered if larger
10 ounces smoked sausage, cut in 3/4 " pieces (Portuguese Linguica, Spanish Chorizo or sausage of your choice)
2 teaspoons hot paprika
1/4 cup white wine
2 tablespoons lemon juice
2 -4 eggs (at least one egg per person)

Steps:

  • Preheat oven to 375°F
  • Saute the onion & garlic in the vegetable oil until the Onion is translucent and the garlic is aromatic apprx 5 minutes
  • Add peppers & celery, cook a further 2 minutes
  • Add tomato sauce, sausage, potatoes & lemon juice
  • Sprinkle in the Paprika
  • Add drained peas & carrots & wine
  • Bring to a simmer
  • Transfer to a casserole dish with a lid
  • You may now continue to finish the dish or refrigerate it until 1 hour before serving bringing it to room temperature before placing it in the oven, If you have made this as a "do-ahead" allow 30 minutes at 375F to heat it to simmering
  • If you are continuing with the recipe without "doing ahead" place the casserole in the 375F oven and bring the contents to a bubbling simmer 5-10 minutes
  • Make a depression for each egg, crack in the eggs, cover and place back in the oven
  • Cook for apprx 10-15 minutes or until the eggs are done to your liking
  • Have one or two eggs on top of the sausage/vegetable mixture on each plate or bring the whole caaserole to the table
