2 pounds dry roasted peanuts
2 pounds cashews
1 pound raisins
1 pound M&M's
1/2 pound sweetened shredded coconut

Steps:

  • Combine all ingredients in a large bowl. Store in an airtight container.

Going on an adventure? These unique sandwiches pack a lot of nutrients and travel extremely well. They do require an adventurous spirit because they are quite different than they average fare. For a sweeter taste use a trail mix that includes dried fruit. I would not recommend one with chocolate pieces, though! Plain, unchopped sunflower seeds work great, too.

1 (8 ounce) package cream cheese, room temperature
1 tablespoon lemon juice
1 teaspoon finely grated lemon zest
1 carrot, peeled and grated
½ cup raisins
⅓ cup coarsely chopped trail mix
8 slices whole wheat bread

Steps:

  • Place cream cheese in a bowl. Add lemon juice and zest, raisins, shredded carrot, and chopped trail mix; stir until well blended and creamy. Spread between 2 slices of bread, and wrap up for the trail.

1/2 cup unblanched whole almonds
1/2 cup coarsely chopped walnuts
1/2 cup golden raisins
1/2 cup chopped dates
1/2 cup dried apple slices, chopped
1/2 cup dried apricots, chopped
1/2 cup semisweet chocolate chips
1/2 cup Honey Nut Cheerios

Steps:

  • In a large bowl, combine all ingredients. Store in an airtight container.

1 cup pumpkin seeds (also known as pepitas)
2 garlic cloves, finely minced
1/4 teaspoon salt
2 teaspoons dried chilies (I use chipotles. If you wish, use a milder chile to tone down the heat.)
1 teaspoon sugar
lime wedge (to garnish)

Steps:

  • In a heavy cas tiron skillet dry-fry the pumpkin seeds for a few minutes, stirring constantly as they swell. DO NOT burn. They will taste bitter if burnt.
  • Next add the minced garlic and cook for 1-2 minutes, stirring constantly. Add the salt and the crushed toasted chiles. Stir to mix well.
  • Turn the heat off, but keep the pan on the stove. Sprinkle the sugar on the seeds and shake the pan vigorously to coat the seeds.
  • Transfer the pumpkin seeds to a serving bowl and serve with a wedges of lime for squeezing over the pumpkin seeds.
  • Best eaten within a day.

My friend told me what she adds to her trail mix and I just eyeballed it. Your main components should be peanuts and almonds. 5This fills my 5 quart bowl to the brim, so you'll need a humongous bowl, or two large ones. You can add craisins if you want, and any dried fruit.I only used about 12 oz almonds and about 2/3 tub of raisins. My kids love this!

35 ounces cocktail peanuts
16 ounces honey roasted peanuts
20 ounces raisins
10 ounces craisins (optional)
5 ounces dried cherries

12 5/8 ounces M&M's plain chocolate candy
10 ounces reece's peanut butter chips
12 ounces nestle white chocolate chips

Steps:

  • Combine all ingredients into a very large bowl and combine well. Can be stored easily in gallon size ziplock bags or large Rubbermaid containers.
