PAN CON TOMATE (SPANISH TOMATO TOAST)

Pan con tomate is one of the most popular breakfast recipes in Spain. It's made with bread, garlic, tomatoes, salt and extra virgin olive oil.

4 whole wheat bread slices
2 salad tomatoes
1/4 tsp salt
1 clove of garlic, peeled and split in half
Extra virgin olive oil to taste (optional)
Chopped fresh parsley (optional)

Steps:

  • Toast the bread in a toaster, skillet or oven.
  • Cut tomatoes in half, and grate them using a box grater, discarding the stem and skins. You can also rub the tomatoes directly over the bread (discarding the stems and skins as well) or use an immersion blender to make the tomato mixture (discarding only the stems).
  • Place the tomato mixture in a small bowl, add the salt and mix until well combined.
  • Rub the raw garlic over the toasted bread. You can make 4 to 8 toasts with one clove. Discard the garlic.
  • Spoon tomato mixture over bread, and top with a drizzle of extra virgin olive oil (I added 1/4 to 1/2 tsp or oil per toast, but it's optional) and some chopped fresh parsley (optional).
  • Serve immediately. Best when fresh, you can keep the tomato mixture in a sealed container in the fridge for 3 to 4 days.

1 large country rustic baguette
2 tablespoons olive oil
1 clove garlic
1 large tomato
2 teaspoons course sea salt

Steps:

  • Preheat the oven to 400 degrees F.
  • Split the bread in half lengthwise and place it on a baking sheet. Drizzle the cut side with the olive oil. Bake until golden brown and toasted, 5 to 8 minutes.
  • While still warm, rub the cut side of the bread halves with the garlic. Cut the tomato in half and rub it on the bread halves.
  • Sprinkle with course salt, then cut into 4 pieces.

Pan con tomate, also known in Spain as pan tumaca or pa amb tomàquet in Catalan, is toasted bread topped with juicy tomatoes, extra virgin olive oil, garlic, and salt. - delicious!

4 tomatoes (juicy and ripe tomatoes on the vine work well)
Extra virgin olive oil (to taste)
1 clove of garlic (cut in half)
Salt to taste
1 loaf bread (rustic, or unleavened bread (works best for avoiding sogginess and maintaining crunchiness))
A few thin slices of Spanish Serrano or Iberian ham (optional, but highly recommended)

Steps:

  • Cut the bread into slices of toast with medium thickness. Arrange on a baking sheet, and toast the bread slices in the oven at 250°F (120°C) for about five to ten minutes, flipping halfway through.
  • Wash and dry the tomatoes. Cut them in half, and grate them using a box grater, discarding the stem and skins.
  • Once the tomatoes are grated, reserve in a small bowl and add about 1 tablespoon of olive oil and a pinch of salt. Taste, and adjust if necessary.
  • Cut the clove of garlic in half and rub the raw garlic on the toasted bread. Then carefully spoon the tomato mixture onto the slices of garlic toast, and top with a drizzle of extra virgin olive oil and a sprinkle of sea salt.
  • Optionally, top with a slice of jamón (Serrano or Iberian) for additional flavor, and a more hearty toast. Enjoy!

1 garlic clove , finely chopped
3 tbsp olive oil

pepper
20 slices of baguette
5-6 slices Serrano ham

Steps:

  • Mix together the chopped tomatoes, garlic clove, olive oil, salt and pepper. Keep in the fridge until needed.
  • To serve, toast 20 slices of baguette. Spoon a little tomato topping on to each piece of toast. Tear 5-6 slices of jamón Serrano into pieces and put one piece on each slice of bread.

1/3 cup extra-virgin olive oil
1 pound very ripe tomatoes (about 3 medium)

Steps:

  • Whisk anchovies and oil in a small bowl. Using the coarse grater disk on a food processor or the largest holes on a box grater, coarsely grate tomatoes (you should have about 1 1/2 cups tomato pulp). Rub halved garlic cloves on one side of hot toasts, then drizzle evenly with anchovy oil. Top with tomato pulp and sprinkle with sea salt. Serve warm.

When we lived in Barcelona we used to eat this all the time. Warning! Everyone has to eat this. If you don't the garlic smell will drive you out of the room. We bought a garlic jar in Spain for seasoning the garlic to make the taste a bit more concentrated. It's basically a ceramic jar with holes in the back to keep the garlic out of the light so it doesn't sprout, but the holes in the back allow the garlic to dry, in order to concentrate the flavor. It works fantastic and keeps garlic for 2 to 3 months.

4 large fresh tomatoes, coarsely chopped
2 cloves garlic, minced
¼ teaspoon salt
⅓ lemon, zested
1 teaspoon brown sugar
1 loaf ciabatta bread, split in half horizontally
⅓ lemon, juiced
2 tablespoons olive oil
black pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a saucepan over medium heat, stir together tomatoes, garlic, salt, lemon zest, and brown sugar. Cook, stirring constantly, until tomatoes release their juices, about 5 minutes. Reduce heat to low.
  • Cut each half of ciabatta into 2 or 3 pieces. Place cut-side up on a baking sheet, and bake in preheated oven until golden brown.
  • Meanwhile, stir lemon juice, olive oil, and pepper into the tomato mixture. Cook, uncovered, over medium heat until mixture is thick, about 6 to 8 minutes. Remove from heat, and spread tomato sauce over sliced bread. Serve hot.

4 large tomatoes, roughly chopped
1/4 teaspoon sea salt
2 garlic cloves, minced
1/2 grated lemon, rind of (separate, not mixed together)
1/2 lemon, juice of (separate, not mixed together)
1 teaspoon light brown sugar
1 flat loaf ciabatta (or other similar style)
2 tablespoons good quality olive oil
fresh ground pepper

Steps:

  • Preheat oven to 400 F.
  • Place tomatoes, garlic, salt, lemon rind and brown sugar in a saucepan.
  • Cover and cook gently for 5 minutes, until the tomatoes have released their juices.
  • Split bread loaf in half horizontally, then cut each half into 3-4 pieces. Bake 5-8 minutes, until crisp and golden.

4 large ripe tomatoes, roughly chopped
2 garlic cloves, roughly chopped
1/4 teaspoon sea salt
1/2 lemon, juice and zest of, grated
1 teaspoon soft brown sugar
1 loaf flat bread, such as ciabatta
2 tablespoons olive oil
ground black pepper

Steps:

  • Preheat oven to 400°F
  • Place tomatoes, garlic, salt, lemon rind, and brown sugar in a small pan.
  • Cover and cook gently for 5 minutes until the tomatoes have released their juices. Split the loaf in half horizontally, then cut each half width ways into 2-3 pieces, so that you have 4-6 flat pieces.
  • Bake on a baking sheet for 5-8 minutes until hot, crisp, and golden brown.
  • While the bread is baking, stir the lemon juice and olive oil into the tomato mixture. Cook 8 minutes more, until the mixture is thick and pulpy.
  • Spread the tomato mixture onto the hot bread, sprinkle with fresh ground pepper, and serve at once in a basket or on a platter.

  • Rub Raw garlic over freshly toasted bread (1 clove per slice)
  • Cut tomatoes in half, rub and squeeze all over bread. Sprinkle with sea salt to taste. Drizzle good quality olive oil over and ENJOY ! Note: It really is worth using vine tomatoes as they really enhance the flavour.
