SPANISH EGG CASSEROLE
I got this recipes from my girlfriends Mom when we was in High School ( just a few years ago). They had just moved here from Spain.I fix it to take to the beach and when we have company.

Steps:
- Preheat oven to 375 degrees.Spray 9X13 pan with Pam.
- Peel potatoes and layer in pan.
- Break eggs into bowl,mix with half & half. Add onion,bell pepper, cilantro and jalapenos.Pour over potatoes.
- Put bacon all over the top.Cook for and hour. Put cheese on just before it finishes.Serve with Biscuits and salsa.
SPANISH BAKED EGGS
A great breakfast for guests - serve with roasted tomato halves. No need for toast as the breadcrumbs provide the crunch. Cook and serve in a Spanish cazuela.

Steps:
- Melt butter and oil in a frying pan over medium heat.
- Fry onion and pepper until slightly brown then pour into the cazeula.
- Carefully break all 6 eggs on top of the vegetable layer.
- Mix the breadcrumbs and cheese and sprinkle over the eggs.
- Bake in a moderate oven, 350 degrees F, gasmark 4 for about 10 minutes, until eggs have set, but are not hard.
- (Oven temps and cooking vessels vary so keep an eye on it).

BREAKFAST STRATA WITH HOJIBLANCA OLIVES AND CHORIZO

- Heat the olive oil in a large frying pan over medium-high heat. Add the onion and cook until it is translucent, about 3 minutes. Add the sausage and garlic and cook until the sausage is fully cooked, about 7 minutes. Mix in the Hojiblanca olives and red peppers and set the pan aside.
- While the sausage is cooking, whisk the eggs, milk, cheese, Spanish paprika, oregano, salt, and pepper in a large bowl.
- Grease an 11×9 inch baking dish with olive oil, then add the cubed bread. Top evenly with the cooked onions and chorizo. Pour the whisked eggs and milk over top and gently push any exposed bread down into the custard. Cover the baking dish with foil and either bake immediately or refrigerate for up to 24 hours.
