- Whisk the dressing ingredients together until well mixed.
- Just before serving, toss with salad.
SPANISH SEAFOOD SALAD
Steps:
- Heat a charcoal or gas grill to high for direct grilling.
- Brush the shrimp and squid with canola oil, sprinkle with salt and pepper and grill until slightly charred on both sides and just cooked through, about 4 minutes for the shrimp and 6 minutes for the squid bodies and tentacles.
- Combine the shrimp, squid, crab, peppers, celery, onions, olives, cornichon and parsley in a large bowl. In a second bowl, whisk together the vinegar, olive oil, lemon zest and juice, and season with salt and pepper. Pour over the salad and toss to combine. Cover and refrigerate for 30 minutes to allow the flavors to meld.
ENSALADA VERDE (SIMPLE GREEN SALAD) RECIPE
Steps:
- Gather the ingredients.
- Rinse the head of lettuce thoroughly and drain it well. Break or tear it into pieces into a large salad bowl.
- Cut the tomatoes into eighths.
- Cut about a quarter of the red onion into very thin slices (cut more if you desire).
- Place tomatoes and onion on top of lettuce.
- Combine oil and vinegar in a bowl and whisk together.
- Just before serving, pour dressing over salad and toss. Sprinkle salt to taste and toss again. Add a splash of water if needed.

Steps:
- Slice the tomatoes and arrange on a large platter with the onion. Sprinkle with a good pinch of salt and ½ tsp of the sugar. Leave to stand for 10 mins or up to 30 mins while you make the dressing.
- Tip the parsley, vinegar, olive oil, remaining sugar, garlic, half the almonds and a good pinch of salt into the small bowl of a food processor. Blitz to a pesto consistency, adding a dribble of water if you need to loosen it a little.
- Weave the slices of ham between the tomatoes and onion, creating a little height on the plate. Drizzle over the dressing, scatter with the remaining almonds and shavings of manchego. Drizzle over a little extra oil and serve.

Generally, when they talk about salad, you imagine a bowl full of lettuce and if you are not a vegetable lover, you may not be thrilled when you have to eat salad. Thankfully, the Spanish potato salad, also known as ensaladilla rusa, escapes this norm. It is a delicious dish, you can get it done in less than an hour, and everyone loves it.

Steps:
- Wash and peel the potatoes and carrots. Cut them into cubes, the size you want, though the final size of the carrots should be smaller.
- Bring them to a boil in a large pot covered with water. Cook them for 25 minutes and when that time passes add the eggs. Continue cooking everything for 10 more minutes so the eggs get cooked.
- Drain them and let them cool, if you put them in a bowl and cover them with a bag you can let them cool in the fridge and you'll save some time.
- Meanwhile cut the olives, this step is optional but I recommend that you do it especially if your olives have a pit.
- Grab the bowl with the boiled vegetables, cut the boiled eggs, and put them there too. Now mix the peas, tuna, parsley, and mayonnaise in that same bowl. The final amount of mayonnaise is up to you, but if you use the listed amount, it'll be perfect.
