1 pound ground beef
1-1/2 cups cooked long grain rice
1 can (14-1/2 ounces) stewed tomatoes
1 can (14-1/2 ounces) cut green beans, drained
1 tablespoon dried minced onion
1 tablespoon sugar
1 teaspoon salt
1 teaspoon Worcestershire sauce
1/2 teaspoon ground mustard
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1/8 teaspoon hot pepper sauce

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 5-10 minutes or until heated through.

1/4 cup onion chopped finely (optional)
1 1/2 cups uncooked white rice
2 cups water (or chicken broth -I normally do 1 or 2 cups broth)
1 cups chunky salsa
1 tsp garlic salt
1 tsp cumin

Steps:

  • Saute onion in oil over medium heat. Cook until tender, about 5 minutes.
  • Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth, salsa, garlic salt and cumin.
  • Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
  • I double this recipe to make a lot of rice. You do the work once and have enough to last my family 2-3 meals.
  • I let rice cool and then freeze in freezer bags, that way I only have to mess up the kitchen once for a few extra meals.

6 slices bacon, chopped
1 cup white rice
½ onion, chopped
1 (19 ounce) can whole peeled tomatoes
1 cup water
¼ cup diced green bell pepper
¼ cup ketchup
1 teaspoon salt
½ teaspoon chili powder
1 dash ground black pepper

Steps:

  • Place bacon in a microwave-safe 2-quart baking dish. Microwave until crisp, about 6 minutes. Transfer bacon to a plate.
  • Place rice and onion in the baking dish; microwave until slightly tender, about 4 minutes. Add the cooked bacon, tomatoes, water, green pepper, ketchup, salt, chili powder, and pepper. 3 tbsp unsalted butter
2 cups uncooked long grain white rice
1 medium onion, diced
2 cloves garlic, minced
1 tsp cumin
1 tsp chili powder
1/2 tsp dried oregano
4 cups chicken stock
15.5 ounce can fire roasted diced tomatoes, with juices
1 bay leaf
salt and pepper

Steps:

  • Heat a large skillet over medium high heat and melt butter.
  • Add in rice and cook until lightly browned, stirring frequently, 2-3 minutes. Add in onion and saute for 2-3 more minutes, stirring frequently or until slightly golden brown.
  • Add in garlic, cumin, chili powder and oregano. Saute for one minute. Pour in the chicken stock, fire roasted tomatoes and bay leaf.
  • Bring to a boil then reduce to a simmer. Cover and simmer for 15-20 minutes or until the rice is tender. (Refer to the back of your rice, some cook times are shorter or longer depending on what rice you choose)
  • When the rice is done fluff with a fork and season with salt and pepper to taste. Serve immediately!

1 tablespoon extra-virgin olive oil
1 tablespoon butter
1 cup white rice
1 cup (APPROXIMATELY) chicken broth or stock (see NOTES below)
1 cup (APPROXIMATELY) tomato sauce or puree (see NOTES below)
1 1/2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon garlic salt
1/2 teaspoon dried oregano
1/4 cup diced fresh tomatoes (seeded & drained (optional))

Steps:

  • In a medium saucepan set over medium heat, melt together olive oil and butter. Add rice and stir to coat with oil/butter. Cook, stirring frequently, for about 2 to 3 minutes, until rice is toasted.
  • Stir in chicken broth, tomato sauce, chili powder, cumin, garlic salt, oregano, and diced tomatoes (if using). Increase heat to high and bring to a boil, stirring occasionally. Stir well, reduce heat to low, place lid on pot, and cook at a gentle simmer for 20 minutes (or whatever amount of time is directed on your bag of rice; see NOTES below). If rice is not quite tender or liquid is not absorbed after 20 minutes, replace lid and cook for 2 to 4 minutes longer. Remove from heat, leave covered, and allow to rest for a few minutes. Fluff rice with a fork and serve.

No muss, no fuss and can be served in the casserole dish you cooked it in. You can also use this method for brown rice but increase your cooking time a little.

1 cup white rice (not minute rice)
2 cups hot water
1 teaspoon butter or 1 teaspoon margarine
1/8 teaspoon salt

Steps:

  • Using a 2 quart casserole dish with lid, put rice, hot water, butter and salt in dish. Stir. (I put my casserole dish on a plate in the micro as sometimes the water boils over a little. Saves cleanup after).
  • Cover, and microwave on high power 5 minutes. Stir with fork (careful watch the steam!)
  • Cover and put back in microwave and cook on medium this time for 15 minutes.
  • Remove lid (careful again!) and fluff with fork.

1 tsp minced garlic

1 cube chicken flavored bouillon
dash cumin
dash garlic pepper

Steps:

  • Heat oil in large frying pan on medium heat.
  • Add rice and cook until golden brown.
  • Add 1 chicken flavored bouillon cube to 4 cups water and microwave for 3 minutes.
