SPANISH MACKEREL IN JAPANESE SESAME SAUCE



Spanish Mackerel in Japanese Sesame Sauce image

Simple and easy recipe for fish that doesn't take too much time to prepare and cook. The sesame sauce made mainly of sesame paste and miso complements well with the fish and vegetable ingredients of this dish.

150 g spanish mackerel, fillet (sawara)
1 pinch salt
1 pinch pepper
1/4 yellow onion
2 leaves cabbage
50 g shimeji mushrooms
50 g eringi mushrooms
2 tablespoons sake
1 tablespoon ponzu sauce
1 tablespoon sesame oil
1 tablespoon mirin
1/2 tablespoon vinegar
2 tablespoons sesame paste (neri goma)
1 tablespoon miso
1 teaspoon sugar
1/2 teaspoon sesame seeds

Steps:

  • Season the fish fillets with salt and pepper.
  • Remove the hard center part of the cabbage then slice it into small shreds. Slice the onion thinly. Remove the root part of the shimeji mushrooms then separate into individual pieces. Slice the eringi mushrooms into several pieces along its length.
  • In a small bowl, combine the sake, ponzu, sesame oil, mirin, vinegar, sesame paste, miso, sugar, and sesame seeds. Mix well until all ingredients are well combined. If you can not find neri goma, you can also use tahini sauce.
  • Cut out a 30cmx30cm piece of parchment paper then put it on top of a microwave-safe dish. Arrange half of the cabbage, onion and mushroom on one side of the parchment paper then put 1 piece of fillet on top. Do the same thing for the other half of ingredients.
  • Wrap to close the parchment paper then cook in the microwave for 4 minutes using 600W. Cook the other batch of fish and vegetables next.
  • Keep the parchment paper closed for 1-2 minutes after the microwave has stopped to allow the steam to continue to cook the fish and vegetables.
  • Pour the prepared sesame sauce on top of fish then you can serve.

Japanese marinade sauce gives a lovely taste and texture to broiled mackerel. Yellow tail, tuna or salmon are also good for this recipe. Easy, exotic!

4 mackerel fillets
¼ cup soy sauce
¼ cup mirin (Japanese sweet wine)
1 tablespoon white sugar
½ tablespoon grated fresh ginger root

Steps:

  • Rinse fillets, and pat dry with paper towels. In a medium bowl, mix together the soy sauce, mirin, sugar and fresh ginger. Place fillets into the marinade, and let stand for at least 20 minutes.
  • Preheat your ovens broiler, or an outdoor grill for high heat. Broil the fillets, basting occasionally, until the fish flakes easily with a fork, about 5 to 8 minutes. Serve with a lemon slice or long white radish slice as a garnish.

3 ounces toasted sesame seeds
1/4 cup Japanese soy sauce
1/4 cup light olive oil
1 tablespoon vinegar (or lemon juice)
2 tablespoons water
1 garlic clove, crushed
1 1/2 teaspoons togarashi pepper (see note)
1 tablespoon chopped white onions or 1/2 teaspoon onion powder
1 cooked egg yolk (optional)

Steps:

  • Place all ingredients in a small blender.
  • Blend till smooth.
  • Note: Togarashi is a Japanese seasoning made of crushed red pepper and other condiments, blended into a powder. Red or black pepper may be substituted.
