Spanish Green Beans With Bacon image

The quasi-classic Spanish side dish known as judias verdes con jamon. I substituted bacon for the Serrano ham. From 500 All-Time Great Recipes.

1 lb fresh green beans or 1 lb frozen green beans
3 tablespoons fruity olive oil
1 small yellow onion, thinly sliced
2 garlic cloves, finely minced
3 ounces bacon, cooked and crumbled (Serrano ham or Parma ham can be substituted)
salt
fresh ground black pepper

Steps:

  • In a large pot of salted water cook the green beans about 5-6 minutes, only until just tender but still with some "bite".
  • In a saucepan, heat the olive oil on medium heat and fry the onion for 5 minutes, until softened. Add the garlic and cook another minute. DO NOT burn the garlic!
  • Drain the green beans well and add to the saucepan with the garlic. Cook, stirring constantly for 2-3 minutes. Stir in the crumbled bacon. NOTE: If using Serrano or Parma ham, add it at the same time with the garlic.
  • Season with salt and pepper. Serve warm.

1/4 cup onion, chopped
1/4 cup green bell pepper, chopped
1 tablespoon olive oil
1 cup tomatoes, chopped
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary

Steps:

  • Cook beans until tender. Drain and set aside. Saute onion and pepper in oil until soft. Add tomatoes and spices. Stir in beans. Heat through.

I always plant green beans in my garden because they're so easy to grow. I found this recipe years ago and have made it often. It's so simple to prepare.

1-1/2 pound green beans, cut into 2-inch pieces
1 medium onion, chopped
1 medium green pepper, chopped
2 tablespoons butter
1 can (14-1/2 ounces) stewed tomatoes
2 teaspoons sugar
1/2 teaspoon salt
1 bay leaf
2 whole cloves

Steps:

  • Place beans in a saucepan and cover with water; cook for 8-10 minutes or until crisp-tender. Meanwhile, in a skillet, saute onion and green pepper in butter until tender. Stir in tomatoes, sugar, salt, bay leaf and cloves; simmer for 10 minutes. Drain beans; add to tomato mixture. Cover and cook for 5 minutes or until heated through. Discard bay leaf and cloves.

This is one of my Momma's dishes , I have no idea why she called them this. I have changed the sauce around different than they way mom did her sauce but there good !!! This is a main dish recipe. If you like green beans and spaghetti sauce you will love this dish , I've always served it with fried potatoes. A family Favorite ! You can use your own family spaghetti sauce instead of mine.

MAKE YOUR OWN SPAGHETTI SAUCE OR MAKE MINE BELOW.
1 pound(s) hamburger
1 pound(s) ground country pork sausage
1 large onion , chopped
1 - green pepper , chopped
1 can(s) sliced black olives , drained
1 can(s) mushroom pieces , drained
1 package(s) spaghetti sauce mix
29 oz. can(s) tomato sauce
1/2 can(s) water
1 can(s) diced tomatoes
2 (6oz) can(s) mushroom steak sauce (giorgio brand)
1 tablespoon(s) crushed garlic (from a jar)
1 teaspoon(s) celery salt
1 tablespoon(s) parsley flakes
1/3 cup(s) parmesan cheese
1 teaspoon(s) sea salt
1/2 teaspoon(s) pepper
1 tablespoon(s) sugar
2-3 small hot yellow chili peppers , whole ; optional
1 gallon can of cut green beans

Steps:

  • To make the sauce :
  • Fry hamburger and sausage in a large skillet. Add onion , green peppers ; fry until onions and peppers are tender , Add mushrooms and black olives ,
  • Sprinkle spice packet over top of meat mixture and mix in.
  • Add tomato sauce ,water , tomatoes , steak sauce , sugar and spices , mix well.
  • Add whole yellow chili peppers (do not break)if you want a little spicy heat. Optional.
  • Simmer for atleast 30 minutes to 1 hr. ( I like to simmer my sauce all day) Remove hot peppers when done.
  • Pour canned CUT green beans in a large pot and bring to a good boil for about 10 minutes.
  • Drain green beans , return to large pot.
  • Pour spaghetti sauce over beans and mix together.
  • NOTE :I like to let the sauce and beans soak together for about 30 minutes before serving. and I serve them with fried potatoes.

1 onion, sliced thinly
2 garlic cloves, chopped
3 ounces serrano ham, chopped
salt and pepper

Steps:

  • Cook the beans, left whole, in boiling salted water for 5-6 minutes, until they are just tender but still with a little bit of bite.
  • Meanwhile, heat the oil in a saucepan and fry the onions for 5 minutes, until softened and translucent.
  • Add the garlic and ham and cook for a further 1-2 minutes.
  • Drain the beans, then add them to the pan and cook, stirring occasionally, for 2-3 minutes. Season well with salt and pepper.

Translated from Karlos Arguiñano's "Atrévete a cocinar". NOTES: (1) Green beans in Spain are longer and flatter. Once I had them cooked and before I ate them I mistook them for spinach pasta. I would only suggest this recipe if you can get these type of beans, or if you know how to adapt the recipe, because I'm thinking, given their size and shape, that they are prepared and cooked a bit differently than their rounder cousins. (2) When this author refers to a tbsp it means a soup-spoonful. The water was originally described as two tumbler-glasses full.

400 g green beans
1 (200 g) potatoes
2 garlic cloves
4 tablespoons olive oil
400 ml water
salt

Steps:

  • Boil water in saucepan.
  • Clean green beans, remove tips with knife and remove threads along the sides using a vegetable peeler. If they are broad, slice them in half lengthwise. If not, leave them as they are. Then cut all beans into 4 cm pieces.
  • Peel potato and cut them into stew chunks.
  • Add green beans and potato to saucepan, season with salt to taste and let simmer 30 minutes.
  • Peel garlic cloves, slice width-wise and fry in 4 tbsp oil in a small pan. When they are golden-brown, add them along with hot oil to green beans and let boil 2 minutes so that the flavors mix. Serve on plates.

  • Rinse 1/2 lbs (250g) of fresh green beans under cold running water, shake off any of the excess water and cut off 1/2 inch from each end of each green bean, also thinly slice 5 cloves of garlic
  • Heat a fry pan with a medium heat and add a 1/4 cup of cold water, once the water comes to a light boil add the green beans into the pan and place a lid on top
  • Three minutes after adding the lid remove it, there should be almost no water left in the pan, drizzle in a generous tbsp of extra virgin olive oil and the thinly sliced garlics, mix everything together, continue to mix so the garlics can lightly cook, you don´t want to brown the garlics, just make them fragrant
  • After 2 minutes turn off the heat, add in 1 tsp of sweet smoked paprika and season everything with sea salt & freshly cracked black pepper, mix together until well combined, very important to turn off the heat so the paprika does not get a bitter flavor
