These delicious fried eggplants with honey are a typical Spanish tapa. Easy to make and even easier to eat, try them today!

Steps:
- Cut the eggplant in round slices or in matchsticks, depending on your preference.
- In a large bowl, cover the eggplant with milk and add a pinch of salt. Allow the eggplant to soak for about an hour (this is to draw out any bitterness).
- Drain the eggplant and coat the slices in the flour, which you can season with salt and pepper if desired.
- Fry the slices in a deep, heavy pan with abundant olive oil. (Make sure the oil is very hot before adding the slices and fry in batches as to not overcrowd the pan!)
- Remove the eggplant and drain on paper towels. Season with a pinch of salt. Drizzle with honey or molasses before serving.

SPANISH STUFFED EGGPLANT RECIPE (BERENJENAS RELLENAS)
My mother-in-law's traditional Spanish stuffed eggplant recipe (berenjenas rellenas) is a staple in my house!

Steps:
- Preheat the oven to 300°F (150°C)
- Wash the eggplants well and cut them in half lengthwise
- Put them on a baking sheet, skin side down and make crisscross cuts through the flesh
- Drizzle with lots of olive oil and sprinkle with sea salt and freshly ground pepper
- Bake for 45 minutes to 1 hour, until flesh is completely tender and easy to scoop out
- Take the eggplants out of the oven and let them rest for 15 minutes covered in aluminum foil while you prepare the filling (this ensures they're easy to scoop)
- Mince the garlic and dice the onion and pepper very small
- Saute the diced vegetables in hot olive oil while you scrape out the flesh of each eggplant and add it to the pan
- When the vegetables are starting to brown, add the ground meat (or the vegetarian mixture) and saute until cooked through
- Season with salt and pepper and remove from the heat
- Let the mixture rest for a few minutes before filling the empty eggplant skins
- To fill the skins, first add a layer of tomato sauce to the empty skins before filling
- Fill each skin to the top, and cover in mozzarella cheese
- Put under the broiler until just browned on the top
- Enjoy your Spanish stuffed eggplants!

I got this recipe from a chef in Spain. I have translated the metric measurement to imperial measures. This is not a fussy recipe. If you have 6 or 7 ounces of wine, it won't make a difference. Steps:
- 1. Heat oven to 360 degrees F. Cut aubergines in half lengthwise and slash flesh a few times but not through the skin. Cut curves on the outside to make scooping out easier.
- 2. Place cut side up on baking dish and coat with 2 tbsp olive oil. Bake 30 minutes or till soft. Remove to cool, then scoop out flesh but leave enough to keep form and doesn't collapse.
- 3. Rough chop flesh. Heat 3 tbsp oil and saute onion and garlic till soft for about 5 minutes, add spices and/or herbs and pinenuts if used.
- 4. Increase heat and add ground meat to brown. Drain off excess fat and add tomatoes, zest, bayleaf, aubergines pulp and wine. Bring to a boil and simmer 15 minutes or till done and reasonable dry.
- 5. Stuff each aubergine half and top with grated cheese. Bake 10 minutes or till brown and melted.
- 6. Skin of aubergines can be eaten.
EGGPLANT FRITTERS WITH HONEY

- Peel the eggplants and cut them into slices about 1/3 inch thick. Put them in a bowl, add enough milk to cover, and put a small plate on top to hold them down. Let soak for 1 to 2 hours; drain.
- Cover a plate with plenty of flour mixed with a sprinkling of salt. Working in batches, turn the eggplant slices in this so that they are entirely covered with flour, then shake them to remove the excess. Deep-fry in sizzling but not too hot oil, turning the slices over as soon as the first side is brown. Drain on paper towels.
- Serve hot with a dribble of honey, and let people help themselves to more honey if they like.
SPANISH GRILLED EGGPLANT WITH TOMATO VINAIGRETTE RECIPE
Steps:
- Gather the ingredients.
- Trim off any stems or blemishes on the skin of the eggplants. Cut eggplants crosswise into slices about 3/8-inch thick.
- Turn on broiler to heat. Place slices on a baking sheet and spray with oil, using a "mister" if you have one. If not, lightly brush each slice with olive oil .
- Place baking sheets under the broiler on the second shelf from the top, so that they are not too close, or they will burn.
- When one side is slightly browned and soft when you press lightly, turn slices over, apply olive oil and return to broiler. Depending on your broiler, the distance from the pan, it may take 20 to 25 minutes to cook. (You may find that slices that are directly under the broiler cook much faster than those at the far corners of the pan. Keep a close eye on the pans and rotate the slices on the cookie sheet.)
- Remove slices individually as they are done cooking and place on a large platter or serving plate. Don't be afraid to overlap slices on the serving plate. It works just fine for serving and will be more appetizing.
- While the eggplant is broiling, finely chop the tomatoes and place them into a medium size mixing bowl. Finely chop the green onions and put the garlic cloves through a press or mince them by hand and place in the bowl with tomatoes.
- Remove the capers from the jar with a slotted spoon, so that they drain.
- Chop the capers and mix into the bowl with other ingredients. Make sure that stems are removed from the basil leaves, then chop the basil and place in a bowl.
- Pour olive oil and vinegar into the bowl and mix with the other ingredients.
- Allow the eggplant to cool a few minutes. Then, spoon the tomato vinaigrette sauce over the eggplant.
- Serve immediately with sliced bread or cover with plastic wrap and refrigerate.

A wonderful topping for toates baguette slices. From cooking light and my only change when preparing is to omit the roasted red bell peppers (1/2 cup chopped if you would like to add them)

- Preheat oven to 450°.
- Pierce eggplants several times with a fork; place on a baking sheet. Bake for 45 minutes turning often, until blackened.Cool slightly; peel. Drain eggplant pulp in a colander for 5 minutesthen chop.
- Combine tomato paste and next 5 ingredients (through ground red pepper) in a small bowl, stirring until smooth.
- Heat oil in a large nonstick skillet over medium-low heat. Add onion and garlic cook 6 minutes , stirring occasionally. Stir in eggplant, tomato paste mixture, and anchovies; cook 10 minutes.
- Remove from heat; stir in parsley and spoon it into a bowl. Cover and chill for at least 1 hour.
- Makes 12 1/2 servings.
SPANISH ROASTED GARLIC EGGPLANT
Steps:
- Cut 1 large eggplant into 1/2 inch (1.25 cm) thick rounds, season each round generously with sea salt on both sides, add the slices of eggplant into a colander and let them sit for 30 minutes
- Meanwhile, roughy chop 5 cloves of garlic and add into a mortar, season with a little sea salt and using a pestle pound down until you form a paste like texture, then add in 2 tbsp (8 grams) finely chopped parsley and pour in a generous 2 tbsp (35 ml) extra virgin olive oil, mix together until well combined
- Thinly slice 2 tomatoes and set aside
- After 30 minutes, rinse the slices of eggplant under cold water, then pat each one dry with a dishcloth to remove any excess water & salt, add the slices of eggplant into a baking tray lined with parchment paper, making sure they are all in a single layer
- Lightly season the slices of eggplant with a little sea salt & black pepper, add the garlic sauce over the slices of eggplant, add 1 slice of tomato over each slice of eggplant and finely grate some manchego cheese over the tomatoes
- Add the baking tray into a preheated oven, bake + broil (bottom + top heat) 210 C - 410 F
- After 15 minutes remove from the oven
- Transfer into a serving dish and sprinkle with freshly chopped chives, serve at once, enjoy!
