CHEF JOHN'S CUBAN SANDWICH
Here's how I build a Cuban, or Cubano, sandwich. I like to use pulled pork. Carnitas would work too. These ingredients and amounts are open to your own personal preferences, but here's the general idea.

Steps:
- Mix mayonnaise, mustard, and cayenne together in a bowl to make the sauce.
- Trim off ends of bread. Cut loaf in half and evenly split bread to make tops and bottoms of 2 sandwiches. Spread each half on both sides generously with the mayo/mustard sauce.
- Divide sandwich ingredients between the two bottom halves in this order: 2 slices Swiss cheese, 3 slices ham, hot cooked pork, pickle slices, and 2 more slices of Swiss cheese. Place tops on sandwiches.
- Melt butter in a heavy skillet over medium heat. Place sandwiches in skillet and press down with a heavy weight (such as another skillet or foil-wrapped bricks). Toast sandwiches until bread is crisp and filling is heated through, 3 or 4 minutes per side.

CUBAN SANDWICH
It is generally believed that the Cuban cigar workers who migrated to the Tampa, FL area/Ybor City back in the early 1900's brought the Cuban sandwich to the US. Originally called the "mixto" or mixed sandwich, the Cuban, as it is known today, became a workingman's lunch for those employed in the cigar industry. Note--if you can't get sour oranges in your area, try equal parts of orange and grapefruit juice or 2 parts orange juice to 1 part lemon juice and 1 part lime juice.

- To make the Cuban Roast Pork: Mash the garlic and salt together using a mortar/pestle.
- Place the mash mixture in a small bowl; add in oregano, onion, and sour orange juice; mix thoroughly.
- Heat oil in a saucepan over medium heat; add in the mash mixture and whisk to blend.
- Remove from heat and set marinade aside.
- Pierce the pork roast with a sharp knife or fork.
- Set aside a small amount of the marinade for use during the roasting period.
- Pour remaining marinade over the pork, cover, and refrigerate 2-3 hours.
- Preheat oven to 325°; remove pork from marinade and place on a rack in a roasting pan.
- Sprinkle reserved marinade over pork.
- Roast until completely cooked and a meat thermometer registers 160° (about 20 minutes per lb).
- Baste occasionally with the pan juices.
- Remove pork from oven and let rest for at least 20 minutes before thinly slicing the meat.
- Bring remaining pan juices to a boil and simmer until juice is reduced by half; use this juice to sprinkle onto the meat in the sandwiches.
- To make the sandwiches: cut the bread into 4 sections, each about 8 inches long; slice these sections in half horizontally; spread butter on the inside of both halves.
- Generously layer sandwiches with filling ingredients in the following order: pickles, roasted pork, ham, and cheese.
- Spread with the optional mustard or mayonnaise if desired.
- Preheat a pancake griddle or large skillet.
- Lightly coat hot griddle or skillet with cooking spray; add in the first sandwich (make sure that your griddle or skillet is not too hot or the crust will burn before the cheese melts).
- Place a heavy iron skillet on top of the sandwich to flatten it (you want to smash the sandwich, compressing the bread to about a third of its original size).
- Grill the sandwich for 2-3 minutes on each side, until the cheese is melted and the bread is golden.
- Repeat the process for each sandwich.
- Slice each sandwich in half diagonally and serve.
- Note--Additions like Genoa salami, mayonnaise, lettuce, tomato, and onion have become popular in the past forty years but are considered heresy by purists; in the old days, the sandwich was brushed on the outside with a small amount of pork drippings.

ORIGINAL CUBAN SANDWICH
Steps:
- Cut Cuban bread to desired size, common size is 7 inches. Next, slice open the bread down the middle. On the topside of the bread spread 1-ounce of mustard, evenly across. Then place 4 pickles on top of the mustard. You then place 1 slice of Swiss cheese on top of the pickles. Slice ham to desired thickness, recommended size is 1 1/2 ounces per slice, the thinner the better. Now fold each slice of ham in half and place evenly on bottom of bread. On top of the ham, place slices of roast pork, 1 1/2 ounces per slice. You then join both halves of the sandwich. You are now ready to grill your Cuban sandwich.
- Use a sandwich grill if you have one, a waffle iron if not. Spread butter on top of the bread evenly. Close the grill, smashing the sandwich. Leave sandwich in the grill until top of bread turns to a golden brown, and top is crisp. Approximate time is 4 to 6 minutes. After the sandwich is crispy and the cheese has melted, remove the sandwich carefully and slice it diagonally, from corner to corner. DO NOT USE A MICROWAVE OVEN!
AUTHENTIC CUBAN SANDWICH
An Authentic Cuban Sandwich is grilled sandwich filled with ham, pork, (sometimes salami), Swiss cheese, pickles, and yellow mustard on Cuban bread!

- Preheat a panini press or a large cast iron skillet or griddle over medium heat.
- Lay bread, open side up, on a work surface and spread the bottom and top halves with mustard. Layer top half with Swiss cheese and pickles. On bottom half, layer ham, Spanish pork, and salami (if using). Close sandwiches, pressing gently.
- Butter top and bottom of sandwich, place on panini press and apply moderate pressure until crisp on both sides, about 8 minutes. If using a cast iron skillet or griddle, melt some butter and add sandwich. Use a second pan to press on them as the first side crisps. When crisp, flip sandwich and continue cooking while pressing until crisp on both sides, about 10 minutes total. Slice sandwiches in half diagonally and serve immediately.

MIAMI OR CUBAN SANDWICH RECIPE
Delicious Miami or Cuban sandwich, the precursor of the famous Mixto sandwich. A complete and really delicious sandwich.

- First we open the bread. In a frying pan or toaster, we toast the inside of the bread. We add the smoked ham, marinated pork and cheese.
- Cut the pickles and jalapenos into slices. We place them on the sandwich and spread the inside of one side of the sandwich with mustard.
- In a bowl, prepare a tablespoon of butter and melt it in the microwave. Clean with a paper the frying pan that you had used, so that there are no remains, and put the whole sandwich in the frying pan, over medium heat. We will paint the top of the Miami sandwich with the melted butter, and with a plate (smaller than the pan, but covering the sandwich) press it against the pan.
- Flip the sandwich over, with the buttered side now in the pan, and press it back down a bit. A few minutes, so it doesn't burn, but melts the cheese.Once ready, cut it in two halves diagonally.

SPANISH "CUBAN" SANDWICHES
Bobby's Spanish Spice Rubbed Pork Butt with Sherry Vinegar-Honey Glaze is a perfect match for this sandwich, but any pulled or sliced pork will work in a pinch.

- Prepare a grill for direct and indirect grilling over medium heat. Heat the plancha, or a cast-iron griddle, over the direct heat.
- Spread the mayonnaise on the bottom of the rolls. Top with half the Manchego and ham. Then, top with the Spanish Spice Rubbed Pork Butt and arugula. Top with the remaining half the Manchego and ham. Spread the mustard on the top half of the rolls. Place the tops on the sandwich and brush with the Piquillo Pepper Butter.
- Place the sandwiches butter-side down on the griddle. Place the bricks on top of the sandwiches and cook until the bread is crisp and golden brown, about 5 minutes. Watch carefully: if the bread browns too quickly, move the plancha to indirect heat and cover the grill to melt the Manchego. Flip the sandwiches over and place the bricks back on top. Continue cooking until the bottom of the sandwiches are crisp and the Manchego is melted, about 3 minutes.
- Blend the butter, piquillo peppers, garlic, thyme, paprika, salt and pepper in a food processor until smooth. Scrape the butter into a bowl, cover and refrigerate for at least 1 hour and up to 24 hours before using. Soften the butter slightly before using.
CUBAN SANDWICH RECIPE
This Cuban sandwich recipe is as easy as it is scrumptious. A classic deli-style Sammy made with roasted pork, ham, swiss, pickles, and mustard on buttery-crisp bread!

- Preheat the oven to 375°F/190°C, and line a rimmed baking sheet with foil.
- In a small bowl, whisk together all the pork marinade ingredients (olive oil, orange juice, lime, garlic, cumin, oregano, salt and pepper).
- Place the pork tenderloin on the baking sheet, and pour the marinade over the pork so it's well coated.
- Bake for 25-30 minutes or until the internal temperature reaches 145°F/63°C.
- Remove from the oven, let it rest for 5 minutes then transfer to a cutting board and slice into ¼ inch thin slices.
- Slice the bread in half lengthwise. If using a large loaf, then cut in halves to make a total of 4 sandwiches.
- Layer half of the cheese over the bottom piece of the bread, followed by ham, pork, pickles, and the remaining cheese.
- Over the top pieces of bread, spread mustard, and cover the sandwiches.
- In a skillet/pan, melt the butter, place one or two sandwiches in the pan, and press down with something heavy (cast iron pan). Cook for 2-3 minutes per side or until the cheese has melted and the bread is lightly golden. Repeat the same process with the rest of the sandwiches.
- Cut the sandwiches in half, and serve with potato chips.
