SPANISH RICE CASSEROLE
This is easy and very tasty, it's good served hot or at room temperature for a side dish, or as a main meal. All ingredients can be adjusted to taste. Add in finely chopped jalapeno pepper or crushed chili peppper for some heat.

Steps:
- Set oven to 375 degrees.
- Grease a 2-quart casserole dish.
- In a large skillet, brown the ground beef over medium-high heat; drain the fat, and transfer beef to a large pot over medium low heat.
- Stir in onion, garlic green pepper, tomatoes, water, rice, chili sauce, salt, pepper, brown sugar, cumin and Worcestershire sauce.
- Let simmer for about 30 minutes, stirring occasionally, then transfer to a 2-quart casserole dish; press mixture down firmly.
- Sprinkle with grated cheddar cheese.
- Bake for 10-15 minutes, or until cheese is melted and bubbly.
- Garnish with fresh cilantro if desired.

- Heat oven to 350°F.
- Cook and stir cabbage and onions in dressing in large skillet on medium heat 5 to 10 min. or until tender. Remove from skillet.
- Brown meat in same skillet. Stir in rice, soup and water until blended. Layer 1/3 of the cabbage mixture and half the meat mixture in 13x9-inch baking dish sprayed with cooking spray. Repeat layers; top with remaining cabbage mixture. Cover.
- Bake 1 hour.

This is a simple dish good anytime. My mother made it for the holidays.

- Cut cabbage leaves from core,wash, and place in pot of boiling water until tender. Remove from pot and place in bowl.Place half the cabbage in bottom of a 9 by 9 baking dish. Spread half the crushed crackers on top of the cabbage and take half of the margarine and dot in various spaces on the crackers. Sprinkle half the pepper on layers, then repeat process with other half of the ingredients. Pour the cup of milk over the entire layers(soaking the crackers on top). Place in oven at (325 degrees) and bake for 25 to 30 mins. Milk should be bubbly and top browned a little. Remove from oven at let stand for 10 mins. Serves 8 aprrox one half cups. Enjoy!

LAZY SLOW COOKER CABBAGE ROLLS WITH SPANISH RICE
Forget those active cabbage roll recipes, lazy is the way to go. Slow-cooking cabbage leaves stuffed with spanish rice and ground beef gives you plenty of time to do something other than cooking.

- Boil cabbage leaves until limp. Combine combine rice and ground beef. Divide into equal portions. Place each portion into a cabbage leaf, fold in sides and roll over. Place in bundles in crockpot. Pour spaghetti sauce over cabbage rolls. Cover and cook on LOW 4-5 hours.

SPANISH RICE HAMBURGER CABBAGE CASSEROLE

Steps:
- 1. chop up your head of lettuce and onion
- 2. in a frying pan, cook hamburger, onion, Worcester sauce, minced garlic, and steak seasoning; drain (drains the grease but not the flavor)
- 3. cook Spanish rice accordingly to instructions in a small separate pan
- 4. mix rice with the other cooked ingredients and add the diced can of tomatoes with liquid, add 1/2 jar of meat spaghetti sauce and stir it all together and mix it well
- 5. add chopped cabbage to a large, oiled casserole dish, then put all the other mixture on top of cabbage and pat down evenly
- 6. cover and cook for about 75 minutes or until done.
SPANISH CABBAGE CASSEROLE
This is my version of a deconstructed cabbage roll made with the the leftovers from my Easy Spanish Rice recipe. Great served with Miss Betty's Mashed Potatoes.

- 1. Preheat oven to 350°. Blanch cabbage in boiling water for 3-5 minutes. Drain.
- 2. Mix together tomato soup, tomato sauce and ketchup.
- 3. In a 3 quart casserole, spread about 1/2 cup of sauce.
- 4. On top of the sauce place about half of the cabbage. Spread about another 1/2 cup of sauce over the cabbage.
- 5. The spread the Spanish rice over that and add a little more sauce.
- 6. Top with the rest of the cabbage and enough sauce to cover, you will have about a cup or so of sauce left. (Warm up for extra sauce.)
- 7. Bake at 350° for 30-45 minutes or until bubbly around the edges.

- Preheat oven to 350˚F. Melt 2 tablespoons of the butter in a large skillet set over medium. Add cabbage, celery, onions, and garlic, and cook, stirring often, until tender, 10 to 15 minutes. Transfer to a 3-quart lightly greased (with cooking spray) baking dish.
- Melt 2 tablespoons of the butter in a medium saucepan over medium; whisk in flour, and cook, whisking constantly, until smooth and thick, about 1 minute. Gradually add milk to saucepan, whisking constantly to remove any clumps. Cook, whisking constantly, until thickened and smooth, about 3 minutes. Remove from heat, and whisk in Worcestershire, salt, pepper, and 1/2 cup of the Parmesan until smooth. Pour sauce over cabbage mixture.
- Place remaining 1 tablespoon butter in microwavable bowl, and microwave on HIGH until melted, about 30 seconds. Add breadcrumbs and remaining 1/2 cup Parmesan to melted butter, and stir until combined. Sprinkle breadcrumb mixture evenly over cabbage.
- Bake in preheated oven until casserole is bubbly and breadcrumbs are golden, 20 to 25 minutes.
SPANISH CABBAGE
From a community cookbook called "A Little Taste of Heaven". I added salt and black pepper to taste, but salt and pepper are a staple to me in any dish, especially cabbage. I also used some of bacon grease, just about a tablespoon and oil to saute' the veggies.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Partially drain fat from the skillet.
- Heat remaining bacon fat in the skillet over medium heat. Cook onion and bell pepper in the fat until tender, about 5 minutes. Add tomatoes, tomato sauce, pepper, and salt; continue to cook over medium heat, stirring occasionally, for 10 minutes. Add cooked rice to sauce mixture. Transfer rice and sauce mixture to a large mixing bowl.
- Crumble bacon. Stir 3/4 of the Cheddar cheese and 3/4 of the crumbled bacon into the hot rice mixture until cheese is melted. Transfer to a 9x11-inch glass oven-proof dish. Sprinkle remaining bacon and Cheddar cheese on top.

CABBAGE AND RICE CASSEROLE

- Steam cabbage for 10 minutes and set aside.
- Saute onion in the ¼ cup of butter til tender. Stir in the raw rice.
- Add the steamed cabbage and the chicken broth. Cover and let simmer on low for 20 min.
- Melt ¼ cup butter and pour over finely torn bread crumbs (I used 2 heels, and 1 regular slice). Stir together to make buttered breadcrumbs.
- Grate 1-2 cups of your favorite cheese. I prefer Kerrygold Dubliner, Gouda, or cheddar. .
- In a casserole dish, layer ½ the cabbage and rice mixture, then the grated cheese, and then the remaining cabbage and rice. Top with the buttered bread crumbs and Bake for 15 - 20 min at 350°.
- Serve immediately.

- While meat is browning. Grease a 9x13 pan and add a thick layer of cabbage covering the bottom - this layer will shrink considerably as it cooks so be generous leaving just enough room for remaining ingredients. Sprinkle uncooked rice over cabbage. Spread meat mixture over rice.
- Combine tomato sauce, bouillon, Worcestershire, taco sauce and water. Pour over cabbage mixture. Bake at 375, covered for 60-70 minutes. Remove cover and add cheese, return to oven until cheese is melted.
- Serve casserole with olives, jalapenos, sour cream and salsa. Tortilla chips go over pretty well with this too!
