OVEN SPAM® SANDWICHES
These sandwiches are made with SPAM®, Velveeta®, relish, and mayonnaise. Very simple and easy, but very good.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C).
- Stir together the luncheon meat, processed cheese, relish, and salad dressing in a bowl. Spoon the filling into the sandwich buns, and wrap each sandwich individually in aluminum foil. Place the sandwiches onto a baking sheet.
- Bake in the preheated oven until the filling is hot, and the buns have toasted, 10 to 15 minutes.

These sandwiches are an old family favorite. We used to BEG my mom to make these for us. For proper melting use only Longhorn cheese. These are great reheated or even cold the next day.

- -Ina large mixing bowl cut spam into bite size cubes; add chopped onion and cut up Longhorn cheese-Add miracle whip to coat generously and blend thoroughly.
- -Tearoff 8 pieces of foil large enough to individually wrap each bun in.
- -Placespam filling equally in the buns.
- -Wrapindividually in foil.
- -Bake@325 for 35-45 minutes til cheese melts and is gooey.

DAISY'S SPAMWICHES
My sister Daisy taught me this when I first got married. It's so creamy and great as a quick meal or an appetizer. I won second place at our local Spam cookoff with this a few years ago.

Steps:
- Mix all ingredients together.
- Place about 2 TBS on a piece of bread and spread with a fork to the crust. Be sure to push it down on the edges so they don't burn.
- Broil or put in a toaster oven until all melty and golden brown.
- Cut piece in fours for appetizers or in half for open-faced sandwiches.

- On a griddle or frying pan, fry the cut sides of the buns until they are nice and crispy brown.
- Spread mustard on buns, put onion on the bottom bun.
- Fry the spam until done on one side.
- Then flip them over and arrange them in two sets of two slices with one side in each pair touching each other.
- Put two slices of cheese on each pair and leave it until the cheese melts.
- Put each pair of spam slices on one of the bottom buns, scatter pickle slices over the top of the spam, put the top slice of bun on the sandwich and plate it up.
BROILED SPAM® AND CHEESE OPEN FACE SANDWICHES

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place the three slices of bread onto a baking sheet. Stir together the luncheon meat and Cheddar cheese in a bowl. Press the meat and cheese mixture on top of each slice of bread.
- Broil in the preheated oven until the sandwiches are hot and the topping is beginning to brown on top, 3 to 5 minutes.

CIN`S "SPAMALAMA POACHED SPAMWICHES"
Had these for Breakfast...funny thing is IT TURNED OUT TO BE GOOD!!! I like Spam anyway, so this was a fun challenge. Try it, you might just like it. P.S. I USED SPAM® Less Sodium ON THIS SPAMWICH It is not my photo...a friend sent it to me, I do not know where she got it.

- 1. Fry the two spam slices in butter. When done, lay provolone slices on each and place lamb slices on top. Slide pan off the fire, cover with lid (letting cheese melt).
- 2. Poach your two eggs (I poached these in my 'microwave egg poacher'). While the eggs are poaching, mix the dressing ingredients together and set aside.
- 3. Divide the english muffin into and toast the slices in a toaster (or in toaster oven).
- 4. Building your open-faced Spamwiches: Lay toasted muffin slices on two plates, spread dressing on both slices. Lay the spam, provolone an lamb layer on top of each slice of english muffin. Lay poached egg on top...sprinkle with salt & pepper if desired.
- 5. Serve open faced with thick slices of tomato on the side. Also good served with watermellon slices on the side.
SPAMWICH SPREAD
OK. I like Spam. I served it to my family when they were growing up. It was cheap, they ate it, and it filled their bellies! I used to make this for camping trips and we would put in the pie irons for hot sandwiches for lunch or supper. I put it in hamburger buns, wrapped in foil, put it in the fridge, and heated in the oven...

Steps:
- 1. Mix all ingredients adding enough mayonnaise to moisten.
- 2. Spread on toasted rye or whole grain toast and broil until the sanwiches are slightly brown and bubbly.
- 3. Spread on hamburger buns and wrap in foil. Refrigerate until needed. Heat in a 375 degree oven for about 20 minutes.
- 4. Preheat a pie iron over the fire. Butter the outside of the bread and place buttered side down on the iron. Place desired amount of filling on one side of bread. Close iron and bake over a fire or BBQ until toasted and hot.
- 5. Spread filling on bread and add lettuce or tomato slices as desired.
