- Add the whites of the scallions, garlic, ginger and rice. Stir together and cook until the rice begins to crisp and brown, 3 to 4 minutes. Add the pineapple, peas, soy, honey and lime juice. Stir together and continue to cook until everything comes together, another minute. Add to a platter and sprinkle over the sesame seeds and reserved scallion greens.
- For the spicy BBQ aioli: Quickly mix together the mayonnaise, BBQ sauce, sesame oil and Asian chile sauce. Drizzle over the fried rice before digging in.

- First prepare your rice. You can make this the night before and leave it in the fridge, or you can make it 20-30 minutes before you want to eat.
- When your rice is at the ready, heat the oil in a wok set over medium-high heat. Add the ginger and fry gently in the oil for about 1 minute. Next, add the spam. Cook the spam until it’s lightly crisped at the edges, stirring occasionally. Next, add the onions and carrots, and cook for a few minutes until tender.
- Turn the heat up to high, and add the cooked rice, breaking up any clumps with your spatula. Spread out evenly into a single layer across the wok to warm up the rice (if using leftovers) and gently crisp it.

- Heat a large nonstick pan over medium high heat and add 2 teaspoons of the oil. Scramble the beaten eggs then remove them from the pan and set it aside.
- Add the rest of the cooking oil to the pan and add the spam cubes in a single layer. Let the spam get brown and crispy on one side and then flip them over to brown and crisp on the other side. This should take about 4 to 5 minutes. Don't skip this step as it helps to flavor the oil.
- Add the cold rice and sauce to the pan. Make sure to break apart any clumps of rice by pressing down with the flat side of your spatula or spoon. It's important to coat each grain of rice with the oil and sauce. Add in a teaspoon more oil if you find your rice is sticking together.
