ABSOLUTELY THE BEST SPAM FRIED RICE

Absolutely the Best Spam Fried Rice image

I really like fried rice and was searching and searching for a recipe that I liked. My brother is a college student and one of his friends made some for dinner the night before and I snitched a bite the next day (I tried it cold, right from the fridge) and it was the best I have ever had (and it was cold)! His friend didn't have a written recipe to give me (he made the recipe up and just makes it), so I finally talked him into coming to my house to show me while I wrote the recipe down. My brother told me that there would be 5 of them coming over and to have the rice cooked and cooled. I had no idea how much rice to cook, so I made 4 1/2 cups (dry) rice. It made a ton, but after 7 of us ate (most had 2 bowls full) there was only 1 bowl as left overs. I am sure you can adjust this to make less. I had the original Kikkoman soy sauce to use and it was saltier and less sweet as the Aloha Shoyu that my brother's friend nomally uses. The serving amounts is a large range because you can have it as a meal like we did, or as a side dish.

Categories     White Rice

Time 40m

Yield 8-14 serving(s)

Number Of Ingredients 10

4 1/2 cups dry rice, cooked and cooled (preferably day old)
6 -7 eggs, with a splash water, scrambled
1 (11 ounce) can spam lite, diced
1 yellow onion, diced
12 ounces frozen peas and carrots, thawed
1 cup aloha shoyu soy sauce (or Kikkoman soy sauce, just use a bit more sugar to sweeten)
4 -5 tablespoons sugar, for aloha shoyu or 6 -7 tablespoons for Kikkoman soy sauce
4 -5 garlic cloves, minced
2 tablespoons oyster sauce
1 teaspoon sesame oil

Steps:

  • Scramble eggs in about 1/2 tablespoon of vegetable oil in a wok on medium high heat. When done, set aside in a bowl.
  • Place another tablespoon of oil in wok and sauté onions and Spam on medium high heat. When golden & starting to crisp on the outsides add the thawed peas and carrots.
  • Combine ingredients for the sauce and stir until sugar is dissolved, tasting along the way to be sure it is sweet enough for you. Add to the vegetables and boil on high until the sauce reduces to a glaze.
  • Slowly add the cooled rice and eggs to the vegetable mixture, being sure to break up any clumps of rice and so the coloring is even. Warm the rice through and serve.

  • Heat a large nonstick pan over medium high heat and add 2 teaspoons of the oil. Scramble the beaten eggs then remove them from the pan and set it aside.
  • Add the rest of the cooking oil to the pan and add the spam cubes in a single layer. Let the spam get brown and crispy on one side and then flip them over to brown and crisp on the other side. This should take about 4 to 5 minutes. Don't skip this step as it helps to flavor the oil.
  • Add the cold rice and sauce to the pan. Make sure to break apart any clumps of rice by pressing down with the flat side of your spatula or spoon. It's important to coat each grain of rice with the oil and sauce. Add in a teaspoon more oil if you find your rice is sticking together.

  • When your rice is at the ready, heat the oil in a wok set over medium-high heat. Add the ginger and fry gently in the oil for about 1 minute. Next, add the spam. Cook the spam until it’s lightly crisped at the edges, stirring occasionally. Next, add the onions and carrots, and cook for a few minutes until tender.

  • Spam Musubi. One does not mention Spam recipes without mentioning the king of them all: the Spam musubi! Spam musubis make a great snack and can be found at almost all convenience stores in Hawaii.
  • Spam Fried Rice. My favorite Spam recipe is fried rice. I love my fried rice recipe, which is based on Chinese-style fried rice and all my friends compliment it whenever I cook it for them.
  • The Hot Hawaiian Breakfast: Spam, eggs, and rice. Spam, eggs, and rice is what I like to call “The Hot Hawaiian Breakfast.” This recipe is just a local interpretation of the sausage, egg, and hash brown breakfast that is popular on the mainland.
  • Budae Jjigae, or “Army Base Stew” I worked in South Korea for 2 years and ate many great dishes there (most of which are waaaay too spicy for a guy raised in Hawaii).
  • The Spamwich. Because of it’s rectangular-size and because it’s so easy to slice, SPAM can easily be used for a sandwich. You can make whatever type of sandwich you want with SPAM, but I highly recommend that you cook your SPAM first.

10 SPAM RECIPES THAT MIGHT CHANGE YOUR MIND ABOUT CANNED ...

  • Spam musubi. Spam musubi is a ridiculously tasty, portable Hawaiian snack made by sandwiching a slice of Spam on a block of rice with a band of dried seaweed (nori).
  • Gallina de madre. Gallina de madre, or “mother hen toast,” gets a blue-collar makeover by substituting thin slices of salty Spam instead of prosciutto or ham and nestling it in a hefty piece of toasted country bread.
  • Spam fried rice. Besides being a terrific way to clean out your fridge — and a way to load your kids up on those vitamin-packed vegetables they won’t eat otherwise — Spam fried rice makes for a quick and easy dinner in a pinch.
  • Spam ramen burger. There’s a new ramen burger in town. You can’t go wrong with this thick slab of Spam slathered in a sweet soy sauce glaze and cabbage kimchee between two bite-worthy al dente ramen buns.
  • Scalloped potatoes, Spam and cheese. These creamy scalloped potatoes are baked up piping hot with cubed Spam and enough cheddar and Monterey Jack to satiate any cheese lover.
  • Spam fries with Key lime dip. You don’t have to travel to Singapore to try these deep-fried and insanely delicious Spam fries. Dipping them into a tangy Key lime mayo, you can transform this humble lunch meat into an exotic treat.
  • Budae-jjigae (army base stew) This irresistible fusion dish has its origins in postwar Korea, near Seoul. Koreans living around an American base there combined army rations, like beans, sausage and Spam, with traditional cuisine, like kimchee, hot pepper paste and dried kelp, creating what would soon become an unusual but deeply gratifying and umami-filled stew that is still popular today.
  • Slow cooker vegetable and Spam soup. Slow cookers are a great way to turn those canned vegetables stacking up in your pantry into a warm, nourishing soup.
  • Spam loco moco. This teenager-inspired rice bowl is now a permanent addition to restaurant menus all over Hawaii. Originally made with hamburger patties (and without the egg), there have been many variations over the years, but Spam loco moco is one of the most popular.
  • Spam fritters. Available from any chippy (a fish-and-chips shop), Spam fritters are an English mainstay. Battered Spam is fried until it’s crispy and golden brown and served with a plateful of traditional English sides — chips, buttery mash, mushy or baked peas and perhaps a Branston pickle and a spot of malt vinegar.
