ORIGINAL RECIPE FOR DANISH AEBLESKIVER (PANCAKE BALLS)

Original recipe for Danish Aebleskiver also known as Danish Pancake Balls. These traditional pancake balls are traditinal served during Christmas. However, they are also perfect the rest of the year.

250 g all-purpose flour
1/4 tsp salt
1/2 tsp Natron ((baking soda))
1 tbsp vanilla sugar
4 dl buttermilk
100 g butter, melted
3 eggs
1 tbsp sugar

Steps:

  • Separate the egg whites and yolks in separate bowls.
  • Whisk the sugar and egg whites fluffy and stiff. The bowl must be completely clean and dry. A tiny bit of water will make the eggs whites impossible to whisk stiff. Set aside.
  • Mix the egg yolks, all-purpose flour, natron (baking soda), salt and vanilla sugar together in a separate bowl.
  • Use a hand mixer to mix the ingredients while gradually adding the buttermilk. Keep mixing until the batter is uniform.
  • Melt the butter and let it cool off a bit. Slowly add the cooled butter to the buttermilk mixture while whisking.
  • Use a wooden spoon or similar to slowly mix the stiff eggs whites in the batter.
  • You need a special Aebleskive pan for frying. You can get one online or maybe at your local kitchen store.
  • Heat up the Aebleskive pan at medium heat and add a small piece of butter in each hole. Fill the holes 3/4 with the Aebleskive batter.
  • When the batter starts to get firm and you can turn them over without cracking, then turn the Aebleskiver 90 degrees (using a wooden stick or similar) and let the batter flow into the pan.
  • At this point there is a hole in the side of the Aebleskive. Pour a little extra batter into the hole and turn the Aebleskive another 90 degrees so that the hole gets closed.
  • When the Aebleskiver have a solid surface turn them regularly so they get an even and light-brown crust.

Spam Fritters are an absolute British classic. Here I show you how to make them at home in the easiest and most delicious way possible! I recommend skimming through the recipe notes before getting started!

1x 12oz/350g can of Spam
1 cup / 150g Plain/All Purpose Flour
1 cup / 240ml COLD Beer (see notes)
1 tsp Baking Powder
1/4 tsp each: White Pepper, Salt
Oil, for deep frying (see notes)
4 squares of Cheese, halved/sliced to the size of one fritter (Cheddar or Swiss work great)
Dijon Mustard, as needed

Steps:

  • Remove spam from tin (follow instructions on can, make sure it comes out whole). Place on chopping board and slice into 8 equal sized wedges. I find this easiest by halving (2), halving those halves (4), then halving each of those (8).
  • Lay each wedge flat and very lightly spread with dijon mustard (not too much, just enough for the cheese to stick ~1/2tsp). Lay each slice of cheese on top and firmly press down so it sticks to the spam.
  • Combine flour in a bowl with baking powder, white pepper and salt. Making sure the cheese stays intact, carefully (but thoroughly) coat each fritter in flour.
  • At this point pour 3-4cups/750ml-1litre oil in a deep pan and heat it to 180C/356F.
  • Once all the fritters are coated in the flour pour in the COLD beer. Use a whisk to stir (don't over beat or the bubbles with burst, some small lumps are fine). If you go OTT with the beer and it's too thin just mix in a few pinches more flour, vice versa with the flour. Again, you want the batter as airy and cold as possible so don't beat the hell out of it. It should be somewhat thin, but thick enough to coat the back of a spoon.
  • Use a fork to lower the fritters into the batter, allow them to fully coat, then carefully transfer into the hot oil. Work in batches of 3-4. You want to work fairly quickly as you want the batter to be as cold and bubbly as possible.
  • Once the fritters are in the oil the temp will drop, so try and keep it at a steady 180C/356F (increase heat as needed). Allow them to fry for a couple of minutes, then flip and continue cooking until golden. Remove one by one and place on a wire rack with paper towels UNDERNEATH (don't place straight on paper towels or they'll go soggy). Repeat with second batch.

PANCAKE OR FRITTER BATTER
1 1/2 c all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1/3 c sugar
2 large eggs (beaten)
3/4 c powdered milk
1/4 c vegetable oil
1 c water (may need a bit less or more to get desired thickness)
SPAM
1 can(s) spam (cut into stips like french fries)
OIL FOR FRYING
5 inches deep vegetable oil at 375 degrees

Steps:

  • 1. Beat batter ingredients together in bowl. Set aside until needed.
  • 2. Open can of SPAM. Cut into three equal slices. Cut each of the slices into strips (about the size of french fries).
  • 3. Heat the oil to 375 degrees.
  • 4. Dip the SPAM strips into the batter (one at a time). Place each battered strip into the hot oil. When golden, turn over. I only do 4 - 5 strips at a time as you don't want to crowd them and they cook quickly.
  • 5. Remove fritters to a paper towel lined plate to drain off oil.
  • 6. *** Any remaining batter can be cooked up as fried pancake donut balls... (if needed: add more flour to thicken dough). Fry them, drain them on paper towels... then shake in a bowl with powdered sugar. MMMMMMMM mmmm good!
