2 cans Spam, diced in cube (lite if desire)
1/2 chopped onion
3 -4 cloves garlic (minced)
1 (15 ounce) can tomato sauce
1 (14 ounce) can del monte beans or 1 (14 ounce) can del monte peas
1 dash black pepper
2 tablespoons oil

Steps:

  • in a sauce pan, med heat, brown onions and garlic in 2 tablespoon oil, add spam and brown lightly add tomato sauce and cut bean, dash of black pepper and let simmer for about 2 minutes.
  • Turn off heat and serve.
  • Delicious with steam white rice.

2 cups water
1 cup white rice
1 can SPAM, diced into small squares
1 medium onion, diced
1 can Hunts tomato sauce

Steps:

  • Bring to boil the water. Then stir in rice. Reduce heat to simmer. Let simmer 20-30 min. till rice is done.
  • While the rice is cooking, add the SPAM and onion together in a large skillet sprayed with non-stick cooking spray and saute until the SPAM is browned. Add the can of Hunts tomato sauce to the SPAM and onions, let simmer till slight boil.
  • Spoon SPAM and tomato sauce mixture over rice and serve. You can top with cheese or a spoonful of mayonnaise to jazz it up a little if you like.

My mom starting making this when i was a kid it happened one morning when she discovered she didn't have any ham or bacon to make breakfast gravy with.It's a staple in our home. It's great with biscuits and also over mashed potato's.

1 can(s) spam
1/2 cup(s) bisquick pancake mix
2 cup(s) milk or depending on the consistancy you want more or less
- black pepper to taste

Steps:

  • In a large deep skillet cook and brown your chopped up Spam.
  • Once spam is nicely cooked and browned add your bisquick mix stir making sure to brown the mix with the meat drippings leave spam in the skillet while doing this.
  • Once bisquick is mixed and browned add your milk slowly stiring till you get the consitiancy that you want. Add black pepper to taste do not add salt cause the spam has enough salt in it to season the dish.
  • *note if you cooking for more than 3 or 4 people you can double this recipe. Also note i do not use cooking oil when cooking the spam i use a cooking spray because the spam makes its own grease but it you want to add a little oil to yours you can.

Mama made countless batches of biscuits and tomato gravy in her lifetime. I'm sure she learned to make this from her mother: Carmen Inez Shirley. This is the dish that puts my feet back under my mama's table. Serve with love over hot buttermilk biscuits along with bacon or sausage for breakfast, brunch, lunch or dinner.

¼ cup bacon drippings
3 tablespoons all-purpose flour
2 cups water
½ (6 ounce) can tomato paste
salt and ground black pepper to taste

Steps:

  • Heat bacon drippings in a skillet over medium-high heat. Stir the flour into the bacon drippings and cook, stirring constantly, until lightly browned. Slowly pour the water into the flour mixture while whisking. Whisk in the tomato paste. Cook the mixture until it begins to thicken. Reduce heat to low and simmer until thick, about 5 minutes. Season with salt and pepper.

1/2 pound bacon strips, diced
1 small onion, chopped
2 tablespoons all-purpose flour
1/8 teaspoon salt
Pinch pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
3 cups tomato juice
8 hot biscuits, split

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan. Add onion to drippings; cook and stir over medium-high heat until tender, 3-5 minutes. Stir in flour, salt and pepper until blended; cook and stir over low heat until mixture is golden brown (do not burn). Gradually whisk in tomato juice. Stir in tomatoes. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, until thickened, 10-15 minutes, stirring occasionally. Stir in bacon. Serve over biscuits.

28 oz can of whole tomatoes or 5-6 medium fresh tomatoes
1 c milk
1 heaping tablespoon cornstarch
some salt & pepper, to taste

Steps:

  • 1. The tomatoes have to be cooked down. If you're not going to put them in with the meatloaf, just cook them down in a skillet. Pour in the can of tomatoes & cut (or squish) them up. If you're using fresh tomatoes, peel & cut them into small pieces. You'll probably need to add a little water to get the fresh tomatoes started. Cook about 20 minutes or so on medium-low heat, stirring frequently.
  • 2. If you cooked the tomatoes with the meat loaf, fish them out and put them in the skillet with a little water. Heat to boiling.
  • 3. By this step, the tomatoes are cooked down, regardless of how you started them. Mom always added a little "juice" from the meat loaf pan to boost the flavor. That part is up to you.
  • 4. Stir the heaping Tablespoon of cornstarch into the milk & mix well.
  • 5. Add the cornstarch & milk mixture to the tomatoes in the skillet. Cook and stir until the tomato gravy thickens, just 2 or 3 minutes. Season with salt & pepper, as desired. If you want a smooth tomato gravy, use a hand blender. I've actually never fixed it that way, but I stand up for your right to do so.
  • 6. Serve over meat loaf and mashed potatoes. =^..^=
  • 7. CREAMED TOMATOES: Actually, it's all pretty much the same, EXCEPT do not add any meat loaf "juice" and don't thicken as much as a gravy. (If it's too thick, just thin out with a little milk.) Delicious on biscuits or boiled new potatoes. This is also great over macaroni & cheese!
