Steps:
- Cook pasta in large saucepan of boiling water until just tender, drain.
- Meanwhile heat oil in small saucepan, cook garlic and chilli, stirring, about 30 seconds or until garlic just softens and is fragrant (do not brown the garlic).
- Place hot drained pasta and oil mixture in large bowl with pine nuts, cheese and rocket, toss to combine.

ROASTED ASPARAGUS AND ARUGULA SALAD WITH POACHED E
Great main dish salad or a side salad for a hearty appetite!

Steps:
- Preheat oven to 450 degrees.
- Place asparagus on a jelly-roll pan. Drizzle with 2 teaspoons oil; sprinkle with 1/4 teaspoons pepper and 1/8 teaspoons salt. Toss gently to coat; arrange in a single layer. Bake at 450 degrees for 5 minutes or until crisp-tender.
- Place remaining 7 teaspoons oil, 1/8 teaspoon pepper, remaining 1/8 teaspoon salt, shallots, juice, and tarragon in a large bowl; stir well with a whisk. Add arugula; toss gently to coat.
- Place about 1 1/2 cups arugula mixture on each of 4 plates. Top each serving with 1/4 of the asparagus.
- Add water to a large skillet, filling 2/3 full; bring to a boil. Reduce heat; simmer. Add vinegar.
- Break each egg into a custard cup, and pour each gently into the pan; cook 3 minutes or until desired degree of doneness. Carefully remove the eggs from the pan using a slotted spoon. Place 1 poached egg on each salad. Sprinkle with the remaining 1/8 teaspoon pepper. Arrange 2 bread halves on each serving.

Steps:
- Combine first 3 ingredients in a large bowl. Combine lemon juice, oil, salt, and pepper; stir well with a whisk.
- Gently toss lettuce mixture with lemon juice mixture.
- Sprinkle with bleu cheese.
- Sometimes I just use field greens with this salad if I can't find the other .
- I have also added candied pecans, yellow raisins and dried cranberries which was also a hit.

I really enjoy arugula and apples. I got this recipe from "Pacific Passions Cookbook" by Karen Barnaby. You can substitute watercress or escarole for arugula if not available

Steps:
- Place the arugula in a large bowl.
- Add the apple cider vinegar, salt and pepper and toss well; set aside.
- Heat the vegetable oil in a frying pan on medium heat.
- Add the bacon and cook until just crisp.
- Add the apple slices and heat through.
- Pour immediately over the arugula and toss well.
- Divide among 4 heated plates and serve immediately.

This recipe is from a Family Circle cookbook. An easy, tasty vegetarian pasta dish. Use other pasta if you prefer and use more olive oil to your taste. Make sure you don't over cook the asparagus and please use fresh Parmesan, not the dehydrated saw dust.

- Cut the asparagus in 2 inch lengths, steam, cook or microwave until just tender.
- Cook the pasta according the instructions until al dente.
- In the meantime add the arugula, lemon zest, chili, garlic and about 2/3 of the Parmesan to the asparagus Add this to the cooked pasta; pour on the lemon juice and the olive oil, season to taste with salt and pepper.
- Mix well and top with the remaining Parmesan.

- In a large pot of salted boiling water, cook the pasta until just al dente. Drain, reserving 1/2 cup of the cooking water.
- Meanwhile, in a large, deep skillet, cook the pancetta in the oil over moderate heat until browned and crisp, about 10 minutes. Remove from the heat and stir in the shallot, parsley, chives, thyme and crushed red pepper.
- Add the pasta and the reserved cooking water to the skillet and toss over low heat, scraping to remove any bits stuck to the bottom of the pan, until almost all of the water has been absorbed, about 1 minute. Stir in the arugula and transfer the spaghetti to a wide, shallow serving bowl. Toss with the grated cheese and season with salt and pepper.
- In a medium skillet, cook the butter over moderate heat, stirring, until golden brown and nutty smelling, about 5 minutes. Crack the eggs into the pan and cook until the whites are just set and the yolks are runny, about 3 minutes. Season with salt and pepper. Slide the eggs into the pasta and toss, breaking up the eggs to distribute them evenly. Serve hot.
