Bacon Shrimp Scampi Pasta image

What's not to like about pasta, garlicky shrimp, and bacon smothered in a creamy Parmesan sauce?

Provided by lutzflcat

Categories     Meat and Poultry Recipes     Pork

Time 35m

Yield 3

Number Of Ingredients 11

1 (8 ounce) package spaghetti (such as Barilla® Spaghetti Rigati)
4 slices bacon, chopped
2 cloves garlic, minced
12 ounces jumbo shrimp, peeled and deveined
⅛ teaspoon crushed red pepper flakes, or more to taste
½ cup chicken broth
½ cup heavy cream
⅓ cup freshly grated Parmesan cheese
salt and ground black pepper to taste
¼ cup chopped fresh parsley
3 wedges fresh lemon

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until nearly tender, about 8 minutes.
  • Meanwhile, cook bacon in a large skillet over medium heat until crisp, about 4 minutes. Drain on paper towels, leaving about 1 1/2 tablespoons grease in the skillet.
  • Add garlic to hot grease and cook until fragrant, about 30 seconds. Add shrimp and sprinkle with red pepper flakes. Cook until just cooked through and pink, about 2 minutes per side. Remove from the skillet and set aside.
  • Pour chicken broth into the hot skillet, and cook for about 1 minute. Stir in heavy cream, and bring to a simmer, about 2 minutes. Reduce heat to low, whisk in Parmesan cheese, and cook until sauce starts to thicken, about 2 minutes.
  • Drain spaghetti, reserving 1/2 cup of pasta water.
  • Return shrimp and bacon to the skillet and simmer until heated through, about 1 minute. Add spaghetti and toss all ingredients together. Whisk in some of the reserved pasta water if sauce is too thick. Season with salt and pepper.
  • Garnish with chopped parsley and serve with a fresh lemon wedge to be squeezed over the pasta.

Provided by Marlynn Schotland

Categories     30-minute meal     dinner

Number Of Ingredients 14

5 slices bacon, chopped
1 garlic clove, minced
1 teaspoon Dijon mustard
1 teaspoon thyme
1 teaspoon oregano
1/4 cup dry white wine or chicken broth
1 can coconut milk (14.5 ounce can)
1/2 cup nutritional yeast
8 ounces pasta - tagliatelle, fettuccine, linguine, or wide egg noodles
1 cup chicken broth or water* (up to 2 cups; see NOTES)
1 cup shrimp, deveined, peeled, tails off
1 tablespoon lemon juice
salt and pepper
1 tablespoon fresh parsley, chopped (optional)

  • Add coconut milk and nutritional yeast, stir together until the nutritional yeast flakes have combined with the sauce.

Slowly pour in 1 cup of broth or water, and cook for about 6-8 minutes, stirring regularly to move the pasta around in the liquid to ensure even cooking. *NOTE: if you find your liquid is cooking down faster than your pasta is cooking, add more broth or water in 1/4 cup increments, up to 2 cups total
  • Add shrimp and cook until pink on both sides, about 3-4 minutes.
  • Once cooked, squeeze lemon juice over the pasta and toss to combine. Season with salt and pepper, then sprinkle with fresh parsley and serve immediately.

SHRIMP AND BACON PASTA CARBONARA

Shrimp and Bacon Pasta Carbonara image

Provided by Michelle Dunster - DishesAndDustBunnies.com

Time 30m

Number Of Ingredients 12

1 lb linguine pasta, cooked according to package directions and set aside
⅔ cup of reserved water from the cooked pasta
1 lb raw shrimp, peeled and deveined
¼ cup butter
½ tbsp olive oil
4 cloves garlic, minced
salt, to taste
pepper, to taste (just a little is good)
6 bacon strips, cut in 1″ sections
⅓ cup of grated parmesan cheese
2-3 eggs, beaten (I used 3 for the dish in the pictures but it's up to your preference)
chopped fresh Parsley, for garnish

Steps:

  • In a large skillet or frying pan, combine the butter and the minced garlic. Cook for a minute on medium heat to infuse the butter with the garlic flavor. Add the peeled and deveined shrimp and cook until they are pink on all sides. Depending on the size of your shrimp, cooking time should only be a few minutes.
  • Be sure to season with salt and a little pepper, to taste. Once shrimp has cooked remove from the pan and set aside in a dish. Make sure that you also pour the garlic infused butter into the bowl along with the shrimp too.
  • Cook the pasta according to package directions, reserve some of the pasta water and drain. Set aside until needed.
  • Cook the bacon over medium heat in the skillet until it's browned. Then, use a paper towel to blot up any excess grease and fat from the bacon. After removing the bacon from the pan, pour out any remaining grease and fat so that only clean oil remains in the pan.
  • Add the pasta and reserved pasta water to the skillet, then gently toss with the beaten eggs so that the eggs are evenly coating the pasta. Do this as quickly as possible so that the eggs don't clump together. You want them to evenly coat the pasta - try to avoid creating "chunks" of egg - everything should be smooth.
  • Add the parmesan cheese and toss it with the pasta. Return the reserved shrimp with garlic butter and the bacon to the skillet.
  • Serve right away and garnish with a sprinkling of fresh parsley.

  • Drain most of the bacon fat from the pan, but keep a little bit in for flavor. Add the tomato, garlic, Dijon mustard, Italian seasoning, and chicken broth to the pan. Give it a good stir and let it simmer for about 1-2 minutes.
  • Add the cream to the pan. Let it cook for 5 minutes (so it reduces & thickens). If it's bubbling like crazy, turn down the heat.

While it cooks, sprinkle the uncooked side of shrimp with salt, paprika and Italian seasoning. Flip the shrimp over, and cook on the other side for 1 minute on high heat. Reduce heat to medium, flip shrimp over again a couple of times, making sure all shrimp is covered in spices and until the shrimp turns pink in color, for a couple of minutes. Remove shrimp from the pan and keep shrimp warm.
  • To the same pan (but without shrimp), add chopped tomatoes, garlic, half the bacon (already cooked and drained of fat), crushed red pepper flakes. Mix everything, and cook for about 1 minute, stirring everything on medium heat.
  • Add half and half and bring to boil. Add another 1/4 teaspoon salt, stir. Only after half and half starts boiling, add Parmesan cheese (freshly shredded) and start stirring. Once the cheese start melting, immediately reduce heat to medium and stir, while simmering, until the cheese completely melts and the sauce becomes creamy, which should take 1 minute (at most 2 minutes). Then, reduce heat to low, add fresh spinach, cover with the lid and let the sauce sit, simmering on very low heat, for about 1 minute. Remove the lid, stir the sauce, the spinach should start to wilt, keep stirring on low heat, until the spinach wilts, for another minute.
  • In the mean time bring a large pot of water to boil, add pasta and cook it according to instructions. Drain the past.
