TACO SPAGHETTI
I came up with this kid-friendly Southwestern recipe one afternoon when I was using up leftover spaghetti and ground beef. When I'm lucky enough to have extra time, I make two batches and freeze one. -Johanna Van Ness, Wichita, Kansas

- Preheat oven to 350°. Break spaghetti into thirds; cook according to package directions for al dente., Meanwhile, in a Dutch oven, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Stir in taco seasoning and water; bring to a boil. Reduce heat; simmer, uncovered, 5 minutes, stirring occasionally., Stir in beans, tomatoes, 1 cup cheese and salsa. Drain spaghetti; add to beef mixture and toss to combine., Transfer to a greased 13x9-in. baking dish. Bake, covered, 20 minutes. Sprinkle with remaining cheese. Bake, uncovered, 3-5 minutes longer or until cheese is melted. Let stand 5 minutes before serving. Freeze option: Cool unbaked casserole; sprinkle with remaining cheese. Cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole, covered, 55-60 minutes or until heated through and a thermometer inserted in center reads 165°.

- In a large saucepan, combine the first nine ingredients; stir in meatballs. Bring to a boil. Reduce heat; simmer, covered, 20-25 minutes to allow flavors to blend, stirring occasionally., Meanwhile, in another saucepan, cook spaghetti according to package directions; drain and return to pan. Remove 1-1/2 cups sauce from meatball mixture; add to spaghetti and toss to coat., Heat taco shells according to package directions. Place 1/2 cup spaghetti in each taco shell; top with meatball mixture and cheese. If desired, sprinkle with fresh basil.

SPAGHETTI TACOS
My kids wanted these after seeing them on one of their favorite TV shows. Very quick and easy.

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
- Return the pasta to the pot, and pour the sauce over the pasta; mix thoroughly until reheated. Place the taco shells into a microwave oven in a stack, and fan the stack out to a circular shape so the edges of the taco shells overlap slightly. Cook on High until warmed and crisp, 30 to 45 seconds. Fill the warm taco shells with the pasta mixture. Sprinkle pasta filling of each shell with about 1 teaspoon of Parmesan cheese to serve.

- Break pasta in half and prepare per package instructions, about 7 minutes. Bring a large skillet sprayed with nonstick spray to medium-high heat on the stove. Add soy crumbles, crushed tomatoes, and taco seasoning, and mix well. Cook and stir until hot, 2 to 4 minutes. Drain the pasta and add it to the skillet. Mix well. Evenly distribute the pasta among the taco shells, about 1/3 cup per shell. Top each evenly with cheese, onion, and lettuce. Tada!

SPAGHETTI TACOS
An inventive combination of two family favorites; spaghetti and tacos! I actually heard about spagetti tacos on one of my daughter's favorite shows, iCarly. Carly's brother Spencer makes this a lot. Tonight it just sounded good and I decided to put my own spin on this interesting dinner. P.S. The next night we put the leftover spaghetti mixture on a plate of taco chips with cheese on top and microwaved for a minute and a half. Spaghetti nachos!!

Steps:
- Brown ground beef and drain grease. Add tomato sauce and taco seasoning. Fill up one empty tomato sauce can with water and add. Season to taste with salt, pepper and garlic powder. Simmer on medium heat.
- Cook spaghetti as directed on box.
- Add cooked noodles to sauce and toss to combine.
- Put noodle/sauce combination in crunchy taco shells and add cheese on top.
- Enjoy!

My kids both love iCarly. As with so many others, they saw the episode where they were eating Spaghetti Tacos and begged me to make them. This was my attempt at them, and I have to say, we were all pretty impressed with them!

- Prepare noodles according to package directions. Drain and return to pot.
- Brown meat in pan until no longer pink. Add taco seasoning and water. Bring to a boil. Reduce heat and simmer for 5-6 minutes, until sauce thickens. Add spaghetti sauce and cook until warmed. Add to noodles and mix thoroughly.
- To assemble the tacos, place a spoonful of salsa in the shell. Sprinkle with a small amount of cheese. Finally, finish filling the shell with spaghetti. Add lettuce on top, if desired.
- Very messy, but very yummy!

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- Heat a large skillet over medium heat and cook ground beef and onions until meat is browned and onions are soft and translucent, about 5 minutes. Stir in mushroom soup, tomatoes, water, and taco seasoning. Cook until well combined. Add Velveeta® and stir until melted, about 5 minutes.
- Drain spaghetti and add to skillet. Top with Cheddar cheese, cover, and let stand until cheese has melted.

- Preheat an oven to 375 degrees F (190 degrees C). Place the two halves of the squash with the cut sides facing down into a baking dish.

- Brown ground beef .
- Add onions and garlic and cook for a few minutes. Once golden-brown, add mushrooms and cook for a couple of minutes.
- Add taco seasoning, tomato sauce, canned tomatoes and sugar. To this, add a cup of water and simmer for 30 minutes.
- Cook spaghetti noodles according to package directions while the sauce is simmering. Once cooked, add sauce to spaghetti.
- Top with fresh diced roma tomatoes, mozzarella cheese, cheddar cheese, and fresh cilantro. Serve and enjoy!

- Brown the ground beef.
- Drain and season with the taco seasoning and add the taco sauce to make a sort of spaghetti sauce.
- While you are cooking the meat cook up the spaghetti noodles.
- Once the meat and sauce is done mix in the drained noodles.
- Heat the shells per the package directions.
- Place desired portion of spaghetti in the taco shells and top with salsa and shredded cheese.
