Easy sweet squash. I also use acorn and buttercup squash for this recipe. My family loves when I make this.

1 spaghetti squash, halved lengthwise and seeded
2 tablespoons butter, softened
2 tablespoons cold butter
¼ cup brown sugar

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line a large baking dish with aluminum foil.
  • Generously spread the softened butter over the flesh of the squash; lie in the prepared baking dish with the cut sides facing down.
  • Bake in the preheated oven for 30 minutes. Flip the squash and put about half the butter and about half the brown sugar in each of the cavities of the squash halves. Return to the oven until the outer shell is soft, about 10 minutes more. Spoon the flesh of the squash into a bowl to serve.

2 medium acorn squash (halved and seeds removed)
3 tablespoons coconut sugar (or brown sugar)
1 tablespoon crystallized ginger (finely minced)
1/2 teaspoon sweet curry
2 tablespoons grated orange zest
1/3 cup water

Steps:

  • Place acorn squash cut side-up in a large baking pan. In a small bowl, combine sugar, ginger, curry, and orange zest. Sprinkle evenly into each squash cavity. Carefully pour water into the bottom of pan. Cover pan with aluminum foil.
  • Bake squash at 400F 1 hour or until squash is soft and tender. To serve, scoop out squash and drizzle with additional glaze.

1 tablespoon honey
1/2 teaspoon finely grated peeled fresh ginger
1/2 teaspoon mustard powder
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
3 acorn squash, seeded, each cut into 8 wedges
1 red bell pepper, ribs and seeds removed, cut into 3-inch strips
4 bone-in pork chops (1 inch thick; about 2 1/2 pounds total)
2 bunches scallions, trimmed and cut into thirds

Steps:

  • Preheat oven to 450 degrees, with racks in middle and lower thirds. In a small bowl, combine honey, ginger, mustard, and 1 teaspoon oil. Season glaze with salt and pepper. On a large rimmed baking sheet, toss squash with 1 tablespoon oil and season with salt and pepper. Transfer 8 wedges to another rimmed baking sheet. Roast both sheets of squash 15 minutes.
  • Remove sheets from oven and flip squash. To tray with 8 wedges, add scallions and bell pepper, drizzle with 1 teaspoon oil, season with salt and pepper, and brush with glaze.
  • Return sheets to oven and roast until squash is tender when pierced with a knife, 10 to 15 minutes. Let sheet with 16 wedges cool completely, then refrigerate for Chicken Cutlets with Mustard Greens and Roasted Squash.
  • Meanwhile, in a large skillet, heat remaining teaspoon oil over medium-high. Season pork with salt and pepper and cook until golden brown on one side, about 4 minutes. Flip, brush with remaining glaze, and cook until pork is cooked through, 5 minutes. Serve pork alongside roasted vegetables.

1 large spaghetti squash
2 tablespoons salted butter
2 tablespoons freshly grated ginger
2 tablespoons unsalted butter
1 tablespoon chicken base
1 cup honey
1/2 cup brown sugar
1 cup water
2 tablespoons cornstarch

Steps:

  • Heat oven to 350°F.
  • Cut squash in half lengthwise.
  • Remove seeds; place in large baking pan, cut side down.
  • Bake 45 minutes or until skin is tender and strands can be loosened easily with a fork.
  • In sauté pan, cook ginger with unsalted butter until tender.
  • Add chicken base (chicken base is concentrated, paste-like flavor essence sold in larger supermarkets and gourmet stores), honey and brown sugar.
  • Mix water and cornstarch and add to ginger mixture.
  • Let simmer for 5 minutes; keep warm.
  • When squash is done, place strands in a shallow dish and top with 2 tablespoons salted butter.
  • Top with desired amount of honey ginger glaze.

1 tablespoon honey
1/2 tablespoon minced ginger
Salt and black pepper to taste

Steps:

  • Pre-heat oven to 375 degrees. Place squash on baking dish and add the butter, honey, ginger and seasoning. Bake for 45 to 60 minutes until squash is al dente. Do not overcook the squash. Spoon out squash and check for seasoning. Keep warm for serving.

  • Using a sharp paring knife, carefully pierce (I really mean stab) the spaghetti squash in a few places (about 6 slashes is good). Place squash on plate. Microwave on high for 10-15 minutes, turning/rotating the squash halfway during cooking. I had a 3 1/4 pound spaghetti squash. 12 minutes total was perfect.The squash is done with a fork very easily pierces through the squash, if there is resistance - microwave for an additional 1-2 minutes.
  • Carefully (the squash will be steaming hot!), use a chef's knife to cut the squash in half, lengthwise. The squash should be soft and easy to cut. Remove and discard the seeds. Use two forks to scrape apart the strands of the squash. For this recipe, we'll only use half of the spaghetti squash, about 4 cups.
  • Heat a large saute pan over medium heat with the olive oil. Add in the garlic and cook for 1 minute. Add in the tomatoes and basil and cook for another minute. Turn heat to medium-high and add in the spaghetti squash and toss. Season with salt and pepper and drizzle in the balsamic vinegar. Taste the squash - adjust seasoning. If the squash still needs a bit more time to cook through, cover and cook for 2 minutes. If the squash texture is perfect, toss in the grated cheese and serve immediately.
