SHRIMP SPAGHETTI
My husband loves shrimp so I created this simple pasta dish for him. Lemon zest adds freshness and I like to sprinkle the spaghetti with basil for color and taste.

Steps:
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
- While spaghetti is cooking, heat olive oil in a skillet over low heat. Add lemon zest and cook for 5 minutes. Strain olive oil through a sieve and return to the skillet. Add shrimp and garlic. Cook in the lemony oil, stirring occasionally, until shrimp turns pink, about 3 minutes. Season with salt and pepper.
- Drain spaghetti, reserving about 1/2 cup of the cooking water. Add drained spaghetti, reserved cooking water, and basil to the skillet and mix well. Serve immediately.

SPAGHETTI WITH CILANTRO SAUCE
Steps:
- In a large saucepan of salted boiling water add spaghetti and cook until al dente.
- Heat the oil in a large saucepan over medium-high heat. Add the onions and garlic and cook stirring occasionally for 3 to 5 minutes or until the onion is soft.
- Add the tomatoes, cilantro, broth and salt and simmer 2 minutes. Drain pasta, add to saucepan and cook tossing until combined well. Transfer to a warm serving platter and serve hot.

Steps:
- Prepare Pesto.
- Wash cilantro and remove stems.
- In blender chop pumpkin seeds.
- Add cilantro, garlic, cheese and seasoning.
- Slowly add olive oil until blended. (More olive oil may be needed depending on amount of cilantro; pesto should not be runny).
- Peel, devein and wash shrimp.
- Heat 2 Tbsps of Olive oil in pan.
- Place shrimp in pan and cook for about 3 mins or until pink and slightly curled.
- Remove shrimp to plate and keep warm.
- Deglaze pan with white wine.
- Add 3 T of pesto and stir to blend.
- Add Cream and mix well.
- Return shrimp to pan and heat.
- Serve over spaghetti and enjoy the praise.
