SHRIMP SPAGHETTI

My husband loves shrimp so I created this simple pasta dish for him. Lemon zest adds freshness and I like to sprinkle the spaghetti with basil for color and taste.

4 ounces spaghetti
2 tablespoons extra-virgin olive oil
1 lemon, zested; zest cut into thin slivers
10 uncooked medium shrimp, peeled and deveined
1 clove garlic, minced
salt and freshly ground black pepper to taste
¼ cup chopped fresh basil

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • While spaghetti is cooking, heat olive oil in a skillet over low heat. Add lemon zest and cook for 5 minutes. Strain olive oil through a sieve and return to the skillet. Add shrimp and garlic. Cook in the lemony oil, stirring occasionally, until shrimp turns pink, about 3 minutes. Season with salt and pepper.
  • Drain spaghetti, reserving about 1/2 cup of the cooking water. Add drained spaghetti, reserved cooking water, and basil to the skillet and mix well. Serve immediately.

12 ounces linguine
1 cup packed cilantro leaves and slender stems
1 cup packed cilantro leaves and slender stems
2/3 chicken stock
3 tablespoons extra virgin olive oil
1/2 cup shallots or onions, minced
2 teaspoons garlic, minced
1 pound tomatoes, peeled, seeded, diced and drained
Kosher salt to taste

Steps:

  • In a large saucepan of salted boiling water add spaghetti and cook until al dente.
  • Heat the oil in a large saucepan over medium-high heat. Add the onions and garlic and cook stirring occasionally for 3 to 5 minutes or until the onion is soft.
  • Add the tomatoes, cilantro, broth and salt and simmer 2 minutes. Drain pasta, add to saucepan and cook tossing until combined well. Transfer to a warm serving platter and serve hot.

1 bunch fresh cilantro, without stems
1 teaspoon garlic, minced
1/4 cup toasted pumpkin seeds
1/2 teaspoon cajun seasoning
1/4 cup parmesan cheese
1/4 cup olive oil
1 lb medium shrimp
1 cup heavy cream
1/2 cup white wine
cajun seasoning, to taste

Steps:

  • Prepare Pesto.
  • Wash cilantro and remove stems.
  • In blender chop pumpkin seeds.
  • Add cilantro, garlic, cheese and seasoning.
  • Slowly add olive oil until blended. (More olive oil may be needed depending on amount of cilantro; pesto should not be runny).
  • Peel, devein and wash shrimp.
  • Heat 2 Tbsps of Olive oil in pan.
  • Place shrimp in pan and cook for about 3 mins or until pink and slightly curled.
  • Remove shrimp to plate and keep warm.
  • Deglaze pan with white wine.
  • Add 3 T of pesto and stir to blend.
  • Add Cream and mix well.
  • Return shrimp to pan and heat.
  • Serve over spaghetti and enjoy the praise.
