Nick's Authentic Italian Spaghetti comes straight from Italy. Tomatoes, basil, onions, and carrots flavor the two kinds of meat to make the perfect sauce!

1 tablespoon olive oil
1 small onion (finely chopped)
3 carrots (peeled, chopped)
1 pound ground beef
1/2 pound ground pork ((optional))
1 1/2 pounds tomatoes ((fresh peeled and diced tomatoes or canned San Marzano tomatoes))
6 fresh basil leaves (chopped (or 1-2 tsp. dried basil))
1/2 teaspoon sugar
1 teaspoon Kosher salt
1/2 teaspoon pepper
beef broth ((if needed, to taste))
1 pound spaghetti noodles

Steps:

  • Heat oil on medium heat in a large, deep skillet. Add onion, carrots, and garlic and saute for 1 minute. Add ground beef and pork and continue to cook.
  • When meat is browned and onions are soft, add tomatoes.
  • When tomatoes have softened and have started to release their juices (about 4-5 min) add basil, sugar, salt and pepper (if you are whole tomatoes, mash the them with a potato masher or spatula to release all their juices).
  • Simmer for at least 3 hours (and up to 6 hours), stirring occasionally. The longer you simmer, the better. Important: tomatoes burn easily so keep an eye on them and add beef broth a little at a time to thin sauce if needed.
  • In a large pot, cook spaghetti in salted water to al dente, drain completely and return to pot. Add sauce to the spaghetti noodles and toss until noodles are covered.
  • Serve immediately.

I enjoy finding new ideas for serving Pasta Dishes. Baked Bolognese is something I remember having at my Grandmother's house. I added a Bechamel sauce and used the sauce to layer the recipie. This is so full of flavor and very hearty, the leftovers don't last long!

3 Tbsp olive oil
1 1/2 lb ground beef
4 large cloves of garlic, minced
2 tsp dried oregano
1 dash(es) red pepper flakes
28 oz can of whole peeled tomatoes
sugar, salt and pepper to taste
1/2 stick butter
1 large onion, chopped
3 Tbsp white wine
1 1/2 c warmed whole milk
1 dash(es) nutmeg
2 c shredded three blend italian cheeses
1 lb cooked rigatoni pasta

Steps:

  • 1. Preheat oven to 350 degrees. For the Bolognese Sauce: Start pasta water, add salt for taste. Add oil to large skillet over high heat and add ground beef, saute, breaking into crumbles, when browned drain and return to skillet, turn heat down to medium. Place pasta in boiling water and cook until al dente. Drain and set aside. To the browned ground beef then add garlic, oregano and chili flakes, cook for just a few minutes. Add tomatoes and season to taste with sugar, salt and pepper. Let simmer for ten minutes.
  • 2. For the Bechamel Sauce: In large saucepan melt butter over medium-high heat just until slightly bubbly. Add onions and cook until onions become translucent. Sprinkle with flour adding a small amount at a time while stirring constantly, mixture should resemble a gravy like consistency. Gradually whisk in the wine to thin sauce. Gradually whisk in the warm milk and nutmeg, cook until smooth and creamy. Remove from heat set aside. Combine the meat sauce with the pasta. Pour half the meat/pasta sauce into a 13x9 baking dish. Spoon half the Bechamel sauce over meat/pasta and top that with half the three cheese blend. Repeat, layering same way with remaining ingredients. Bake 30-45 minutes, until bubbly and slightly browned.

1 pound ground beef
1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
  • Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

1 slice bacon cut into 1 inch square pieces
4 ounces ham cut into 1 inch squares
1 pound ground beef
1 grated carrot
1 grated onion
1 finely chopped stalk celery
10 chopped tomatoes
salt and pepper
oregano
1 tablespoon chopped cilantro
Parmesan cheese

Steps:

  • In a large frying pan fry bacon pieces, ham squares and ground beef. Cook over hot stove until done and add carrot, onion, and celery. Continue to cook 5 minutes stirring occasionally. Add tomatoes, salt, pepper, and oregano. Cook about 25 minutes, or until tomatoes loose their shape. Before serving add cilantro. Serve over boiled spaghetti. Sprinkle with Parmesan cheese.

1 lb. lean ground beef
1 onion finely chopped
1/4 cup olive oil
1 heaping tbsp. tomato paste
1/2 cup canned crushed tomatoes
1/2 tsp. ground cinnamon
1/4 tsp. ground gloves
1/4 tsp. ground allspice
salt and pepper to taste
3-4 cups water

Steps:

  • 1. Heat oil in a pot over medium-high heat. Add the onion and saute until translucent. 2. Add the ground beef and brown. 3. Dissolve the tomato paste in 1 cup of the water and add to the pot. Add in the remaining 2-3 cups of water. 4. Add the cinnamon, allspice and cloves, and simmer until the beef is tender and the sauce has thickened. 5. Season to taste with salt and pepper. 6. Serve immediately over pasta of your choice.
