A twist on spaghetti, these little pasta nests are an easy and fun weeknight dinner.

1 pound spaghetti
1 egg
1 25-ounce jar Mezzetta Tomato and Sweet Basil Tomato Sauce
1 pound Italian Sausage
1 tablespoon fennel seed (dried)
16 ounces mini fresh mozzarella balls (you'll need 10 little mozzarella balls)
2 tablespoons Italian bread crumbs
10 green olives (sliced in half)

Steps:

  • Preheat oven to 350 degrees. In a large sauce pan cook the spaghetti according to package directions, minus two minutes, so it's very al la dente.
  • In the meantime, in a large fry pan over medium heat, fry the Italian Sausage until cooked through. Drain off any grease and then stir in the entire jar of the Mezzetta pasta sauce and the fennel seed. Cook until just reheated.
  • In a large mixing bowl, add one egg, beaten. Drain the spaghetti and add to the bowl with the egg and mix well. Add the sauce and stir gently.
  • Using a large serving spoon and a fork, twirl the spaghetti into nests and place in a 9 x 13" baking pan sprayed with non-stick spray.
  • When all the nests are in place, push one of the mini mozzarella balls into the enter of each. Sprinkle with Italian bread crumbs and sliced green olives.
  • Bake until nice and steamy. 30 minutes.

These fun spaghetti nests are served with little bocconcini balls that stand in for bird eggs!

Butter, for greasing the pans
Kosher salt
½ box spaghetti (about 8 oz)
2 packed cups spinach leaves, finely chopped
¼ cup grated Parmesan
2 Tbsp extra-virgin olive oil
⅓ cup grated Parmesan
2 Tbsp whole milk
¾ tsp kosher salt
1 large egg
Olive oil, for drizzling
2 cups marinara sauce, warmed
12 small fresh mozzarella balls, such as ciliegine or bocconcini

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 350ºF. Butter the bottom and sides of four 4-inch-diameter springform pans.
  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain the pasta and place in a large bowl. Add the spinach, cheese, oil and 1/2 teaspoon salt. Toss well until the spinach is wilted. Set aside to cool.
  • Beat the Parmesan, milk, salt and egg together in a large bowl until smooth. Pour the sauce over the spaghetti mixture until well combined. Twirl 1/2 cupfuls of the spaghetti mixture around tongs or a large fork and transfer to the prepared pans. Make an indentation in the middle of each nest of pasta and drizzle with olive oil. Bake 15 minutes. Let cool 10 minutes before removing the sides from the pans. Remove the bottoms of the pans from the nests using a thin metal spatula.
  • Spoon 1/2 cup of the marinara sauce on each of 4 serving plates. Place the spaghetti nests on the sauce. Place 3 balls of the mozzarella in each nest and serve.

These little bakes nests of spaghetti are really simple but look very impressive when served up. Fill them with your favourite roasted veg or meats

175 g spaghetti
1 aubergine, cubed
1 courgette, sliced
1 red pepper, deseeded and sliced
6 tablespoons olive oil
2 garlic cloves, crushed
50 g melted butter
15 g white breadcrumbs

Steps:

  • Cook the spaghetti in boiling water for 8 - 10 mins so it still has some bite inches Drain and set aside.
  • Mix the olive oil with the garlic.
  • place the vegetables on a large tray and drizzle over the olive oil.
  • Grill the veg for 10 mins until tender and lightly charred. Keep warm.
  • divide the spaghetti among 4 greased tins. (I use a Yorkshire pudding pan) Curl round a fork to form nest shapes and brush with the melted butter and sprinkle with the breadcrumbs.
  • bake the pasta nests for 15 mins at 200C/400F.
  • Place a pasta nest on a serving plate and to with the grilled vegetables.

1 package (16 ounces) uncooked spaghetti or bucatini pasta
1 pound ground beef
1 medium onion, chopped
2 teaspoons minced garlic
1 jar (24 ounces) pasta sauce
2 large eggs
1/3 cup grated BelGioioso® Parmesan cheese
1/3 cup shredded BelGioioso® Sharp Provolone cheese
5 tablespoons butter, melted
1/2 cup BelGioioso® Ricotta con Latte® cheese
1 log (16 ounces) BelGioioso fresh mozzarella sliced
Optional: Salt, coarsely ground pepper, crushed red pepper flakes, olive oil, fresh basil and additional Parmesan

Steps:

  • Preheat oven to 350°. Cook pasta according to package directions for al dente. In a large cast-iron skillet, cook beef, onion and garlic over medium heat until beef is no longer pink, 6-8 minutes; drain and return to skillet. Stir in pasta sauce. Remove and set aside 1 cup meat sauce. Using the back of a spoon, make 10 shallow wells in meat sauce in the skillet; set aside. , In a large bowl, whisk eggs. Stir in cheeses and butter. Add cooked pasta to egg mixture and toss to coat. Twirl about 3/4 cup pasta mixture with a fork inside a measuring cup until a nest is formed. Transfer each nest to a well in the meat sauce. Widen the center opening using the handle of a wooden spoon. , Spoon a rounded tablespoonful of the reserved meat sauce into each nest. Top each with 2 rounded teaspoons ricotta. Cut 5 mozzarella cheese slices in half; arrange 1 piece over each nest (save remaining mozzarella for another use). If desired, season with salt, pepper, red pepper flakes and olive oil. , Cover and bake for 25 minutes. Uncover; bake until heated through, 10-15 minutes longer. Garnish with additional basil and grated Parmesan.
