SPAGHETTI AND MEATBALLS MUFFIN BITES

- Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 7 minutes. Drain and toss in a bowl with olive oil; refrigerate until cooled, about 15 minutes.
- Preheat oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with cooking spray.
- Toss cooled spaghetti with 1 cup Parmesan cheese. Divide spaghetti between the 12 prepared muffin cups, arranging noodles in each cup to create "nests" for the meatballs.
- Top each "nest" with 1 tablespoon pasta sauce, 1 meatball, and 1 more tablespoon pasta sauce, respectively. Sprinkle remaining Parmesan cheese over the tops of each meatball "nest."
- Bake in the preheated oven until pasta and meatballs are heated through and cheese melts, 20 to 25 minutes. Cool slightly before transferring muffin bites to a serving platter.

- Preheat oven to 350 degrees F (175 degrees C). Place spaghetti squash cut-side down in a shallow baking pan. Add about 1 inch water.
- Bake in the preheated oven until flesh is soft, about 1 hour 25 minutes. Scoop out flesh with a spoon and measure out 2 cups; refrigerate until cool, 15 to 20 minutes.
- Increase oven temperature to 400 degrees F (200 degrees C). Lightly grease two 12-cup muffin tins.
- Whisk flour, sugar, baking powder, cinnamon, nutmeg, ginger, allspice, and salt together in a large bowl.
- Mix milk, eggs, butter, and vanilla extract together in a separate bowl. Stir in spaghetti squash. Fold the squash mixture into the flour mixture just until moistened.
- Spoon batter into the prepared muffin tins, filling each cup halfway.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 25 minutes. Remove from muffin tins and cool on wire racks.

- Grease 12 muffin tins and preheat over to 425°F.
- Mix eggs cheese and optional ingredients in a large bowl, Then stir in pasta.
- Scoop pasta into muffin tins and bake for about 8-10 minutes OR until set.
- Let cool for a few minutes then remove from tins and enjoy or once cooled put in plastic bags and freeze. When ready to eat take out of bag and heat in microwave until heated.

SPAGHETTI MUFFINS
Jewelies made these yesterday while our friend Wendy was visiting. Wendy made them this morning for brunch. They were yummy and I'm thinking would make great kids food (a lot tidier than watching a littly eat canned spaghetti!) Wendy added in chopped bacon and we all reckon onion and/or capsicum would be good in there too. The texture is more like an omelette than an actual muffin.

- Preheat oven to 400°F. Line a baking sheet with foil. Rub cut sides of squash with the 1 tsp. oil. Place, cut sides down, on prepared baking sheet. Bake 40 minutes or until tender. Remove from oven and reduce oven temperature to 375°F. Using a fork, remove squash pulp from shells. Place 2 cups squash in a bowl (reserve remaining squash for another use). Using kitchen scissors, cut strands into smaller pieces.
- Coat eighteen 2 1/2-inch muffin cups with cooking spray. In a large bowl stir together flour and next five ingredients (through pepper). In a medium bowl combine eggs, buttermilk, and the 3 Tbsp. oil; stir in squash. Add squash mixture all at once to flour mixture. Stir just until moistened (batter should be slightly lumpy). Fold in cheese.
- Spoon batter into prepared muffin cups, filling each three-fourths full. Sprinkle lightly with additional cheese. Bake 30 minutes or until golden and a toothpick comes out clean. (Muffins will puff while baking and sink as they cool.) Cool in muffin cups on a wire rack 5 minutes. Remove from muffin cups. Serve warm.
