Spaghetti and Meatballs Muffin Bites image

There's a reason spaghetti and meatballs appear on so many dinner tables - it's a comforting meal, easy to put together, and loaded with flavor. This recipe turns the traditional meal into party-ready, individual servings of spaghetti and meatballs muffin bites.

6 ounces spaghetti
1 ½ tablespoons olive oil
cooking spray
1 ½ cups grated Parmesan cheese, divided
1 ½ cups tomato-based pasta sauce
12 (1 ounce) cooked meatballs

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until cooked through but firm to the bite, about 7 minutes. Drain and toss in a bowl with olive oil; refrigerate until cooled, about 15 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Spray 12 muffin cups with cooking spray.
  • Toss cooled spaghetti with 1 cup Parmesan cheese. Divide spaghetti between the 12 prepared muffin cups, arranging noodles in each cup to create "nests" for the meatballs.
  • Top each "nest" with 1 tablespoon pasta sauce, 1 meatball, and 1 more tablespoon pasta sauce, respectively. Sprinkle remaining Parmesan cheese over the tops of each meatball "nest."
  • Bake in the preheated oven until pasta and meatballs are heated through and cheese melts, 20 to 25 minutes. Cool slightly before transferring muffin bites to a serving platter.

Jewelies made these yesterday while our friend Wendy was visiting. Wendy made them this morning for brunch. They were yummy and I'm thinking would make great kids food (a lot tidier than watching a littly eat canned spaghetti!) Wendy added in chopped bacon and we all reckon onion and/or capsicum would be good in there too. The texture is more like an omelette than an actual muffin.

1 (400 g) can spaghetti in tomato sauce
1 1/2 cups grated cheese
4 eggs, lightly beaten
salt and pepper

Steps:

  • Pre heat the oven to 180c.
  • Grease a 12 hole muffin pan, divide the mixture evenly between.
  • Bake for 15 minutes, remove from the oven and allow to sit a couple of minutes in the tin before serving.

4 1/2 cups cooked pasta, cut into about 2 inch strands (tossed in your favorite sauce)
4 eggs (or egg beaters)
1/2 cup shredded cheese
1/4 cup seasoned bread crumbs
italian seasoning (optional)
garlic powder (optional)
1/4-1/2 cup finely diced cooked meat (optional)

Steps:

  • Grease 12 muffin tins and preheat over to 425°F.
  • Mix eggs cheese and optional ingredients in a large bowl, Then stir in pasta.
  • Scoop pasta into muffin tins and bake for about 8-10 minutes OR until set.
  • Let cool for a few minutes then remove from tins and enjoy or once cooled put in plastic bags and freeze. When ready to eat take out of bag and heat in microwave until heated.
