SOYRIZO®, EGG, AND VEGGIE HASH



Soyrizo®, Egg, and Veggie Hash image

Lovely, tasty breakfast full of healthy ingredients. I like to add my eggs over-easy style and just gently fold into the Soyrizo® until fully cooked but you can cook the eggs any way you want.

Number Of Ingredients 9

1 tablespoon olive oil, or as needed
1 medium onion, chopped
1 medium carrot, chopped
1 medium zucchini, chopped
1 cup chopped spinach
1 (12 ounce) package soy chorizo, crumbled
1 tablespoon butter, or as needed
4 large eggs
salt and freshly ground black pepper to taste

Steps:

  • Heat a large skillet over medium heat and add olive oil to the hot skillet. Cook onion, carrot, and zucchini until lightly softened, about 5 minutes. Add chopped spinach and cook for 2 minutes.
  • Push all ingredients to one side of the pan. Add soy chorizo and cook until browned and hot, stirring occasionally, 2 to 4 minutes.
  • Meanwhile melt butter in a separate skillet over medium heat and crack eggs into it. Cook until outer edges become opaque, about 1 minute. Cover, reduce heat to low, and cook until whites are completely set, about 4 minutes.
  • Serve eggs with sauteed vegetables and soyrizo.

  • *If you really want to amp up the healthy in this recipe, you can totally substitute olive oil for butter and sweet potatoes for regular potatoes! Or if you are a crazy no-carb person, substitute a few diced red and yellow peppers. This recipe will still be so good!
  • Dice the potatoes. Toss the potatoes into a large bowl of ice cold salted water to soak while you prepare the other ingredients.
  • Add the butter or olive oil to a large skillet and heat over medium heat until the butter melts. Drain the potatoes and pat dry with a cloth or paper towel. Add potatoes to the pan and cook for ten to fifteen minutes until some of the edges start to golden.
  • Dice the onion. Add the onions to the potatoes and cook until translucent, about three to four minutes. Add garlic and seasonings to the skillet. Stir to distribute evenly. Cook for one more minute.

  • Heat a large, deep skillet over medium high heat and drizzle with olive oil. Add onions to the pan and sauté until translucent, about 5-6 minutes. Sprinkle with salt and pepper to taste.
  • Add diced peppers to the pan and continue sautéing until tender, about 4-5 minutes. Pour in par-boiled potatoes that have been drained and patted dry. Sprinkle with garlic powder, seasoned salt and cayenne. Continue sautéing until onions are almost caramelized, peppers are tender and potatoes are browned.
  • While the veggies are cooking, cook four eggs to order. To serve, place the eggs on top of the veggie skillet and serve family style.
