SOY NUT BUTTER COOKIES
This is posted in response to a request for cookies using soynut butter. I haven't tried them yet, but I've been meaning to!

Steps:
- Preheat oven to 375°F.
- Combine brown sugar, soynut butter, shortening, soy milk and vanilla in a large bowl; beat at medium speed with an electric mixer until well blended.
- Add egg to sugar mixture; beat just until blended.
- Combine flour, soy flour, baking soda and salt.
- Add to sugar mixture at low speed; mix just until blended.
- Drop dough by teaspoonfuls 2 inches apart onto ungreased baking sheets.
- Flatten slightly by pressing 4 soynuts into each cookie center in a pinwheel design.
- Bake cookies for 7 to 9 minutes or until set and just beginning to brown; do not over brown.
- Cool 1 minute on baking sheet.
- Remove cookies to wire rack to cool completely.

Steps:
- In a food processor or blender, combine the roasted soybeans and water. Let stand 15 minutes.
- Turn the processor on and run until they form a doughy mass.
- Stream in oil, followed by as much water as you need to get a spreadable consistency.
- Finally, add the flavourings you desire and puree inches.

SOYNUT BUTTER COOKIE RECIPE
Steps:
- Preheat the oven to 375ºF.
- Cream the butter and the soynut butter together in a mixer on high speed until well combined and creamy.
- Toss in 1/2 cup granulated sugar the brown sugar, and beat on medium speed until combined.
- Add the egg and the vanilla and continue to beat on medium speed until combined.
- In a medium mixing bowl, combine the flour, baking soda, baking powder, and the salt.
- Add the dry ingredients into the butter mixture and beat on low speed until combined.
- Roll the dough into 1 inch balls.
- Roll the dough balls in the small bowl of granulated sugar to coat them with sugar on the outside.
- Put the sugar coated dough balls about 2 inches apart on an ungreased cookie sheet.
- Using the tines of a fork, flatten the round dough balls by making a criss cross pattern. (Like what you see on traditional peanut butter cookies.)
- Bake the cookies for 8 minutes.
- Important: let the cookies cool on the cookie sheet for about a minute before you transfer them to a wire cooling rack. The cookies are very brittle when hot and will fall apart if you move them too early.
- After a minute, transfer the cookies to a wire cooling rack and cool completely.

- Preheat oven to 350 ℉. Place soybeans in a colander and rinse them under cold water. Transfer the rinsed soybeans onto paper towel and pat dry briefly.
- Place the soybeans onto a baking sheet. Add 1 teaspoon of oil and mix with soybeans. Let the soybeans get coated evenly. Roast in oven on the middle rack for 20 minutes until the soybeans are golden brown.
- Remove the baking sheet from oven and let the soybeans cool at room temperature for 5 minutes.
- Food Processor Method: Transfer the roasted soybeans into a food processor and briefly chop them to break the soybeans into smaller pieces. Transfer the soybeans into a container and add water. Let it stand at room temperature for at least 30 minutes. Transfer the mixture back into the food processor and add the remaining ingredients. Blend until smooth.
- High-Speed Blender Method: transfer the roasted soybeans and the remaining ingredients into the blender. Blend until smooth.
SOY-PEANUT BUTTER
You don't need to wonder what's in the peanut butter when you make your own. This recipe, sent to me by a pair of USA WEEKEND readers, is great-tasting and health-promoting. Soybeans and peanuts help control blood sugar and contain antioxidants, as do olive oil and honey.

CHOCOLATE DIPPED SOYNUT BUTTER TREATS
Being allergic to peanut butter, I use crunchy soynut butter to make this delicious Christmas treat. Most people cannot tell I have used soynut butter instead of peanut butter. And a big plus, they are gluten free treats as well. The paraffin wax helps harden the coating and give a shiny finish.

Steps:
- 1. In a large mixing bowl, sift confectioner's sugar. Set aside.
- 2. In a sauce pan melt butter and soynut butter over medium heat. Do not boil.
- 3. Add vanilla and mix.
- 4. Add chopped pecans at this point if desired. Pour contents of sauce pan into the confectioner's sugar and beat with electric mixer until smooth.
- 5. Using a teaspoon or small scoop, shape balls and place on a parchment lined tray. Chill 15-30 minutes. Hint--if you do not have the time to dip the shaped balls, they can be refigerated for 24-48 hours, tightly covered or frozen in an air tight container until you have time to chocolate coat the balls.
- 6. To dip: Using a double boiler melt wax and add chocolate and allow to melt. Do not let the water splash in the chocolate as this can cause the chocolate to sieze.
- 7. Using a tooth pick or dipping fork, dip one or two balls at a time in the coating. Shake off extra coating and place on a parchment or waxed paper lined baking sheet or tray. Chill until coating is set.
- 8. Store in the refrigerator or freezer in an air tight container.
