SOYA MINCE AND GREEN PEPPER CHILLI

Resembling the traditional 'con carne' dish somewhat, this is a serious chilli when prepared exactly as described. The green peppers provide a diversionary edge, but the habanero heat tells - be warned! (or should that be 'be warmed!'?) Designed to suit both chillihedz and the Scoville-shy!

8 ounces textured vegetable protein, minced,reconstituted with
21 fluid ounces stock, with
Tabasco sauce
3 tablespoons sunflower oil
1 onion, finely chopped
2 cloves garlic, finely chopped
2 green peppers, finely diced
1 green chili, deseeded and finely chopped (reserve and chop the seeds)
2 teaspoons ground cumin
1 tablespoon ground coriander
1 teaspoon paprika
1 teaspoon smoked paprika
1 teaspoon cocoa powder
1 teaspoon oregano
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
3 1/2 fluid ounces passata
seasoning
2 dried habanero chiles, soaked in hot water for 30 minutes
1 tablespoon sunflower oil

Steps:

  • Heat 2 tbsp of the oil in a large pan and sauté the onion till translucent.
  • Add the garlic and all peppers and sauté till cooked, then add all the herbs and spices.
  • Stir briefly, then add the passata and the TVP mince and heat through.
  • Drain the habaneros, adding the soaking water to the chilli, then finely chop and sauté in the remaining oil with the chopped chilli seeds until the aroma catches in the throat.
  • Serve the heat-haters first then stir the sauté mix into the TVP for the chillihedz.
  • Serve with garlic bread.

A recipe I found on www.allrecipes.com that I modified to fit my allergies and our tastes. We like our oriental food saucy, so I made extra sauce and added water chestnuts for DD. This has a kick to it from the ginger, red pepper flakes and the chili paste. Makes 6 1-cup servings. This is a WW friendly recipe, if you use 96% lean ground beef. Points value per serving as calculated on the WW website is 3.

cooking spray
1 lb lean ground beef
3 cups bell peppers, chopped (I used a combination of red, yellow & green)
1 large onion, thinly sliced
2 large garlic cloves, thinly sliced
2 tablespoons fresh gingerroot, minced
2 tablespoons dried parsley
1/4 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1 cup beef stock
3 tablespoons gluten-free soy sauce
1 tablespoon molasses
1 teaspoon chili paste
1 teaspoon gluten-free Worcestershire sauce (Lea & Perrins is GF)
1/4 cup water
2 tablespoons cornstarch

Steps:

  • Spray a large skillet with cooking spray.
  • Over over medium heat, cook and stir the ground beef until evenly browned.
  • Drain and set aside.
  • Add the peppers, onion, garlic and ginger.
  • Season with parsley, red pepper, and salt.
  • Cook and stir until tender.
  • Return the beef to the skillet.
  • In a small bowl, mix together the beef stock, soy sauce, molasses, chile paste, and Worcestershire sauce.
  • Cook until heated through and sauce comes to a boil.
  • Combine water and cornstarch and add to skillet.
  • Stir constantly until sauce is thickened.
  • Serve over the cooked rice.

1 cup dry jasmine rice
2 cups water
1 pound lean ground beef
1 tablespoon olive oil
1 red bell pepper, chopped
1 green bell pepper, chopped
¼ cup chopped fresh parsley
2 large cloves garlic, thinly sliced
2 tablespoons minced fresh ginger root
¼ teaspoon crushed red pepper
¼ teaspoon salt
¼ teaspoon ground black pepper
¼ cup beef stock
1 tablespoon low-sodium soy sauce
1 teaspoon chile paste
½ teaspoon Worcestershire sauce

Steps:

  • In a medium saucepan, bring the rice and water to a boil. Cover, reduce heat, and simmer 20 minutes.
  • In a skillet over medium heat, cook and stir the ground beef until evenly browned. Drain, and set aside.
  • Heat the olive oil in the skillet over medium heat. Stir in the red bell pepper, green bell pepper, parsley, garlic and ginger. Season with red pepper, salt, and pepper. Cook and stir until tender.
  • Return the beef to the skillet. Mix in the beef stock, soy sauce, chile paste, and Worcestershire sauce. Cook and stir until thickened and heated through. Serve over the cooked rice.
