Grilled Chicken Breast with Spicy Peanut Sauce image

Tender, juicy chicken breasts char grilled on the outdoor grill to perfection and smothered in a spicy peanut sauce. The marinade is an amazing flavor that goes magically with the flavors in the peanut sauce. Don't skip the marinade, it also makes the chicken tender and moist.

1/2 cup soy sauce
1/4 cup rice wine vinegar
1/4 cup water
1/4 cup brown sugar
3 garlic cloves, finely minced
2 teaspoons freshly grated ginger
4 skinless, boneless chicken breasts
Spicy Peanut Sauce

Steps:

  • Combine the soy sauce, water, brown sugar, garlic, and ginger in a shallow bowl or re-sealable plastic bag.
  • Place the chicken breasts between two pieces of plastic wrap and pound each of them with a meat mallet so they are an even thickness.
  • Place the chicken in the soy marinade and let it sit for at least 30 minutes.
  • Prep your grill. The grill should be moderately hot (see below)
  • Remove the chicken from the marinade and pat dry then place on the hot grill. Cook on each side for about 3 to 5 minutes or until cooked through (see below for internal temperature)
  • If the chicken gets browned too fast and the center is not cooked completely, move the chicken breasts to a cooler zone on the grill until they are completely cooked.
  • Remove the chicken from the grill and let them rest for 5 minutes before serving.
  • Serve with spicy peanut sauce.

I love making a double batch of this sauce and keeping it in the door of the fridge for a day when I need something tasty in a pinch. Don't like spice? Simply omit the hot sauce and the red pepper flakes. You can also sub thinly sliced lean beef for the chicken or just make it a stir-fry with all vegetables...

1/2 cup smooth peanut butter
1/4 cup low-sodium soy sauce
1/4 cup apple cider vinegar
1 tablespoon honey
1 tablespoon hot sauce
1 tablespoon sesame oil
1 knob ginger, grated (to equal about 1 tablespoon)
5 large cloves garlic, grated
1 pound boneless, skinless chicken breasts, cut into 1/4-inch-thick strips
Kosher salt
1/4 teaspoon red pepper flakes
3 tablespoons canola oil
12 to 15 small red radishes, quartered, plus 1 loose cup radish greens, coarsely chopped
1 large red bell pepper, cored, seeded and cut into 1/2-inch-thick strips
1 cup frozen peas
Zest and juice from 1 small lime

Steps:

  • In a large bowl, whisk the peanut butter with the soy sauce, vinegar, honey, hot sauce, sesame oil, ginger, two-thirds of the garlic and 2 tablespoons warm water until smooth. (If the sauce is too thick, thin with a little more warm water.) Set aside.
  • Arrange the pieces of chicken on a baking sheet in a single layer. Sprinkle on one side with salt and the red pepper flakes. Turn the pieces on their other side and sprinkle again with salt.
  • Heat a large heavy-bottomed skillet over high heat. Add half of the oil and heat until it begins to smoke. Remove the skillet from the heat and quickly add half of the chicken pieces in a single layer. Return the pan to high heat and cook, stirring from time to time, until the chicken is fully cooked, 3 to 5 minutes. Drain and repeat with the remaining oil and chicken.
  • In the same skillet, stir in the remaining garlic, radishes, radish greens and peppers and season with salt. Mix so the radish greens wilt. Stir in the peanut sauce and simmer for an additional minute. Taste for seasoning. Stir in the peas and the chicken. Turn off the heat and let rest a couple of minutes on the stove. Top with a few grates of lime zest and the juice.

1 lb boneless skinless chicken breasts (2-3 chicken breasts, cut into 1 inch cubes)
1/4 cup warm water (microwaved for 1 minute)
1/4 cup smooth/creamy peanut butter
1 teapoon olive oil
1 tablespoon apple cider vinegar
2 garlic cloves (minced,)
1 teaspoon fresh ginger (or 3/4 teaspoon ground ginger - I like to use ginger paste)
2 tablespoons hot sauce or chipotle sauce
2 tablespoons soy sauce (or tamari if GF)

Steps:

  • Preheat oven to 375.
  • Cut up chicken and place in a baking dish.
  • In a microwave safe bowl, microwave water for 1 minute. Remove from microwave and add remaining ingredients through soy sauce (peanut butter, olive oil, apple cider vinegar, garlic, ginger, hot sauce and soy sauce). Whisk to combine.
  • Pour over chicken in baking dish.
  • Bake for 20 minutes, or until chicken is cooked through. Remove from oven and let rest for a few minutes before serving.
  • For slow cooker/crock pot instructions: add chicken to a crock pot, make sauce and pour over chicken, cook on low for 3-4 hours, or until chicken is done (when a meat thermometer registers 175 degrees).
  • Serve over rice with cilantro as garnish.

4 chicken drumsticks (about 1 pound), skin removed
2 medium carrots, sliced
4 green onions, thinly sliced
1/3 cup soy sauce
2 tablespoons brown sugar
1 piece fresh gingerroot (about 2 inches), peeled and thinly sliced
5 garlic cloves, minced
1 tablespoon balsamic vinegar
1 teaspoon ground coriander

Steps:

4 cups water
3 tablespoons soy sauce
2 tablespoons creamy peanut butter

3 tablespoons chopped garlic

Steps:

  • Combine the rice and water in a saucepan over medium-high heat. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender. In a small bowl, stir together the soy sauce, peanut butter, vinegar, and cayenne pepper. Set aside.
  • Heat oil in a skillet or wok over high heat. Add chicken, garlic and ginger, and cook, stirring constantly, until chicken is golden on the outside, about 5 minutes.

½ cup creamy peanut butter
¼ cup chile paste
¼ cup soy sauce
2 tablespoons vegetable oil
2 tablespoons white vinegar
4 cloves garlic, minced

¼ teaspoon ground red pepper
3 pounds skinless, boneless chicken breast halves - cut into bite-size pieces

Steps:

  • In a large bowl, gradually stir hot water into peanut butter. Stir in chili paste, soy sauce, oil, vinegar, garlic, ginger and ground red pepper. Place chicken in marinade, and turn to coat evenly. Cover, and refrigerate overnight, turning occasionally.
