  • Combine in a bow and which or in a bottle and shake well.
  • store in the fridge for up to 1 week.

  • Whisk first 3 ingredients in medium bowl to blend.
  • Gradually whisk in oil.
  • Season with salt and pepper.

Roasted Artichokes With Soy-Balsamic Vinaigrette image

If you love artichoke, you'll love them roasted, and this is super simple, and oh so tasty! The best part is that this is SO healthy, and packed with vitamins!

Number Of Ingredients 10

2 artichokes, washed
2 tablespoons olive oil
1/2 teaspoon dried thyme
4 lemon slices (thin)
4 garlic cloves
3 tablespoons balsamic vinegar
1 tablespoon soy sauce
1/4 teaspoon salt (adjust depending on sodium level in soy sauce)
1/2 teaspoon harissa
1/3 cup extra virgin olive oil

Steps:

  • Discard the small outer leaves of the artichokes.
  • With scissors, snip thorn tips from remaining leaves (optional, but recommended).
  • Trim dark base from stem ends and peel coarse fibers from the stem.
  • Cut artichokes in half lengthwise and rinse well.
  • Choose a pan in which the artichokes fit close together in a single layer (if there are large spaces, the juices will burn).
  • Pour olive oil into pan and add 1/2 teaspoon dried thyme. Roll artichokes in oil to coat, and turn cut sides down.
  • Slide 1 thin lemon slice and 1 garlic clove under each artichoke half.
  • Seal pan with foil.
  • Bake on 375degF until artichoke bottoms are tender when pierced, 45min-1hour.
  • While artichokes are baking, make vinaigrette.
  • FOR VINAIGRETTE:.
  • Whisk together the Balsamic Vinegar, Soy sauce salt, and Harissa.
  • Slowly whisk in the olive oil.
  • Refrigerate while Artichokes are baking.
  • WHEN ARTICHOKES ARE READY:.
  • Transfer them (cut sides up) to a platter and top with Vinaigrette.
  • Should be served hot, but also good if room temperature.
  • VARIATIONS (instead of vinaigrette):
  • -drizzle artichokes with pan drippings.
  • -microwave on high 1 tsp butter and 1 tsp lemon juice, and drizzle over artichoke.

This recipe appeared in the Montreal Gazette a few weeks ago with two other recipes. I'm going to submit each one separately because each one is so different from the other. The glazes go well with beef, chicken, pork or fish, and can be brushed on during the last five minutes of grilling.

Found this in a cook book I got at the library, have been using a lot of balsamic vinegar recently and this recipe appealed. The flavours are delicious and its so easy. Prep time includes marinating.

1/4 cup good quality soy sauce
3 tablespoons balsamic vinegar
2 tablespoons sugar
2 garlic cloves, crushed
1/4 teaspoon salt
1/4 teaspoon pepper
6 -8 chicken thighs

Steps:

  • Mix together the soy sauce, balsamic vinegar, sugar, garlic, salt and pepper until the sugar is dissolved.
  • Put cleaned and dry chicken thighs in a large sealable plastic bag, add the soy mixture, force out excess air and leave to marinate for up to 24 hours.
  • Preheat oven to 425F Transfer chicken and marinade to a large shallow baking pan (do not crowd chicken) then roast in middle of oven turning twice until chicken is cooked through for about 35-40 minutes.
  • Arrange chicken on serving dish.
  • Skim fat from the pan juices, place baking dish across 2 burners on top of stove add 1/3 cup water and deglaze over mod high heat stirring and scraping up brown bits, do this till reduced to about 1/4 cup.
  • (approx 2 minutes) Spoon sauce over chicken.
  • * As you can see a few have found this too salty for their taste.I suggest you use a salt reduced soy sauce if your tastes prefer a less salty dish.
