BBQ ASIAN CALAMARI SKEWERS
Steps:
- Soak skewers in water for 30 minutes. While skewers are soaking, combine vinegar, soy sauce, lime juice, sugar, oil, ginger and onions. Stir until sugar dissolves.
- Cut calamari rings in half. After skewers have soaked for 30 minutes - drain water and thread calamari onto skewers going back and forth, concertina style (looks like little waves).
- Heat a large frying pan or barbecue plate on high. Spray skewers with cooking oil and cook for 2 minutes, turning or until tender. Serve with the soy and lime sauce.

- Peel the king prawns and cut the cleaned squid into 3cm pieces, then thread onto three skewers. Light the barbecue. Brush the skewers with your chosen glaze, then, when the flames have died down, cook for 2 mins on each side (or, cook in a griddle pan set over a high heat). Brush with the rest of the glaze and cook for another 1 min on each side until charred and sticky.

- Finely chop 4 coriander roots and pick off sprigs. Set aside. Juice lime and finely chop chilli. Combine coriander roots, lime juice and chilli in a large glass bowl with vinegar and sauces and stir well.
