SOUTHWESTERN CORNBREAD

Steps:
- Preheat the oven to 375 degrees F. Spray a 12-cup muffin tin with nonstick spray and place in the oven while you make the batter.
- In a large bowl, combine the cornmeal, baking powder, sugar, red pepper flakes and salt. Stir to combine. Add the milk, oil and corn and stir until just combined. Stir in the Cheddar, onions and green peppers and stir just until incorporated.
- Carefully remove the hot muffin tin from the oven and ladle the batter into it. Return to the oven and bake until a toothpick comes out clean, about 15 minutes. Let cool 5 minutes. Remove from the muffin tin and serve.

- 1. Preheat oven to 350 degrees F. Cream butter & sugar till light and fluffy. Add eggs one at a time, beating well after each addition. Mix flour, salt & baking powder in a separate bowl.
- 2. Alternately add flour mixture gradually with milk to creamed mixture. Then add extracts & yellow food coloring if using, and beat until blended. Pour into a well greased & lightly floured 9 X 13 X2 inch pan, and bake in preheated 350 degree F. oven for about 45 to 50 minutes, or until toothpick inserted in center comes out clean. Can also be baked in a Bundt pan or Loaf Pan, as you desire.
- 3. NOTE: She called it sweet bread, because it could satisfy a sweet tooth I suppose, even though she didn't have the ingredients to make a frosting. With a long pan there was enough for all 13 of us, Mom & Dad plus 11 kids to at least each have a piece. We loved this rare treat that made supper special. SURPRISE BREAD
This bread was given to me by my best friend, Sharon, that is no longer with us. Everytime I fix this she is with me. Everyone just loves this bread and you can add anything you like.

- Let bread thaw and rise according to package.
- If in a hurry, just let thaw.
- Preheat oven 375 degrees.
- Brown and drain meat, onions and seasonings.
- Roll 1/2 dough out on a floured surface.
- Spoon meat mixture down the middle.
- Top with cheese and jalepeno peppers.
- Roll in a loaf.
- Repeat with other half of bread dough.
- Place in bread pan and bake for 25 or 30 minutes or until bread is brown.
- Let cool for about 10 minutes, slice and enjoy.

I recently purchased the new Hungry Girl Cookbook and this is one of the first recipes that I am going to try. Here is what the book says: "Not to sound like a cheesy commercial, but this soup is so thick, it "eats like a meal." It's almost too easy to prepare a super-sized batch, and it tastes even better the next day! (HG Tip: Freeze leftovers in individual servings for microwavable, super-filling, guilt-free snacks)." UPDATE NOTE 9/7/2008: I made this recipe today for dinner but I made just a couple changes: 1) I used 16 ounces Perdue Ground Chicken (hubby wanted more meat!) and 2) I cooked it all in my crockpot on Low for about 8 hours. Hubby and I had it for dinner and it was awesome! I posted a picture also. The change to the ground chicken changed the points value to 4 points per generous 1 cup serving. I hope you all enjoy as much as we did!

- Pour the tomatoes and corn into a large pot. Add remaining ingredients and stir thoroughly. Bring to a boil.
- Reduce heat to low and let simmer for 15 minutes.
- Remove from heat and allow soup to sit for at least 5 minutes. Add salt and pepper to taste.

- In a large mixing bowl, dissolve yeast in warm milk. Add the beans, sugar, butter, salt and 2 cups of flour. Beat until smooth. Stir in enough remaining flour to form a firm dough.
- Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour.
- Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two 9 x 5 x 3 inch loaf pans coated with cooking spray. Cover and let rise until doubled, about 30 minutes. Bake at 350F for 40-45 minutes or until golden brown. Remove from pans to wire racks to cool.
