Black beans, corn, fresh greens and red peppers come together for a better-for-you salad that's got a Southwestern spin.

1 pkg. (8 oz.) mixed salad greens
1 can (15 oz.) black beans, drained, rinsed
1 pkg. (10 oz.) frozen corn, cooked, cooled
1 cup thin red pepper strips
1/2 cup KRAFT Classic Ranch Dressing

Steps:

  • Toss greens with beans, corn and peppers.
  • Add dressing; mix lightly.

2 cups whole kernel corn
1 small zucchini, sliced 1/4 inch thick
1 ripe avocado, peeled and chopped
1/4 cup thinly sliced radishes
Bibb or Boston lettuce leaves, optional
2 to 3 medium tomatoes, sliced
DRESSING:
3 tablespoons ketchup
2 tablespoons cider vinegar
1 tablespoon canola oil
1 tablespoon minced fresh cilantro
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon chili powder

Steps:

  • In a large bowl, combine the corn, zucchini, avocado and radishes. On a serving plate, arrange lettuce if desired and tomatoes. In a small bowl, whisk the dressing ingredients. Pour over corn mixture; gently toss to coat. Spoon over tomatoes.

1 cup thinly sliced zucchini
1 cup diced ripe avocado
1/4 cup thinly sliced and quartered radish
2 large ripe tomatoes, sliced
3 tablespoons catsup
2 tablespoons cider vinegar
1 tablespoon oil
1 1/2 teaspoons chili powder
3/4 teaspoon salt
1/2 teaspoon garlic powder

Steps:

  • In a large bowl, combine corn and zucchini. Add Southwest Chili Dressing; toss to coat. Cover and refrigerate until ready to serve. Add avocado and radishes; toss lightly. Arrange tomato slices on serving platter; top with vegetables.
  • for Southwestern Chili Dressing: In a small bowl, place catsup, vinegar, oil, chili powder, salt, and garlic powder. Beat with a wire whisk. Makes 1/3 cup.
